PASTA WITH PANCETTA AND TOMATO SAUCE

Steps:
- Add the pancetta to a heavy large skillet over medium heat. Add olive oil and saute until golden brown, about 8 minutes. Add the onion and saute until tender, about 5 minutes. Season with salt. Add the garlic and red pepper flakes. Saute until fragrant, about 30 seconds. Stir in the tomato puree. Simmer uncovered over medium-low heat until the sauce thickens slightly and the flavors blend, about 15 minutes. Season the sauce with salt, to taste.
- Meanwhile, boil the linguine in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
- Toss the linguine with the sauce in the skillet, adding some of the reserved cooking liquid until the pasta is moist but being careful not to dilute the sauce. Toss with the cheese. Season with salt, to taste.
PANCETTA PARTRIDGE IN WINE SAUCE
For me, there aren't too many things more enjoyable than heading to Northern Ontario with my son and doing some partridge hunting. I think any hunter who's been lucky enough to have had this experience with their son (or good buddies) would agree. The crisp, fresh smell of fall and walking the trails is great. But, now that you've got a grouse or two, do it justice and cook it well. After a few years of looking for a good way to cook these birds I think I've found a winner, thanks to an old Northerner at the Kenogami Bridge Inn. Serve on rice or mashed potatoes.

Steps:
- Place partridge fillets, one at a time, between 2 pieces of plastic wrap and tenderize by tapping with a rolling pin; set aside.
- Heat butter in a saucepan over medium heat. Saute mushrooms, onion, and garlic until softened, 5 to 7 minutes. Set aside.
- Preheat the oven to 350 degrees F (175 degrees C).
- Fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add spinach and cook, uncovered, until it turns bright green, about 30 seconds. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and dice.
- Stir cold water gradually into gravy mix in a small saucepan using a whisk. Cook over medium heat, stirring frequently, until gravy comes to a boil. Reduce heat and let simmer for 1 minute. Remove from heat and mix wine, cream, and thyme into gravy; gravy will thicken upon standing.
- Lay tenderized fillets on a cutting board and place a thin layer of blanched spinach on top. Top with a thin layer of sauteed mushrooms, followed by 1 piece of pancetta. Roll and fold fillets, securing with toothpicks. Place into a small roasting pan. Pour gravy over meat until completely immersed.
- Bake in the preheated oven until no longer pink and juices run clear, about 45 minutes.

ROAST PARTRIDGE WITH CRANBERRY AND RED WINE GRAVY
A special, seasonal alternative to a roast chicken, these partridge require very little preparation and are quick to cook.

- Preheat the oven to 200°C, gas mark 6. Remove the bacon from the partridges and finely chop, then mix with the onion. Rinse the birds and pat dry using kitchen paper. Using your fingers, loosen the skin from the breast meat and pack the bacon and onion under the skin of the birds. Place the partridges in a non-stick roasting tin. Tuck the rosemary sprigs inside the birds and dot them with half of the butter. Roast for 40 minutes, or until cooked and the juices run clear (see Cook's tips). Transfer the partridges to serving plates and keep warm. Pour the juices from the roasting tin into a small saucepan. Add the cranberry jelly and wine to the pan juices with the remaining butter and a little seasoning. Cook over a gentle heat, stirring until the jelly has dissolved, and the sauce is bubbling and has reduced slightly. Strain through a sieve and serve in a jug alongside the partridges, with a pile of celeriac mash (see Cook's tips) and seasonal vegetables.

SHRIMP AND PANCETTA IN WHITE WINE SAUCE
This is an amazingly simple but satisfying recipe....It is a yummy garlicky creamy sauce with shrimp and just that little bit of "kick" in the back of your throat to spice things up!! Came from my best friend Shelia...........the "Italian Princess" who has encouraged my love for fine food and wine......and that preparing and creating is 1/2 the love of cooking!!

Steps:
- Circle Saute pan 2-3 times with olive oil.
- Saute garlic and shallots until just tender.
- (I usually end up adding more garlic because I'm a garlic fiend).
- Add Pancetta -- saute on low-med heat until starting to crisp up.
- Add White wine and scrape up bits of pancetta and garlic/shallots until starting to reduce.
- Add Butter -- stir all together -- it will start to thicken.
- To this add cream and cornstarch if wanted to thicken sauce to your preference -- just add slowly and stir constantly
- Add lemon juice, red pepper flakes and cheese and stir until desired taste (heat).
- Add Shrimp and cook until pink.
- Cook Pasta as directed and toss together.
- Add more crushed red pepper flakes, some fresh chopped parsley and more cheese to taste.
- Good loaf of crusty bread and a good bottle of Chardonnay and you are in business!

- Heat a large pot over medium heat and add the pancetta. Cook until the pancetta is crispy and the fat has been rendered. Remove the pancetta with a slotted spoon and place it on a paper towel to drain any excess grease.
