With wet hands, shape into four 1/2-in.-thick patties., In the same skillet, heat remaining 2 tablespoons oil over medium heat. Cook burgers until a thermometer reads 165°, 4-5 minutes on each side. Top with sliced mozzarella cheese; cook, covered, until cheese is melted, 1-2 minutes., Serve in buns; top with remaining 1/2 cup marinara sauce, Parmesan cheese and, if desired, basil leaves.

- Stir bread crumbs, salt, and parmesan together in a bowl.
- In a large bowl, mix together chicken, salt, pepper, oregano, basil, parsley, minced garlic, and parmesan cheese.
- Grab a handful of the chicken mixture and pat it out flat in your palm.
- Place a slice of mozzarella cheese in the middle and fold the chicken over the edges. Make sure the cheese is fully covered on both sides by the chicken mixture.

- Form the chicken mixture into balls; the texture is gloppy.
- Flatten into burger patties.

- Place burgers on waxed paper and allow them to set in the refrigerator for about 30 minutes.
