When I grew up my father was the one who cooked dinner on weeknights. He enjoyed "inventing" dishes from what was on hand. This is my tweaked version of his creation. Delicious, quick to make and easy on the budget. My kids always used to fight over the leftovers, if there *were* any. Wonderful served with a fresh salad, apple sauce and bread & butter. Servings is a guess-timate, but it makes enough for a hungry family of six! Can be simmered in a crockput on low for 4 hours if desired. Throw in 1-2 teaspoons of Recipe #50639 if you want a more complex flavor - yum!

Number Of Ingredients 6

3 (28 ounce) cans baked beans (Bush's Best Original works best, *NOT* BBQ varieties)
2 lbs ground beef (I prefer meatloaf mix)
3 small onions, chopped (use Vidalia Sweet Onions if available)
3 garlic cloves, crushed (or more if you like!)
3 tablespoons butter
3 tablespoons light brown sugar (optional)

Steps:

  • In a large frying pan, cook hamburger until no longer pink, 10-15 minutes.
  • Break into small pieces with a spatula and drain off grease.
  • While ground beef is cooking, chop onions and peel garlic cloves & crush.
  • Melt butter in bottom of a large cooking pot on medium heat; saute the onions 5 minutes.
  • Add garlic to the onions and continue to saute until onions are translucent, another 2-3 minutes.
  • Add beans, ground beef and brown sugar to pot and stir well.
  • Heat on medium-low heat and simmer for 20-30 minutes, stirring occasionally.

1 pound dried pinto beans
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/4 teaspoon smoked paprika
4 cloves garlic, minced
2 jalapenos, sliced into rounds with seeds
1 dried bay leaf
1 small onion, diced

Steps:

  • Sort through the beans and remove any stones. To soak the beans, put them in a large bowl, cover them with cold water and allow them to soak, covered, overnight. Or use the quick-soak method below.
  • Quick-soak method: Put the beans in a colander and rinse under water. Put the beans in a large pot and add enough water to cover the beans by at least 3 inches. Bring to a boil over high heat. Reduce the heat and simmer for 4 minutes. Turn off the heat and let the beans stand for 1 hour.
  • Drain and rinse the soaked beans and transfer them to a large pot. Add enough water to cover the beans by at least 3 inches. Add the salt, pepper, chili powder, cumin, cayenne, smoked paprika, garlic, jalapeno, bay leaf and onion to the pot. Bring to a boil, then reduce the heat to bring it to a simmer. Cover and cook until the beans are tender, 2 to 3 1/2 hours.

PAPA'S TERIYAKI BEANS

This bean dish is perfect for BBQs, family picnics and pot luck gatherings. It can be prepared, transported and served warm in Crock Pot.

15 ounces pinto beans
15 ounces white beans
15 ounces black beans
15 ounces garbanzo beans
15 ounces black-eyed peas
15 ounces baby lima beans or 15 ounces butter beans
15 ounces kidney beans
15 ounces Italian-style stewed tomatoes, cut into 1/2 inch pieces
20 ounces pineapple chunks, cut larger pieces into smaller 1/2 inch pieces if necessary
1 medium onion, diced into 1/2 x 1 inch pieces
1 lb thick sliced maple bacon, cut into 1/2 inch pieces
1/3-1/2 cup teriyaki sauce, to taste. Start with 1/3 cup and add more if desired

Steps:

  • Drain liquid from all cans except for about one table spoon each, including tomatoes and pineapple.
  • In a large stock pot combine beans, stewed tomatoes, Pineapple and Teriyaki sauce.
  • In a large skillet thoroughly cook bacon pieces being careful not to let them get too crispy. Once cooked remove and drain bacon then place in sauce pan with beans. In the same skillet with remaining bacon grease cook onion pieces carefully until tender (slightly transparent). Once cooked remove and drain onion pieces then add to sauce pan with beans. Dis guard all bacon grease, do not add grease to beans.
  • Place stock pot on medium high heat and slowly bring to a slow boil, stirring often. Then reduce heat to simmer for one hour, stirring every 15 to 20 minutes.
  • Remove from heat and serve.
  • Alternate method: Use Slow Cooker/Crock Pot instead of stock pot, start on high temp until slow boil, stirring often then switch to low for one hour, stirring every 15 to 20 minutes.
  • Yields over one gallon.
  • I personally like to add in addition to the above recipe, one extra can of White beans and one extra can of Black Beans.
  • And there you have it, enjoy.

2 lbs hamburger
2 (11 ounce) cans of campbell's Fiesta nacho cheese soup
2 (15 ounce) cans refried beans
1 (1 1/8 ounce) package taco seasoning

Steps:

  • Brown hamburger as if you were making sloppy joes.
  • In the meantime mix cheese and beans into a large pot and heat on low.
  • Drain hamburger and add taco seasoning.
  • After hamburger is seasoned, add it to the cheese and bean mix.
  • Mix all ingredients well and heated thouroghly.
  • Serve with tortilla chips or my family favorite is to serve with nacho cheese doritos.

1/2 cup chopped onion
1/3 cup brown sugar
1/3 cup tomato sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (20 ounce) cans baked beans
1 (10 3/4 ounce) can diced tomatoes
1/2 cup chopped green pepper (optional)

Steps:

  • Brown hamburger, green pepper and onion in pan over medium high heat.
  • Combine all ingredients into casserole dish.
  • Mix well.
  • Bake at 350 until bubbling.
  • I prefer to serve it hot but it is good cold too.
