4 cups mashed potatoes (about 8 to 10 large) or 4 cups prepared instant potatoes
1 cup sour cream
1 package (8 ounces) cream cheese, softened
1 teaspoon minced chives
1/4 teaspoon garlic powder
1/4 cup dry bread crumbs
1 tablespoon butter, melted
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine potatoes, sour cream, cream cheese, chives and garlic powder. Turn into a greased 2-qt. casserole. Combine bread crumbs with butter; sprinkle over potatoes. , Bake at 350° for 50 to 60 minutes. Top with cheese and serve immediately.

6 oz cream cheese (from 8 oz package), cut into pieces
1/4 teaspoon coarse ground black pepper
1/2 cup French fried onions
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 375°F. In 3-quart saucepan, heat water, milk, and butter to boiling; remove from heat. Stir in 2 pouches potatoes, cream cheese and pepper. Spoon into ungreased 2-quart casserole. Bake immediately, or cover and refrigerate up to 24 hours.
  • Bake uncovered 20 to 25 minutes or until hot. Sprinkle with onions; bake 5 minutes longer or until onions are golden. Sprinkle with parsley.

Steps:

  • Preheat oven to 425°F with rack in middle.
  • Peel potatoes and thinly slice (about 1/16 inch thick), then toss with butter, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Spread evenly in a 2-quart shallow baking dish and add broth. Cover tightly with foil and bake 30 minutes. Uncover and bake until top is well-browned and most of stock is absorbed, 30 to 35 minutes more.

2 cups cheddar cheese, shredded

crushed crackers or corn flakes, to taste

Steps:

  • Spray 9 x 11 baking dish with cooking spray.

1 (32 ounce) bag frozen shredded hashbrowns (divided)
2 (10.75 ounce) cans cream of chicken soup
2 cups sour cream
1/3 cup onions (chopped)
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups shredded cheddar cheese (divided)
2 cups Ritz crackers (or crushed corn flakes)
1/2 cup butter (melted)

Steps:

  • Lightly grease a 9 x 13 inch pan with non stick cooking spray.
  • Place half of the bag of hashbrowns in the prepared pan.
  • In a medium bowl combine the soup, sour cream, onions, and salt and pepper.
  • Gently spoon half of this mixture over the hashbrowns in the pan.
  • Sprinkle 1 cup of cheese over the soup mixture.
  • Then add the remainder of the hashbrowns on top, and spoon over remaining soup mixture and the other half of cheese.
  • Crush the Ritz crackers and combine with the melted butter. Sprinkle over the top of the casserole.
  • Bake at 350 degrees for 35 to 40 minutes.

Steps:

  • Place all ingredients except topping in a large bowl and mix together well. Place in a 3 quart casserole and bake in 350 degrees for 45 to 60 minutes. During last 20 minutes of baking time, add topping.

2 tbsp. grated onion (or to taste) 1 tsp. salt. Pepper, to taste. Mix all ingredients and bake at 350 degrees in 13 x 9 inch pan until bubbly through - approximately 30-40 minutes. Also easily done in crock-pot - high for 30 minutes, then low for 2-3 hours. Use 3/4 stick butter for crock-pot.
