1 small onion, finely chopped
1/2 cup vodka
2 tablespoons Worcestershire sauce
2 teaspoons hot pepper sauce
1 cup tomato sauce
1 tablespoon prepared horseradish
kosher salt
fresh ground black pepper
1 1/3 lbs beef sirloin, cut into large bite-sized pieces, about 1-inch squares
steak seasoning or coarse salt
black pepper
bamboo skewer (6 to 8 inch)

Steps:

  • Heat a small saucepan over medium heat. Add oil and onions and saute 5 minutes.
  • Add vodka and boil to reduce by half. Add Worcestershire, hot sauce, tomato sauce and horseradish.
  • Stir to combine the dipping sauce and return the sauce to a simmer.
  • Add salt and pepper and adjust seasonings.
  • Heat nonstick skillet over high heat.
  • Coat meat bites lightly in oil.
  • Season with steak seasoning blend or salt and pepper, to taste.
  • Cook the meat until caramelized all over, about 2 minutes on each side.
  • Transfer dipping sauce to a small dish and place at the center of a serving platter.
  • Surround the dip with meat bites and set several bamboo "stakes" or skewers alongside meat.

This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

1 ½ pounds beef top sirloin, trimmed and cut into bite-size pieces
2 tablespoons blackened seasoning (such as Chef Paul Prudhomme's® Blackened Steak Magic®), or more to taste
2 tablespoons vegetable oil
1 (3 ounce) package cream cheese
3 tablespoons evaporated milk
8 ounces blue cheese crumbles
½ teaspoon garlic powder
¼ teaspoon ground white pepper
¼ teaspoon cayenne pepper

Steps:

  • Season sirloin with blackened seasoning to coat on all sides.
  • Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
  • Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes. Serve blue cheese sauce with the beef bites.

1 pint cherry tomatoes
2 tablespoons hot pepper sauce (e.g. Tabasco™)
1 cup pepper flavored vodka
2 tablespoons lemon pepper
2 tablespoons celery salt

Steps:

  • Remove the stems from the tomatoes, and place them in a shallow bowl. Pour vodka over them so that they are covered. Stir in the hot pepper sauce. Cover, and refrigerate overnight.
  • To serve, mix together the lemon pepper and celery salt in a small dish. Serve tomatoes floating in vodka. Provide toothpicks so that your guests may pick up the tomatoes and dip them in the seasoning before eating.

1 1/2 cups unsalted butter, room temperature
3 tablespoons sugar
12 ounces cream cheese, room temperature
2 1/2 cups all-purpose flour
3/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 large egg, for egg wash
1 cup seafood cocktail sauce
fresh horseradish, peeled and grated with a microplane
1 lemon, zest of
1 tablespoon vodka
1/2 cup mixed parsley and celery leaves, roughly chopped
celery salt, for sprinkling

Steps:

  • In a stand mixer fitted with the paddle attachment, cream together butter and sugar on medium-high speed until light and fluffy, about 3 minutes. Add cream cheese and continue mixing, 2 minutes more, scraping down sides of bowl as necessary. Reduce speed to low and add flour, salt, and pepper. Mix until just incorporated.
  • Divide dough in half and form into two discs. Wrap tightly in plastic wrap and chill, at least 1 hour and up to overnight.
  • Meanwhile, in a medium bowl, stir together cocktail sauce, horseradish, lemon zest, and vodka and set aside.
  • Preheat oven to 350 degrees. Remove chilled dough from refrigerator and allow to temper, 15-30 minutes. Unwrap first disc and transfer to a lightly floured work surface. Lightly flour surface of dough and, using a floured rolling pin, roll out dough to an approximately 14" diameter circle. Using a 12" round cake pan or large bowl as a guide, trim edges of dough to form a neat circle. Repeat with remaining dough.
  • Divide cocktail sauce mixture between the two circles and spread into a thin layer over each. Scatter chopped parsley and celery leaves over each and sprinkle with celery salt. Using a pizza cutter, divide each circle into 16 wedges. Starting with the wide edge, roll each wedge into a crescent shape and transfer to two parchment-lined baking sheets, spacing about 2" apart. Transfer cookies to refrigerator and chill, 45 minutes to an hour.
  • In a small bowl, whisk together egg and 1 t. water. Remove cookies from refrigerator and brush lightly with egg wash. Sprinkle with additional celery salt and bake, rotating once halfway through, until golden, 25-30 minutes. Allow to cool slightly on baking sheets, 10 minutes, before transferring to a wire rack to cool completely.
