Fresh broccoli is one of my favorite vegetables. This is a great way to dress it up. Tastes incredible.

2 1/2 lbs fresh broccoli
2 garlic cloves, minced
1/3 cup olive oil
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon salt
1/4 teaspoon pepper
1 pinch cayenne pepper
8 ounces linguine or 8 ounces thin spaghetti, cooked and drained
grated romano cheese or parmesan cheese

Steps:

  • Cut florets and parts of broccoli stems into bite-size pieces.
  • In a large skillet, saute broccoli with garlic, oil, butter, salt, pepper, and cayenne over medium heat for about 10 minutes or until just tender, stirring frequently.
  • Place hot pasta in a serving dish; top with broccoli mixture.
  • Sprinkle with cheese.

3 cups small fresh broccoli florets
2 Tbsp. olive oil
2 cloves garlic, minced
1/8 tsp. crushed red pepper
4 OSCAR MAYER Selects Uncured Angus Beef Franks, cut into 1/4-inch-thick slices
2 Tbsp. KRAFT Shredded Parmesan Cheese

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to boiling water for the last 4 min.; drain.
  • Heat oil in large skillet on medium heat. Stir in garlic and crushed pepper; cook 2 min. Add pasta mixture and franks; stir. Cook 3 min. or until heated through, stirring frequently.
  • Top with cheese.

1/3 cup extra-virgin olive oil
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

4 ounces dry fettuccine pasta
1 cup heavy whipping cream
2 tablespoons butter
1 ounce tomato sauce
½ teaspoon minced garlic
½ cup broccoli florets
¼ cup fresh sliced mushrooms

2 tablespoons grated Parmesan cheese

Steps:

  • Cook fettuccini in a large pot of boiling salted water until "almost" done. Drain, and return noodles to pot.

1 bunch broccoli
4 cups orecchiette or 4 cups other small shell pasta
2 tablespoons extra virgin olive oil
8 cloves garlic, sliced very thin
6 anchovy fillets, chopped (or 1 tbsp paste)
1/2 teaspoon hot pepper flakes
1/4 teaspoon salt
1/4 cup grated parmesan cheese

Steps:

  • Cut Broccoli into small florets& chop stems.
  • Cook in a large pot of boiling salted water until tender-crisp, about 3 minutes.
  • Transfer to a bowl of ice water using a slotted spoon.
  • Drain& set aside.
  • Cook pasta in the same pot of boiling water until tender but firm, about 8 to 10 minutes.
  • Reserving 1/2 cup of the liquid, drain& return to the pot.
  • Heat oil in a medium non-stick skillet over medium heat; add next 4 ingredients& fry until garlic is fragrant& anchovies begin to break down, about 2 minutes.
  • Add broccoli to skillet and cook until heated through& garlic is beginning to turn golden, about 2 minutes.
  • Add to pasta along with reserved cooking liquid& toss to coat.
  • Sprinkle Parmesan on each serving.

1 two-ounce can anchovy fillets
2 teaspoons extra-virgin olive oil
3 large garlic cloves, minced
1/2 teaspoon chili pepper flakes
1 3/4 cups defatted chicken broth
1 cup mushrooms, washed and sliced
3 scallions, minced
1/2 pound dried linguini
1 large bunch broccoli, cut into florets
1/3 cup pine nuts, toasted until golden

Steps:

  • Bring a large pot of water to a boil. Meanwhile, in a heavy, deep saute pan, combine anchovies, olive oil, garlic and pepper flakes over moderate heat. Cook about 5 minutes, until the garlic is golden, stirring to prevent burning. Stir in broth, mushrooms and scallions and bring to boil and simmer uncovered for 8 to 10 minutes to reduce by one-third.
  • Meanwhile, cook the pasta. While it is cooking, steam broccoli in water or microwave oven until tender, drain and reserve. Drain the pasta.
  • Add pasta to the reduced stock and toss well. Add broccoli and toss. Divide the pasta between two bowls, sprinkle with pine nuts and serve.

Bright broccoli, lightly coated with a rich sauce that conveys a bit of heat, mingles with pasta in this dish from Majordomo, David Chang's first Los Angeles restaurant. There, they make their own thick noodles from scratch, using a combination of wheat flour and cassava starch. You don't have to. The restaurant's executive chef Jude Parra-Sickels suggests bucatini as a substitution. In preparing and serving the dish, do not short change the mixing of the ingredients because the broccoli tends to hide under the pasta. You have to coax it out, especially as you serve it. Vegetarians could use untoasted sesame oil, preferably cold pressed, in place of the pork fat.

3 cups Chinese broccoli, broccolini or broccoli (about 12 ounces), sliced in 1 1/2-inch pieces on the bias
6 tablespoons pork fat, preferably rendered from pork belly; or bacon fat, preferably from unsmoked bacon
3 tablespoons thinly sliced garlic (about 4 to 6 cloves)
3 tablespoons Asian fish sauce
1 pound bucatini
1/2 tablespoon Chinese chile oil, or to taste
Ground black pepper
2 tablespoons Chinese sesame oil

Steps:

  • Bring a pot of well-salted water to a boil for the pasta. Toss the broccoli into the pot, return to boil and cook 2 more minutes. Use a slotted spoon or a sieve to fish the broccoli out of the boiling water and into a colander. Cover the drained broccoli with ice cubes.
  • Heat the fat in a large skillet on medium-low, add garlic and cook until the garlic is golden. Remove from heat and stir in the fish sauce.
  • Add the bucatini to the boiling water and cook until al dente, about 8 minutes. When the pasta is almost done remove 1 cup of pasta water from the pot and add it to the skillet. Reheat the contents of the skillet on medium-high, cooking to reduce the liquid by half. As the liquid cooks, drain pasta and set aside. Remove the ice cubes from the broccoli and transfer the broccoli to the skillet. Add the chile oil. Reduce heat to low and continue simmering the contents of the skillet.
  • Add the cooked pasta to the skillet. Using tongs, toss the pasta with the other ingredients for several minutes until well combined. Season the pasta to taste with salt and pepper. Add sesame oil and toss again. Transfer everything to a wide bowl and serve.

6 slices bacon
