1tbsp oil
1 small red onion, peeled and finely chopped
5 medium-sized mushrooms,chopped
150g sweetcorn, canned or frozen
400g can chopped tomatoes
3tbsp tomato purée
300g penne pasta
185g can of tuna fish in sunflower oil, drained
25g pack of ready salted crisps
100g mature Cheddar cheese, grated
900ml flameproof dish

Steps:

  • Heat the oil in a frying pan, add the onion and cook for 5 minutes over a medium heat, then add the mushrooms and cook for 5 minutes, until softened. Stir in the sweetcorn, tomatoes and tomato purée and simmer for a few minutes.
  • Meanwhile, stir the pasta into a pan of boiling salted water and cook according to pack instructions, until just tender. Drain, then put it back in the pan. Set the grill to hot.
  • Stir the pasta into the sauce, then break the tuna into large flakes and gently mix in. Spoon into the dish. Crush the crisps in the bag and sprinkle them over the top, with the cheese.
  • Put the dish on a baking tray and grill for about 5 minutes until the cheese has melted and turned golden brown. Serve hot with salad or greens.

Steps:

  • Preheat oven to 180°C - Grill
  • Start by adding the rigatoni to salted boiling water, timer set to 2 minutes minus the packet time.
  • Next, add the onions and olive oil to the pan on a low/medium heat. Gently fry for around 5 minutes until softened (not caramelised). Add the garlic in for a couple minutes to fry once softened.
  • Then, add the drained tuna, cream cheese, cheddar and two ladles of pasta water. Stir until the cheese melts and a creamy sauce is achieved. Add extra pasta water as necessary.
  • Stir the lemon juice and dijon mustard into the sauce and season with salt and lots of pepper. Pour the rigatoni, sweetcorn and creamy tuna sauce into a baking dish (around 12 inch x 10 inch). Stir to incorporate everything and top with the remaining cheddar. Pop under the grill for 10 minutes, or until the cheese is golden brown and crispy.

1 tablespoon vegetable oil
1 (10.75 ounce) can condensed cream of mushroom soup
1 (15 ounce) can mixed vegetables, drained
1 (5 ounce) can tuna, drained
2 cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add 1 tablespoon oil to the water to prevent sticking. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
  • In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of the cheddar cheese. 600g rigatoni
50g butter
50g plain flour
600ml milk
250g strong cheddar, grated
2 x 160g cans tuna steak in spring water, drained
330g can sweetcorn, drained
large handful chopped parsley

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Boil 600g rigatoni for 2 mins less time than stated on the pack.
  • To make the sauce, melt 50g butter in a saucepan and stir in 50g plain flour.
  • Cook for 1 min, then gradually stir in 600ml milk to make a thick white sauce.
  • Remove from the heat and stir in all but a handful of the 250g grated cheddar.
  • Drain the pasta, mix with the white sauce, two 160g drained cans tuna, one 330g drained can sweetcorn and a large handful of chopped parsley, then season.
  • Transfer to a baking dish and top with the rest of the grated cheddar.
  • Bake for 15-20 mins until the cheese on top is golden and starting to brown.

2/3 cup dry bread crumbs
1 tablespoon butter or margarine, melted

Steps:

  • Heat oven to 350°F.
  • Cook and drain pasta as directed on package.
  • Meanwhile, in 1 1/2-quart saucepan, melt butter over low heat. Stir in flour and salt. Cook over medium heat, stirring constantly, until smooth and bubbly; remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.
  • Stir in pasta, broccoli and tuna; mix well. Spoon into ungreased 2-quart casserole. Cover and bake about 25 minutes or until hot and bubbly.

2 cups fusilli (or any other kind of pasta)
1/2 onion, peeled and finely chopped
2 tablespoons butter
1 tablespoon cornflour
1/2 cup water
1 (14 ounce) can low-sodium tomato soup, condensed
1 pinch mixed herbs
1 -2 tablespoon chopped fresh parsley
1 (7 ounce) can tuna, drained and flaked
fresh ground black pepper
1/2 onion, peeled and finely chopped
2 tablespoons butter
2 tablespoons plain flour
one and a quarter cups milk
2 cups Baby Spinach, chopped
1 cup cheddar cheese, grated, plus a little extra for the topping

Steps:

  • Preheat the oven to 350°F
  • Cook the pasta in salted water until al dente, then drain and refresh in cold water to stop it from over cooking.
  • Melt the butter in a saucepan and sauté the onion until soft.
  • Stir the corn flour into the water until dissolved, then add to the onion pan along with the tomato soup.
  • Bring to a boil, add the herbs and then cook gently, stirring for five minutes.
  • Mix in the flaked tuna and heat through. Season to taste.
  • Mix into cooked pasta.
  • For the cheese and spinach sauce, melt the butter in a saucepan and sauté the onion until transparent.
  • Add the flour and continue stirring the mixture all the time.
  • Gradually pour in the milk and keep stirring until the sauce is thickened and smooth.
  • Add the chopped spinach and stir until wilted.
  • Remove from the heat and stir in the 2 c grated Cheddar cheese.
  • Grease a baking dish and add the tuna and tomato mixed with the pasta, and then pour the spinach sauce over top.
  • Sprinkle with some grated Cheddar cheese and bake in the oven for 25 minutes until golden.
  • This can also be frozen. Assemble casserole but do not sprinkle with cheese or bake. Thaw in refrigerator before baking. Sprinkle with cheese and bake according to normal instructions.
