0.5 (12 ounce) package extra firm tofu
1 cup salsa
2 tablespoons tamari
1/2 bunch cilantro
1 (6 ounce) can water chestnuts
1/2 onion, diced
1 dash italian seasoning
1/2 bunch parsley
1 cup rice
1 teaspoon garlic powder

Steps:

  • Set the rice to cook.
  • Chop up your greens.
  • Add a small amount of oil to pan and set to medium heat.
  • Crumble tofu into pan. Add tamari, salsa, seasoning, and greens.
  • Drain and add the water chestnuts.
  • Add the garlic powder and onion.
  • Cook about 10 minutes.
  • Serve with rice -- mouthwatering!

  • Drain the tofu. Line a cutting board with a few layers of paper towels or a clean dish towel. Place the tofu on top, then weigh it down with a heavy cookbook, or a large plate weighed down by a few cans of beans. Press the tofu for 15 minutes.
  • Make the eggy sauce. In a bowl, whisk together the turmeric, garlic powder, onion powder, paprika, chipotle, kala namak, tahini, and nutritional yeast. Pour in the milk gradually and whisk until you have a nice sauce.
  • Heat a large nonstick frying pan over medium-high heat with the oil. Once the oil is hot, add the tofu to the pan, and fry until it’s lightly browned, 5 to 7 minutes. Stir occasionally but not too often to allow the exterior to get lightly browned. Break up any large chunks of tofu with your spatula but don’t break it up too finely.

  • Place the drained tofu in a large mixing bowl and mash it gently using a masher, fork, or wooden spoon. It may help to cut the tofu into smaller pieces before mashing, but don't over-mash as it's good to have a mix of bigger and smaller chunks.
  • Add the turmeric, garlic powder, nutritional yeast, black salt, plant-based milk, regular salt, and fresh black pepper. Stir gently with a wooden spoon, trying not to break up the tofu pieces too much. (This is where the black salt will come alive! Don't worry though – it doesn't taste anywhere near as strong as it smells).
  • Heat the plant-based butter in a pan on medium heat. Once it has melted, add all of the tofu scramble mix. Cook for 5-10 minutes, stirring regularly until the larger pieces of tofu have started to brown slightly. Make sure the heat isn't too high as you don't want it to dry out too much. If it's looking dry then add in a splash of water or plant-based milk.
  • Once you see the tofu pieces starting to brown, add in the sliced spring onions and continue to cook for a minute or two. Check the seasoning and add a little more black salt if you want a stronger egg flavour. Just be careful to add a very small amount at a time!
