RANCH CHICKEN PATTIES WITH CREAMY CHEDDAR SAUCE
These are a great quick dinner with some steamed broccoli or green beans on the side. Most everything is from the pantry. To serve, place 2 patties on a plate and spoon sauce over. Garnish with chopped green onions if desired. Quick and easy!

Steps:
- Mix chicken, panko, saltines, sour cream, eggs, ranch dressing mix, mustard, onion, black pepper, and parsley together in a bowl until well combined. Shape chicken mixture into 8 patties, approximately 3/4-inch thick.
- Pour panko onto a plate, coat patties, and place on a platter. Chill for 1 hour or overnight.
- Coat a nonstick skillet with vegetable oil over medium heat. Cook patties until golden brown and heated through, 5 to 7 minutes per side. Place a layer of paper towels on a baking rack, transfer patties to paper towels to drain.
- Combine soup and broth in a saucepan; heat until just boiling, about 5 minutes. Reduce heat to low, stir sour cream and green onions into sauce. Serve patties with sauce on top.

I got this recipe off a package of Bordens shredded cheddar cheese and thought I'd give them a try. They're really good and make a quick lunch or dinner.

PANEER CHEESE KHEER PUDDING

- 1. Prepare the paneer cheese. Prepare the dessert masala. Then, in a food processor process the paneer cheese until finely crumbled. (Do not process to much or it will go beyond crumbling and gather into a ball. If using ricotta cheese, do not process.)2. Place the sugar and water in a medium wok or saucepan and bring to a boil over high heat. Add the processed paneer cheese (or ricotta cheese), reduce the heat to medium-low, and simmer until most of the water evaporates, 3 to 5 minutes.3. Add the milk and cook, stirring, over medium-high heat, 2 to 3 minutes. Reduce the heat to medium and cook until the pudding is reduced by about half and is thick and creamy, 30 to 40 minutes.4. Transfer to a serving dish, mix in the cardamom seeds and rose essence, and let cool to room temperature, about 1 hour. (Stir a few times to prevent a skin from forming on top.) This is a delicious patty that can be eaten for breakfast, lunch, or snack. I got this from a friend of mine and it's so delicious and easy to make that I make it very often.

SAFFRON MILK PATTIES

- 1. In a small bowl, soak the saffron threads in the milk about 30 minutes. Then, in a large nonstick skillet or saucepan, mix the cream, dry milk, and ricotta cheese and cook, stirring, over medium heat until smooth, 3 to 5 minutes. Reduce the heat to low, mix in the saffron-infused milk and the saffron, and cook, stirring often, until the mixture (khoa) is almost dry and pulls away from the sides of the pan, 7 to 10 minutes.2. Remove from the heat. Let cool about 1 hour and shape the mixture into 1-inch patties. Then, with your thumb, press into the center of each patty to make a slight depression. PANEER CHEESE PATTIES IN CREAMY THICKENED MILK

- 1. Prepare the paneer cheese in advance. Soak the saffron threads in the milk about 30 minutes. Prepare the dessert masala. Then place the paneer cheese and the flour in a food processor and process until it's smooth and starts to gather into a soft and pliable dough (just before it forms a ball). Divide the dough equally into 8 portions and shape each portion into 1 1/2-inch patties that are free from cracks. This should be done between the palms of your clean hands, applying gentle pressure as you shape them. Cover and set aside.2. Place the water, sugar, cardamom pods, and cardamom seeds in a pressure cooker and bring to a boil over high heat. Turn off the heat and add the cheese patties. Secure the lid of the pressure cooker, place it over high heat, and cook until the regulator indicates high pressure, then cook about 1 minute. Remove from the heat and allow the pot to depressurize on its own, 12 to 15 minutes. Carefully open the lid of the pressure cooker, transfer about 1 cup of the syrup to a saucepan, and simmer until it is reduced by about half. Reserve. Mix 1 cup boiling water into the contents of the pressure cooker and set it aside to cool.3. Meanwhile, heat the half-and-half (or more). Mix in the reduced sugar syrup. Taste and add more sugar, if needed.4. When the patties are cool enough to handle, lightly squeeze them to remove most of the liquid, and add the patties to the thickened milk sauce. Mix in the saffron-infused milk and the saffron, and bring to a boil over high heat. Reduce the heat to medium-low and simmer another minute. CREAMY SEMOLINA PANCAKES WITH THICKENED MILK

- 1. Prepare the dessert masala. Then, in a bowl, mix together the semolina, flour, dry milk, 1 tablespoon sugar, cardamom seeds, and baking powder. Add about 3/4 cup water and mix well to make batter with the consistency of pancake batter. Set aside about 30 minutes. 2. In a small skillet, mix together the remaining sugar and water. Bring to a boil over high heat. Reduce the heat to medium-low and simmer until the syrup thickens to the consistency of honey, 2 to 4 minutes. If the syrup thickens too much, add some water and return to a boil. Remove from the heat.3. Heat 1/2 teaspoon oil in a small nonstick skillet over medium heat. Add about 2 1/2 to 3 tablespoons batter to form a 4-inch pancake. After about 30 seconds, the pancake will firm up and the bottom will be golden (check by lifting the pancake with a spatula). Turn over and cook until the other side is golden, about 30 seconds.4. As each pancake is done, remove it, and using tongs, immediately dip it into the sugar syrup, leaving it to rest there about 1 minute. Transfer to a serving platter and arrange the pancakes in an overlapping manner. (Do not stack them.) Sprinkle the dessert masala on top and serve.VARIATIONS: Make these pancakes using only all-purpose flour, or mix in some whole-wheat flour. VEGETARIAN CREAM CHEESE PATTIES WITH MUSHROOM GRAVY
This is a recipe I adapted from one my mother has made since I was little. These patties are VERY good - but keep in mind they are also very rich. As a dinner suggestion to complete your meal and to balance out the richness of the patties & gravy, try serving these with green beans and fruit salad. Enjoy!

- Place the cream cheese in the freezer for approximately 15 minutes, remove and cube into 1/2" chunks immediately while it is still very cold from the freezer. (This step will help to harden the cream cheese slightly so it will be easier cut.)
- In a medium to large bowl beat the eggs well, then add the cubed cream cheese, minced onions, finely chopped walnuts and bread crumbs. Mix VERY GENTLY until moistened and combined. Be careful not to break up the cream cheese chunks - they should stay in chunks in the patties.
- Preheat oven to 350 degrees now so it is ready when you are done frying patties.
- Heat a small amount of oil in the bottom of a non-stick frying pan. DO NOT ADD ENTIRE 1/2 CUP OIL TO PAN! Only use enough oil to keep patties from sticking, adding more as needed - I usually start with 1 or 2 tablespoons.
- Using approximately 1/4 cup of the mixture per patty, drop into the hot oil and fry patties. Flatten patties if needed and turn over to fry other side when first side is golden to medium brown.
- In a separate bowl, mix together the sour cream and cream of mushroom soup for the gravy.
- Once the patties are fried place the patties in an oven safe casserole dish, layering with the gravy.
- Bake for 25 minutes or until patties are heated through.
- Serve immediately making sure to spoon some of the gravy over each patty.

PANEER (FRESH CHEESE)
Fresh cheese can be used soft (almost like Ricotta cheese) or drained of all liquid and made into small pieces. It is great in vegetables or as snack.

Steps:
- To make about a pound of paneer, heat 1 gallon of milk in a large pot that allows enough space for milk to boil.
- When milk is about to boil, immediately add 4 to 5 tablespoons of lemon juice and 1 tablespoon of vinegar (can substitute cream of tartar for lemon juice and vinegar).
- You may optionally add 1 cup of plain yogurt too.
- Be careful that milk does not boil over; lower heat if needed.
- Simmer until the milk curdles (cheese separates from clear liquid (whey)).
- Use more lemon juice or vinegar as needed.
- Turn off the heat.
- Strain the cheese in a large sieve set over a bowl and lined with a thin muslin cloth or cheesecloth.
- Mash the cheese to make it smooth.
- Let it drain.
- Note: Instead of discarding the whey, you may use it as a substitute for water in soups or dough.
- Drain it as much as possible (couple of hours) till no liquid can be squeezed out.
- Blend the cheese with hand or in a food processor to make it smooth.
- Spread it evenly, about half inch thick on a cloth on flat board lined with paper towels.
- Fold the cloth over on four sides and cover the top.
- Put more paper towels on top.
- Put a large flat-bottomed skillet filled with water on top to put pressure to drain excess liquid.
- Change paper towels if they get wet.
- After 30 to 45 minutes, when paper towels appear dry, unwrap the cheese.
- Cut paneer; into ½ to ¾" cubes (or strips) and use without frying or fry as follows.
- To fry, heat about 4 tablespoons of oil in a frying pan on medium heat.
- Lightly brown the cubes on all sides while turning with a slotted spatula.
