CHILE PASILLA TOMATILLO SALSA RECIPE

Full flavored rustic salsa prepared with dried pasilla chiles and tangy tomatillos.

12 small tomatillos
8 pasilla chiles
2 cloves garlic
1 tsp salt + more if needed

Steps:

  • Remove the stems, seeds and vein from the chiles.
  • Remove the husks from the tomatillos and rinse the tomatillos under running water.
  • Place the chiles in a pan with just enough water cover them, bring to a boil and then turn off the heat. Allow them to soak for 15 minutes.
  • Place the tomatillos in a pan with just enough water to cover, bring to a boil then reduce the heat to low and simmer for 15 minutes. Blend the chiles and tomatillos with a little of the tomatillo cooking water, about ½ cup for 45 seconds.
  • Put the blended salsa and 1 tsp. of salt into a pan over low heat and simmer for 15 minutes.
  • Adjust the salt to taste.

PASILLA CHILE SALSA



Pasilla Chile Salsa image

This is a great Salsa to get you familiar with the flavor of Pasilla Chiles -- earthy, fruity, with a mild heat profile.

Number Of Ingredients 7

4-5 tomatillos
3-4 Pasilla chiles
2 garlic cloves
1/2 cup water (plus more if necessary)
salt to taste
1 chipotle in adobo (optional)
1 tablespoon adobo sauce (optional)

Steps:

  • Wipe off any dusty crevasses on the Pasillas using a wet paper towel, then de-stem and de-seed them. Roast them in the oven at 400F for 1-2 minutes. Add the roasted Pasillas to a bowl and cover them with the hottest tap water you've got. Let them reconstitute for 20-30 minutes
  • Pull the husks off the tomatillos and give them a good rinse. I usually cut the stems out knowing that any juice leftover in the roasting pan will go in the blender. Roast the tomatillos in a 400F oven for 10-20 minutes or until they turn army green in color.
  • Drain the reconstituted chiles and add the chile pieces to a blender along with the roasted tomatillos, 2 peeled garlic cloves, and 1/2 cup water. Combine well, adding more water to thin it out if necessary.
  • Salt to taste and if you want to balance the earthy flavor then add a single chipotle in adobo and 1 tablespoon adobo sauce, combining well in the blender.
  • Serve immediately and store leftovers in an airtight container in the fridge.

4 large vine-ripened tomatoes, cored and cut into quarters
2 white onions, quartered
4 serrano peppers, or to taste, stemmed
6 cloves garlic
2 tablespoons vegetable oil, or as needed
2 teaspoons salt
1 teaspoon ground cumin
¼ cup chopped fresh cilantro, or to taste
1 lime, juiced

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Combine tomatoes, onions, serrano peppers, and garlic in a large bowl; drizzle with vegetable oil and toss until lightly coated. Transfer to the prepared baking sheet.
  • Broil in the preheated oven until vegetables begin to brown, about 5 minutes.
  • Transfer vegetables to the bowl of a food processor. Add salt and cumin; pulse a few times until desired chunkiness is reached. Add cilantro and pulse a couple of times to combine. Stir in lime juice.

This sauce is used on the fried avocados that I have recipes for in my public cookbook. This sauce is commonly passed at the Oaxacan table to use with meats, for appetizers (antojitos) or with beans and soups. There were numerous recipes and some of the variations were to use a fruity vinegar. 1 whole head of garlic charred on grill. 1 stick cinnamon cooked with the peppers and oil. Coarse salt and crushed pepper to taste. Will keep in fridge for several days and freezing is not recommended.

1 tablespoon lard or 1 tablespoon corn oil
3 pasilla chiles
3 tablespoons olive oil
2 tablespoons white vinegar
1 teaspoon crushed dried oregano

1/4 cup grated monterey jack cheese (to taste)

Steps:

  • Heat the lard or oil in a heavy skillet and cook the chilies until they change color, turning constantly and taking care not to burn.
  • Drain on paper towels.
  • Let cool then remove seeds and veins and puree in a blender with oil, vinegar, oregano and salt.
  • Serve with cheese on top, or serve with cheese separate.

Yield Makes about 1 1/2 cups

Number Of Ingredients 4

1/2 pound (about 11 medium) tomatillos, husked, rinsed, and quartered
3 medium garlic cloves
3 small chile pasilla de Oaxaca
Sea salt

Steps:

  • Place tomatillos in a small saucepan, and add enough water to come about half of the way up. Cover, and cook over medium heat until tomatillos are soft, about 10 minutes. Strain, reserving liquid. Add enough water to the reserved liquid to make 1/2 cup.
  • Meanwhile, heat a small heavy skillet or a comal over medium heat until hot. Add garlic to pan, and cook until soft and well charred on all sides, 5 to 10 minutes. Peel, and transfer to jar of a blender. Add chiles to pan, and toast for 2 minutes per side. Tear chiles into pieces, discarding stem; transfer to blender jar. To the blender, add cooking liquid and a large pinch of salt. Blend until smooth. Add tomatillos, and blend. Will keep in an airtight container in the refrigerator for up to 1 week.

PASILLA SALSA

When dried-as you will usually find them-pasillas are often called chile negro, or black chile. They are thin, small, shriveled, and very dark. They are also earthy and not especially hot, so they yield a rich, densely flavored sauce traditionally used with lamb, beef, and chicken. If you want some heat, soak a dried chipotle or two with the pasillas. If you can find fresh tomatillos, use them in place of the tomatoes. Slip off the papery husks and add a little water to the sauce.

Yield makes about 1 cup

Number Of Ingredients 6

3 to 5 pasilla chiles, at least 1 ounce, to taste
2 tablespoons lard or neutral oil, like corn or grapeseed
4 small tomatoes, cored and chopped
Salt and black pepper to taste
2 garlic cloves, peeled
1/2 large white onion, peeled and chunked

Steps:

  • Soak the pasillas in hot water to cover until they are quite soft, about 10 minutes. Meanwhile, put the lard in a small saucepan over medium heat; a minute later, add the tomatoes, along with some salt and pepper. Cook, stirring occasionally, until soft, about 10 minutes.
  • Drain the chiles and reserve some of their soaking liquid. Remove their stems and seeds; tear each into several pieces as you do so. Combine in a blender with the tomatoes, garlic, onion, and a little of the soaking liquid. Puree, adding more liquid if necessary to allow the machine to do its work. Taste and adjust the seasoning, then serve warm or refrigerate.

A delicious green sauce from Northern Michoacan. This is really good over boiled rice (morisqueta) or fried cheese (Minguichi). I have used this sauce on tacos and enchiladas with good results also. Yield varies depending on the size of your chiles and tomatillos. This recipe doubles easily and freezes well.

3 pasilla chiles
2 tablespoons olive oil
2 small tomatillos, husks removed and rinsed
3/4 cup water
2 garlic cloves, unpeeled
2 tablespoons small white onions, finely chopped
1/4 teaspoon sea salt (to taste)

Steps:

  • Heat oil in a heavy frying pan.
  • Gently saute chiles, without burning, turning frequently until they are just firm to touch. About 5 minutes.
  • Remove chiles with slotted spoon and place on paper towels to drain.
  • In same pan, fry tomatillos and garlic until lightly browned and soft inside. About 5 minutes.
  • Remove from pan and drain on paper towels. (Do not discard oil yet).
  • Peel the garlic when cool enough to touch.
  • Place water in blender jar. Add the tomatillos and peeled garlic.
  • Crumble the fried pasilla chilles and add them all, with seeds and veins, to blender.
  • Blend all for about 30 seconds to a puree texture.
  • Heat oil in frying pan again.
  • Add onion and saute gently until translucent but not browned. About 1 minute.
  • Add chile mixture from blender and salt.
  • Cook over medium high heat, stirring frequently (scraping bottom of pan as needed), until sauce has reduced a little. About 5 minutes.

Most of the flavor in my homemade salsa roja recipe comes from dried mild chiles, like ancho, guajillo, and pasilla. Use this mild salsa on tacos or chips.

Yield Makes 4½ cups

Number Of Ingredients 10

1 large white onion, halved
4 medium plum tomatoes (about 12 oz.), halved
1-2 serrano chiles
4 garlic cloves
3 oz. dried ancho, guajillo, and/or pasilla chiles, stems and seeds removed
½ bunch cilantro, tough stems trimmed, coarsely chopped
Juice of 1 lime
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt; plus more (optional)
½ tsp. ground cumin
¼ tsp. ground cinnamon

Steps:

  • Combine 1 large white onion, halved, 4 medium plum tomatoes (about 12 oz.), halved, 1-2 serrano chiles, 4 garlic cloves, and 3 oz. dried ancho, guajillo, and/or pasilla chiles, stems and seeds removed, in a medium saucepan, using fresh vegetables to weigh down dried chiles. Pour in water just to cover. Bring to a boil, then remove from heat. Cover and let sit until dried chiles are rehydrated and fresh vegetables are softened, 20-25 minutes.
  • Using a slotted spoon, transfer vegetables to a blender; reserve soaking liquid. Add ½ bunch cilantro, tough stems trimmed, coarsely chopped, juice of 1 lime, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, ½ tsp. ground cumin, ¼ tsp. ground cinnamon, and 1 cup reserved soaking liquid. Blend, starting on low speed and gradually increasing to high, until smooth, about 2 minutes. Taste salsa and add more salt if needed.

Set aside and peel away the husks once the cloves have cooled. Place the toasted chiles in a medium saucepan and cover with the boiling water, beer and orange juice. Add the prunes to the pan and simmer for 8 to 10 minutes. Put the chiles, prunes and cooking liquid into a blender, along with the garlic and salt. Puree until smooth and serve.
