CREAMY GARLIC PRAWN PASTA
Recipe VIDEO above. Pasta tossed with a garlic infused creamy sauce and plump, juicy prawns! (Shrimp) This pasta version of Creamy Garlic Prawns is a quick meal you'll get on the table in 20 minutes, this is luscious but it's not too rich. The key is to emulsify the sauce (i.e. thicken it) by tossing the pasta in the sauce just before serving - this is the proper Italian way to make pasta. Serves 3 very hungry people or 4 normal servings.

Steps:
- Bring to boil a large pot of water. Add pasta and cook per packet MINUS 1 minute. (Note 5).
- Just before draining, scoop out 1 cup of pasta cooking water and set aside. Drain pasta.
- Meanwhile, melt 1 tbsp of butter in a large non stick skillet over medium high heat. Add prawns and cook for 1 1/2 minutes on each side until just cooked through. Remove prawns.
- In the same skillet, add 1 tbsp butter. Once melted, add garlic. Stir for 20 seconds until fragrant.
- Add wine and stir. Simmer for 2 minutes until wine mostly reduces (see video).
- Add cream, broth and parmesan. Stir until the parmesan is melted, then leave to simmer for 1 1/2 minutes until it thickens slightly (will thicken more in next step).
- Add prawns, stir, then add pasta plus about 1/4 cup of reserved pasta water. Toss pasta (still on stove) and the sauce will thicken in about 30 - 45 seconds and start clinging to the pasta.
- Take it off the stove before the sauce is as thick as you want - it will thicken more.
- Sprinkle with most of the parsley and black pepper, check salt (I don't need more). Toss again until the sauce consistency is to your taste. Add a tiny splash of pasta water if it gets too gluggy.
- Serve immediately, garnished with remaining parsley and parmesan if desired.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Heat 1 tablespoon butter and vegetable oil large oven-safe skillet over medium heat. Add garlic; cook until fragrant, about 30 seconds. Add shrimp, 2 tablespoons parsley, and dill. Cook and stir, flipping shrimp halfway, until pink, 3 to 4 minutes. Move shrimp to a plate and set aside.
- Melt the remaining 2 tablespoons butter in the skillet, stirring into the shrimp juices. Add flour; whisk until fully combined and starting to turn golden, 30 seconds to 1 minute. Add chicken broth and milk in that order; whisk to combine. Stir in tomatoes, lemon juice, salt, and pepper. Bring sauce to a simmer.
- Stir 1/2 cup Parmesan cheese and Romano cheese into the sauce until cheeses begin to melt and sauce is creamy. Add 1 tablespoon mozzarella cheese. Mix in about 1/2 the cooked penne to start; add more if there is enough sauce to coat. Add the shrimp and stir to combine. Top with the remaining parsley, Parmesan, and mozzarella.
- Bake in the preheated oven and bake until top is golden and sauce bubbles around the edges of the skillet, 8 to 10 minutes.

PASTA PRAWN BAKE

Steps:
- Preheat the oven to 200'c/gas mark 6.
- Prepare all ingrediants for your cooking.
- Boil your past for 10-15 minutes until 'al dente.' Add the brocoli 5 minutes before the pasta is done.
- Drain the pasta in a collinder and wash the saucepan.
- Bring to the boil, stirring all the time until the sauce thickens on a high heat.
- Lower the heat. Simmer and stir the sauce until it has a rich smooth contistency and is free from lumps.
- Remove the sauce from the heat and stir in half of cheddar until melted and smooth.
- Stir in the pasta prawns, mushrooms and sweetcorn so the sauce covers all ingredients.
- Put the Pasta (and the other ingredients) into the dish and cook for 15-20 minutes.
BAKED SHRIMP SCAMPI LINGUINE PASTA RECIPE BY TASTY

- In a medium-sized casserole pan, combine shrimp, salt, pepper, red chili flakes, garlic, butter, lemon juice, and white wine.
- Bake for 10-13 minutes, or until shrimp turns pink and is fully cooked.
- Bring 4 quarts of water to a boil, add salt to taste, and cook linguine pasta al dente according to package directions, stirring occasionally.

- Peel the prawns and cut them in half lengthways.
- Cook the pasta in a large saucepan of boiling salted water for 8‐10 minutes or until al dente. Drain reserving ¼ cup pasta water and keep warm.
- Heat the butter and oil in a large frying pan over medium heat. Add the garlic, chilli and lemon zest. Cook, stirring for 2 minutes or until golden.
- Add the prawns and cook, stirring, for 2‐3 minutes or until the prawns are tender.
- Add the pasta, lemon juice, parsley and reserved pasta water.

- Place the prawns in a large colander, there’s no need to defrost them as you will drain hot pasta over them.
- Put a large pan of salted water on for the pasta. Pour the cream into a small pan, add the fennel seeds, nutmeg and pepper and cook it on low heat for about 15 minutes (about as long as boiling the pasta), stirring occasionally. At the end of the cooking time stir in a third of both cheeses.
