- Preheat oven to 300 degrees F (150 degrees C). Grease a 2 quart baking dish.

- Mix milk, rice, 1/2 of the sugar, vanilla extract, and salt together in a saucepan over medium-high heat. Bring to a boil.
- Blend remaining sugar with whole eggs and yolks in a bowl to make a creamy custard.
- Reduce heat of the milk mixture. Let simmer, uncovered, until thickened, 30 to 40 minutes. Fold in the custard. Heat until thickened again, about 5 minutes more.
- Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form.
- Remove the milk and custard mixture from heat. Let cool, about 10 minutes. Fold in the whipped cream. Pour pudding into a serving dish, cover, and refrigerate until chilled, at least 2 hours.

Anyone looking to try one's hand at playing around with a recipe can't do better than to start with rice pudding. I began making rice pudding with our son's babysitter, a Frenchwoman named Marie-Cécile, who cooked au pif, meaning she followed her instincts and would riff on just about everything she made. Moi? I followed Marie-Cécile's lead and have been making my own version of rice pudding regularly, but rarely with the same flavorings. Sometimes I'll stir chocolate into the pudding right before it's cooked, and often I'll top the pudding with roasted fruit. For apples, cut 2 unpeeled apples into 1/4-inch wedges. Cook 1/2 cup sugar in a nonstick skillet until amber (stir only after the sugar starts to color), add 2 tablespoons butter followed by the apples. Cook, turning the wedges, for 6 to 8 minutes, until translucent.

- Rinse the rice under cold running water, then turn it into a medium saucepan, and cover with water. Add the salt, bring to a boil, reduce the heat and simmer for 10 minutes. Drain.
- Rinse the saucepan with cold water, shake out excess (don't dry) and pour in the milk and sugar. If you're using a vanilla bean, scrape the pulp into the pan and drop in the pod (if you're using extract, you'll add it later). Bring to a boil, stirring to dissolve the sugar. Stay close: Milk is notorious for bubbling over. Lower the heat, stir in the rice and cook at a steady simmer, stirring frequently (especially at the start) for 30-40 minutes, or until the rice is very tender, the pudding feels just a little thick as you stir it and most of the milk has been absorbed (the pudding will have cooked down by about half). It's hard to give an exact time because it depends on the rice, the size of the pan and the amount of heat beneath it.
- Scrape the pudding into a heatproof bowl, and remove the vanilla bean, if you've used it. If you're using extract, stir it in now. Cover (if you want to avoid a skin, press plastic wrap against the surface of the pudding), and cool to room temperature or refrigerate. Tightly covered, the pudding will keep in the fridge for about four days; serve cold or at room temperature.

- Place water and rice in a large, heavy pot with a tight-fitting lid.
- Bring to a boil, reduce heat slightly, then allow to boil until almost all the water is gone (approximately 10 minutes).
- Stir in 4-1/2 cups of the milk and reduce heat to med-low.
- Yes, it looks like a lot of liquid.
- Don't worry.
- (Note: don't use skim milk; it's not rich enough to make a nice pudding.) Into the remaining 1/2 cup of milk, whisk in the sugar and cornstarch.
- Whisk this mixture into the rice, then add the raisins (substitute currents if you prefer).
- Stir.
- Grate nutmeg over the top of the mixture, lightly dusting the entire top.
- Raise the heat to med-high and, stirring almost constantly, bring to a slow boil.
- Reduce heat to low and put lid on pot.
- Simmer (very gently) for anywhere from one hour to 1-1/2 hours-- until the pudding has thickened.
- Stir pot occasionally, making sure the pudding does not stick to the bottom of your pot.
- When pudding is thick, spoon some out into a custard cup which contains the egg yolk.
- Do this about a teaspoon at a time, to slowly warm the yolk.
- Any faster, or in any greater quantity, will cause the yolk to curdle.
- When yolk is beaten and warmed, stir into pudding.
- Cook for two more minutes; remove from heat.
- Stir in vanilla (pure extract only please, not artificial), then pour pudding into an attractive serving dish.
- Sprinkle cinnamon on top and let cool to room temperature.
- Do not add cinnamon while cooking or the pudding will have an unpleasant gray/brown colour.
- Refrigerate if not serving right away.

In this country, before there was flan, crème brûlée, panna cotta, even vanilla pudding, there was rice pudding. Each of those desserts has the same goal: take lots of milk or cream, sweeten it and, through heat and a thickening agent, make it custardy. Flan and crème brûlée use eggs, panna cotta uses gelatin and vanilla pudding and similar custards use eggs, cornstarch or flour. Rice pudding is both the most rustic and most elegant of those desserts, using only rice, milk and sugar. It may take some practice, but once you master it, it is among the easiest and most foolproof of desserts. And it is simply amazing how many people drool when they see it.

- Heat oven to 300 degrees. Combine all ingredients in a 3- or 4-quart casserole or an ovenproof saucepan, stir a couple times, and place in oven. Bake for 30 minutes, then stir. Bake 30 minutes more, then stir; at this point the milk will have developed a bubbly tan surface (stir this back into the liquid), and rice will have begun to swell.
- Cook for 30 more minutes. The surface will have redeveloped, darker this time, and kernels of rice will begin to predominate in mixture. Return mixture to oven and begin to check pudding every 10 minutes, stirring gently each time you check.
- Remove pudding from oven when rice kernels are very swollen and mixture is still quite fluid. As it cools, it will thicken considerably. If you remove custard when mixture is thick, it will harden when it cools (though it will still be quite good to eat). Serve pudding warm, at room temperature or cold, alone or with whipped cream.

My mother made rice pudding when I was a child. Now I make it, and my children love it. I usually make rice pudding from leftover rice after a meal. Just be sure that your rice floats in the milk, and the mixture is soupy. Rice absorbs very well. It will cook to be golden and crusty on top. Raisins are optional.
