This one's from the Nu'uanu Congregational Church 1985 Centennial Cookbook. Pipikaula is like a flavorful jerky but NOT dried to a tough leather. It should be slightly moist and tender, kind of like a slab of pastrami.

1 lb flank steak
1 tablespoon hawaiian salt
1 tablespoon water
2 teaspoons sugar
1 drop liquid smoke
1/4 teaspoon chopped chili pepper
1 garlic clove, crushed
2 teaspoons sugar
1 tablespoon hawaiian salt
1 teaspoon cider vinegar
1 tablespoon pineapple juice
2 tablespoons soy sauce
1 tablespoon sugar
1 teaspoon ginger juice or 1/2 teaspoon ginger powder
1 garlic clove

Steps:

  • Choose a marinade and mix the ingredients for your marinade in a bowl.
  • Pound beef with back of knife blade, or a mallet to tenderize. Cut into 2-inch strips, then marinade for 2 hours.
  • Place beef on roasting pan rack to dry in sun or in oven at 175°F for about 5 hours.
  • Broil or pan fry. Slice and serve.

Ginger and soy sauce are the secrets to this Hawaiian-style beef jerky recipe known as Pipi Kaula in Hawaii.

2 pounds flank steak
3/4 cup soy sauce
2 tablespoons Hawaiian salt
1 1/2 tablespoons sugar
1 clove garlic, minced
1 piece ginger, crushed
1 crushed red chile pepper (optional)

Steps:

  • Gather the ingredients.
  • Cut the flank steak into strips about 1 1/3 inches wide.
  • In a large bowl, combine the soy sauce, Hawaiian salt, sugar, minced garlic , crushed ginger , and crushed red chile pepper, if using, to create the marinade.
  • Put the beef in a bowl and cover it with plastic wrap, or place the steak in a resealable plastic bag. Refrigerate and marinate overnight
  • Pre heat oven to 175 F. Place meat on a rack, such as a cookie cooling rack. Place rack on a cookie sheet.

Steps:

  • Cut beef into strips 1 1/2 inches wide. Combine all other ingredients and soak beef in the sauce overnight. If you have a drying box, place the meat in the sun for two days, bringing it in at night. If drying in the oven, set oven to 175-degrees.
  • Place meat on a rack such as a cake cooling rack.
  • Place rack on a cookie sheet and dry meat in oven seven hours.
  • Keep in refrigerator.

  • In a big resealable plastic bag, combine the short ribs and marinade ingredients (the soy sauce, sugar, garlic, and ginger). Seal the bag and marinate overnight in the refrigerator.
  • Next day, turn the oven to 170F. Bake the marinated short rib pieces in a single layer for 6 hours. You want to bake it until it's nearly (but not completely) dried. Aim for 75% dry. After this step, you can store the pipikaula in the fridge for up to three days before serving.
  • Once you’re ready to eat, bring the pipikaula to room temperature. Pan fry over medium-high heat for about 1-2 minutes on each side, until it’s the exterior is crisp. Serve with rice ^_^
