I have tried a lot of good roasted potato recipes, but I keep coming back to this one. I've never found one I like better! These are crispy on the outside, and soft and creamy on the inside.

cooking spray
1 teaspoon vegetable oil, or as needed
2 tablespoons freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon ground black pepper
2 pounds red potatoes, halved
1 tablespoon vegetable oil, or as needed
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
  • Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.
  • Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated. Sprinkle potatoes with Parmesan cheese mixture; toss to coat. Arrange potatoes, cut-side down, onto the prepared baking pan.
  • Bake in the preheated oven for 15 to 20 minutes. Turn potatoes to cut-side up; continue baking until golden and crispy, about 15 to 20 more minutes. Serve with sour cream.

Parmesan and Panko Roasted Baby Potatoes image

1 bag of small baby gold potatoes
2 tsp olive oil
Sea salt and freshly cracked pepper (to taste)
2 tbsp panko crumbs
1 tbsp parmesan (finely grated)
1 tbsp parsley (finely chopped)
1 clove of garlic (minced)
Dash of paprika

Steps:

  • Preheat the oven to 400 degrees. Line a baking sheet with tin foil then coat with cooking spray.
  • Slice the potatoes in half then boil them for 7-10 minutes or until fork-tender but not cooked all the way through. Remove from the water and place on paper towels to remove excess water. Place the potatoes on the prepared baking sheet and drizzle with the olive oil then season with sea salt and freshly cracked pepper, to taste.
  • Combine the panko crumbs, parmesan cheese, parsley, garlic, and paprika together in a bowl until well combined. Sprinkle the panko mixture on top of the potatoes evenly. Place into the oven and roast for 15-20 minutes or until golden brown and cooked through. Serve immediately. Enjoy.

Everybody just loves these potatoes, and they're so quick and easy to prepare. I often put this in the oven while I'm preparing the main dish.

1/3 cup butter, melted
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
Salt and pepper to taste
6 medium potatoes, each sliced into 4 rounds
Italian seasoning to taste

Steps:

  • Pour butter into a 15-1/2-in. x 10-1/2-in. x 1-in. baking pan. In a plastic bag, combine flour, cheese, salt and pepper. Shake a few potato slices at a time in the bag to coat with the flour mixture. Place potatoes in a single layer over the butter. Bake at 375° for 30 minutes. Turn slices and sprinkle with Italian seasoning. Bake 30 minutes more or until tender.

Steps:

  • Preheat the oven to 350°F (175˚C).
  • Trim the ends of the potatoes, then slice into ¼-inch thick rounds.
  • Add the potato rounds to a large bowl with the melted butter, heavy cream, Parmesan cheese, garlic powder, salt, and pepper. Stir well to coat the potatoes.
  • Grease a muffin tin with nonstick spray, then stack about 10-12 potato rounds in each muffin cup.
  • Bake for about 1 hour, or until the potato stacks are well browned.
  • Let cool slightly, then serve with sour cream.

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon flaky sea salt
Freshly ground black pepper
4 tablespoons grated Parmesan cheese
2 pounds russet potatoes, cut in 1/4-inch slices
Nonstick cooking spray, for the baking sheets
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F.
  • To a large bowl, add the melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, some black pepper and 3 tablespoons of the Parmesan, then mix together. Add the potato slices and toss to coat.
  • Coat 2 large baking sheets with cooking spray. Spread the potato slices in one layer on the prepared baking sheets. Sprinkle the potatoes with the remaining 1 tablespoon Parmesan and bake until the potatoes are tender, crisp and golden, 15 to 20 minutes. Transfer them to a serving dish and sprinkle with the parsley.

potatos, scrubbed clean
and dried well
10 tablespoons of unsalted
butter
1/3 cup of freshly grated,
good quality Parmesan
cheese
1/3 cup of "Japanese style"
Panko bread crumbs
1 teaspoon of sea salt
2 tablespoons of olive oil

Steps:

  • Preheat oven to 400 degrees. Wash your hands and dry. Pour 1 tablespoon of olive oil in the palm of your hand, rub olive oil over two of the potatos. Repeat with remaining olive oil, rub over remaining two potatos. Place potatos in the "bowl" section of a large serving spoon. Lay the serving spoon with the potato on a cutting board. With a serrated knife, cut slices across each potato about 1/4" apart. The bowl of the serving spoon will prevent you from cutting all the way through the other side of each potato. Note: you will be making these slices across the narrower "sides" of each potato (and not from the longer tip to tip). Finish cutting all four potatos with the slices prepared this way. As the potatos cook, the slices will separate so allow space between each potato. Place prepared potatos on a rimmed cooking sheet. Bake at 400 degrees for 40-45 minutes or until the slices look almost fully cooked. Remove from oven. In separate bowl, melt butter. Add freshly grated parmesan, Panko bread crumbs and sea salt, mix. Place about 1 heaping teaspoon of butter/parmesan/Panko/sea salt mixture between each of the potato slices. Gently push the mixture into the slices, which will fan the accordion shape. When all slices have been filled, return potatos to oven and bake for an additional 10-15 minutes or until the butter/Parmesan/Panko/sea salt crumbs are lightly browned. Enjoy!

Great as a family meal with a salad and/or sliced apples or as an appetizer with dipping sauces (we use ranch or light mustard)-either way, they'll be asking for more. I tried these at a holiday party, and came up with my own version. Simple, but they don't look or taste it.

1 large egg
1 tablespoon water
1 cup panko bread crumbs, or to taste
⅓ cup freshly grated Parmesan cheese, or to taste
1 ½ pounds chicken tenders
¼ cup vegetable oil, or as needed

Steps:

  • Beat egg in a pie plate with water. Combine panko and Parmesan cheese in a separate dish.
  • Dip each chicken tender into the egg mixture, then into the panko mixture and cover until well coated.
  • Heat oil in a large skillet over medium heat. Add tenders and fry until light brown, about 3 minutes per side. Continue to fry, flipping occasionally, until golden on the outside, about 12 more minutes. Cut one open to make sure juices are running clear and chicken is no longer pink on the inside.

I love crunchy fries and love panko bread crumbs. So I came up with a idea for a coating for crispy crunchy fries today when I was working with panko breading. Ingredients can be mixed up with your favorite seasonings. Also can be deep fried as well as baked.

2 cups panko breadcrumbs
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon parmesan cheese
1 teaspoon johnny's seasoning salt
1 cup all-purpose flour
2 eggs, slightly beaten
1 tablespoon whipping cream or 1 tablespoon milk
1 large russet potato
oil, for frying (optional)

Steps:

  • Preheat oven or deep fryer to 350'.
  • Add flour onto wax paper or a bowl and set aside.
  • Combine in a bowl or pan, panko breadcrumbs,salt,pepper,parmesan cheese, and seasoning salt. Set aside.
  • Combine in another bowl or pan, eggs and whipping cream or milk. Set aside.
  • Cut potato into potato wedges or regular french fry shape. (I leave the potato peeling on).
  • Dip fries into flour then into egg mixture and then into breadcrumb mixture.
  • Place on a lightly greased baking sheet and baked for 30 minutes or until done.
  • Turn halfway through baking.
  • NOTE: If frying -- add coated fries to deep fryer and fry 10-15 minutes or until browned and tender.
