2 tablespoons extra-virgin olive oil
1 large onion, diced
salt and ground black pepper to taste
1 ¼ pounds ground turkey
1 tablespoon chopped garlic
1 ½ teaspoons red pepper flakes
2 (28 ounce) cans crushed tomatoes
1 cup dry white wine
1 (6 ounce) can tomato paste
1 tablespoon dried oregano
1 tablespoon dried basil
2 tablespoons white sugar, or more to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and a pinch of salt; cook and stir until softened, about 5 minutes. Add turkey; cook and stir until browned, about 5 minutes. Stir in garlic; cook for 2 minutes. Add red pepper flakes.
  • Stir tomatoes, white wine, tomato paste, oregano, and basil into the pot. Simmer, stirring occasionally, until the raw wine flavor cooks off, about 1 hour. Stir in sugar to reduce acidity. Season with salt and pepper. Puree sauce with an immersion blender for a less chunky sauce.

1/2 medium yellow onion, chopped (about 1/2 cup)
1 tbsp. Goya® Minced Garlic or 6 cloves garlic, finely chopped
1 tsp. dried oregano
1 tsp. dried thyme
1 tsp. cornstarch
1 cup white wine
1 packet Goya® Chicken Bouillon
1 tsp. sugar
1 can (15.5 oz.) Goya® Cannellini Beans, drained and rinsed
1 can (15.5 oz.) Goya® Red Kidney Beans, drained and rinsed
1 box (10 oz.) spinach fettuccine, cooked according to package directions
Fresh thyme leaves (optional)

Steps:

  • 1. Heat oil in a large skillet over medium-high heat. Add onions and cook until translucent, stirring occasionally, about 5 minutes. Add garlic, oregano and thyme; cook until garlic is light golden brown, about 1 minute. Using a whisk, mix cornstarch with 1/2 cup water until dissolved. Add cornstarch mixture, wine, chicken bouillon and sugar to skillet. Bring wine mixture to a boil and cook until the sauce is reduced by half, 2 - 5 minutes. Stir beans into sauce and cook until heated through, about 2 minutes more.
  • 2. Add cooked, hot pasta to skillet; stir to coat completely with sauce. Divide pasta evenly among serving bowls. Garnish with fresh thyme, if desired.

1/3 cup sliced green onions
1 pound sliced fresh mushrooms

1 garlic clove, minced
2 teaspoons grated lemon zest
1/4 cup butter, cubed
1/4 cup all-purpose flour
2 cups chicken broth
1 cup milk
1 large egg yolk, lightly beaten
4 cups cubed cooked turkey
Salt and pepper to taste
1/3 cup dry bread crumbs
1/3 cup grated Parmesan cheese
1/2 cup sliced almonds, toasted

Steps:

  • Cook noodles according to package directions. Meanwhile, in a Dutch oven, heat oil over medium heat. Add green onions; cook and stir 3 minutes. Add mushrooms, parsley, thyme and bay leaves. Cook until mushrooms are lightly browned. Add garlic; cook 1 minute longer. Discard bay leaves. , Transfer mushroom mixture to a small bowl; stir in lemon zest and set aside. Drain noodles., Preheat oven to 350°. In the Dutch oven, melt butter over medium heat. Stir in flour until smooth. Whisk in broth. Bring to a boil; stir until thickened, about 2 minutes. Combine milk and egg yolk; add to sauce. Cook, stirring, 2 minutes longer. , Stir in mushroom mixture and turkey; heat through. Fold in noodles. Season with salt and pepper., Spoon into a greased 13-x9-in. baking dish. Toss bread crumbs and cheese; sprinkle over top. Bake, uncovered, until lightly browned, 25-30 minutes. Sprinkle with almonds.

1/4 cup yogurt
1/4 cup (packed) finely snipped fresh chives

  • In a food processor puree the dill, parsley, oregano, lemon zest and juice, olive oil, ricotta cheese and yogurt. Transfer to a bowl and add the chives; season to taste with salt and pepper.

Add ground turkey and sauté until beginning to brown, breaking up large chunks with spoon, about 8 minutes. Add crushed tomatoes with puree, white wine, parsley, basil and oregano. Reduce heat to medium-low and simmer mixture until thickened to sauce consistency, about 30 minutes. Season sauce to taste with salt and pepper. Add pasta to sauce and toss to combine.

1 medium yellow onion, quartered and very thinly sliced (about 3 cups)
Salt and freshly ground black pepper
1/2 cup finely chopped fresh chives

1/4 cup finely chopped fresh tarragon leaves
1 (1-pound) box thin spaghetti
2 lightly packed teaspoons lemon zest (from 1 medium lemon)

Steps:

  • Bring a large pot of heavily salted water to a boil over high heat.
  • Heat 2 tablespoons oil in a large frying over medium-high heat. When it shimmers, add onion, season well with salt and freshly ground black pepper, and cook, stirring occasionally, until soft and translucent, about 5 to 6 minutes. Remove from heat, stir in half of herbs, and set aside.
  • Cook pasta according to the package directions. When pasta is cooked, reserve 1 1/2 cups pasta water, and drain pasta.
  • Return pot to stove and add in onion mixture, remaining 1/4 cup oil, remaining herbs, reserved pasta water, and zest, and season well with salt and pepper. Stir until evenly combined. Add pasta and toss until pasta is well coated. Taste and adjust seasoning, as necessary.

This cozy pasta is the perfect place to use up any hard-stem herbs like sage, thyme or rosemary that are languishing in your fridge. Add the herbs and a cinnamon stick to a pot of heavy cream. As they bubble together, the cream takes on a surprising but subtle herbaceousness. Use it to sauce pasta noodles and winter greens. If you don't have the herbs listed, leave them out or swap in marjoram or bay leaves, or even dried chile, lemon peel, garlic, shallot or leeks. 1 1/2 cups heavy cream
3 sage leaves
3 sprigs thyme or oregano
1 small rosemary sprig
1 cinnamon stick (or a grating of nutmeg)
Black pepper
1 pound linguine, fettuccine or another long noodle
1 bunch dark leafy greens, such as kale, mustard greens, broccoli rabe or mature spinach, stems removed and cut or torn into 2- to 3-inch pieces

Steps:

  • Bring a large pot of salted water to a boil. In a small saucepan, combine the heavy cream, sage, thyme, rosemary, cinnamon and a pinch of salt and pepper. Bring to a simmer over medium and cook until the cream has thickened slightly and is reduced to about 1 cup, 12 to 15 minutes, adjusting the heat as needed to maintain a gentle simmer. Remove from heat until the pasta's ready.
  • When the cream is at the halfway point, add the pasta to the boiling water and cook until a minute or 2 shy of al dente. About 3 minutes before draining the pasta, add the greens to the water. Reserve 1/2 cup pasta water, then drain the pasta and greens with a colander and return to the pot.
  • Place the just-used colander over the pot of pasta, then strain the infused cream through the colander into the noodles. (Discard or compost the herbs and cinnamon stick.) Add the 1/2 cup pasta water to the pasta, set over medium-high heat, and cook, tossing, until the sauce glosses the noodles, 3 to 4 minutes. Season to taste with salt and pepper.

Steps:

  • Heat the oil in a heavy skillet. Add the onion and saute until soft and barely beginning to brown. Add the garlic and stir.
  • Add the turkey and cook over medium heat, stirring, until the meat is uniformly broken up and loses its color. Stir in the oregano and fennel.
  • Drain the tomatoes, reserving the juice. Break them up and add to the turkey. Bring to a simmer and cook, stirring from time to time, for about 20 minutes, until the sauce has thickened. Season to taste with salt, pepper and hot pepper flakes.
  • Before serving, reheat the sauce, adding a little of the reserved juice if the sauce is too thick. Sprinkle with parsley.
