Herbed Fava Beans With Pasta image

Kosher salt
2 1/2 pounds fresh fava beans in the pods, shelled (or 1 1/2 to 2 cups shelled fava beans)
1 cup small bow-tie pasta or other small pasta
3 tablespoons extra-virgin olive oil
1 clove garlic, smashed
4 sprigs mint, plus 1 tablespoon finely chopped mint leaves
4 sprigs parsley, plus 1 tablespoon finely chopped parsley leaves
1 bunch scallions, finely chopped
2 tablespoons unsalted butter
Freshly ground pepper

Steps:

  • Fill a large bowl with ice water. Bring a large pot of salted water to a boil. Add the fava beans and cook 30 seconds. Remove with a slotted spoon and transfer to the ice water; let cool about 5 minutes (keep the pot of water boiling). Drain the beans, then peel off their skins (they should slip right off). Add the pasta to the boiling water and cook as the label directs. Reserve about 1 1/2 cups cooking water, then drain the pasta.
  • Heat the olive oil, garlic, mint sprigs, parsley sprigs and all but 2 tablespoons of the scallions in a large skillet over medium heat. Cook, stirring, until the scallions are soft, 1 to 2 minutes. Add the favas and 1 cup of the reserved cooking water. Bring to a simmer and cook until the favas are tender and the liquid is slightly reduced, 8 to 10 minutes; discard the garlic and herb sprigs.
  • Add the pasta to the skillet and cook, tossing until it absorbs some of the sauce, about 3 minutes. Stir in the butter, chopped mint and parsley, reserved scallions, and salt and pepper to taste. Add more cooking water to loosen, if needed. Serve warm or at room temperature.
  • Tip: If you can't find fresh fava beans, use frozen shelled and skinned ones and blanch as directed.

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Add sausages; cook 4 to 6 minutes, turning occasionally, until sausages are browned on all sides. Add pasta, chicken broth, tomato paste and salt. Heat to boiling; cover, reduce heat and cook 9 to 11 minutes, stirring occasionally, until pasta is al dente and most of liquid is absorbed.
  • Remove skillet from heat. Remove sausages, cut into 1/2-inch slices, and return to skillet with crushed tomatoes and beans. Cook over medium heat 3 to 4 minutes, stirring occasionally, until hot. Stir in Parmesan cheese, and serve.

One 750-milliliter bottle Chianti wine
Kosher salt
1 pound spaghetti
2 tablespoons olive oil
12 ounces spicy Italian sausage, casings removed
1 shallot, chopped
1 clove garlic, minced
1 cup freshly grated Parmesan
1/4 cup mascarpone, at room temperature
2 pounds fava beans, shelled, blanched and peeled
1 teaspoon chopped fresh rosemary

Steps:

  • Add the wine, 8 cups water and a handful of salt to a pasta pot. Bring to a boil over high heat. Add the spaghetti and cook until just shy of al dente, about 8 minutes.
  • While the pasta is cooking, heat a large skillet over medium-high heat. Add the oil and sausage to the hot pan. Cook, breaking up the sausage with the back of a wooden spoon, until almost fully cooked, about 4 minutes. Add the shallots and garlic, and cook an additional 2 minutes, stirring often. Using tongs or a pasta fork, remove the pasta directly to the sausage pan. Sprinkle with 3/4 cup of the Parmesan, and toss with tongs to combine. Add the mascarpone, fava beans, rosemary, 1/4 teaspoon salt and about 1 cup of the pasta water. Stir with a wooden spoon to combine, adding more pasta water as needed to form a sauce and coat the pasta. Serve sprinkled with the remaining 1/4 cup Parmesan.

1 onion, cut into 1/2-inch pieces
2 carrots, finely chopped
4 cloves garlic, finely chopped
8 ounces dried white beans, such as cannellini, rinsed and picked over
6 to 8 sprigs fresh thyme, tied with a piece of kitchen twine
1 pound sweet or hot Italian sausage links (4 to 6 links)
One 14.5-ounce can fire-roasted diced tomatoes
3 cups low-sodium chicken broth or stock
One 4 ounce chunk Parmesan rind, optional, plus grated Parmesan, for serving
1/2 cup ditalini pasta
2 tablespoons chopped fresh flat-leaf parsley
2 teaspoons balsamic vinegar
Kosher salt and freshly ground black pepper
Crusty bread, for serving

Steps:

  • Spread the onions over the bottom of a 5 1/2- to 6-quart slow cooker and top with the carrots, garlic, white beans, thyme bundle and sausage links. Mix the diced tomatoes with the broth and 3 cups water and pour over the sausages. Add the Parmesan rind if using.
  • Cook on high for 4 to 5 hours or on low for 7 to 8 hours; the beans will be tender and begin to fall apart.
  • Uncover the slow cooker, remove and discard the thyme bundle and Parmesan rind and transfer the sausage links to a cutting board. Stir the pasta into the stew and continue to cook, covered, until the pasta is cooked through, about 20 minutes.
  • Turn off the heat. Cut the sausages into bite-size pieces and stir into the stew along with the parsley and vinegar. Season with salt and pepper. Serve with grated Parmesan on the side for sprinkling on top and crusty bread for soaking up the broth.

Kosher salt
1 pound spaghetti
2 tablespoons olive oil
3/4 pound spicy Italian sausage, casings removed
1 shallot, chopped
1 garlic clove, minced
1 cup freshly grated Parmigiano-Reggiano
1/4 cup mascarpone cheese, at room temperature
2 pounds fava beans, taken out of the pod, blanched and peeled (see right)
1 teaspoon chopped fresh rosemary

Steps:

  • Pour the bottle of Chianti into a large pasta pot and add 2 quarts of water. Add a handful of salt and bring to a boil over high heat. Add the spaghetti and cook to just under al dente, about 8 minutes. Do not drain; you will need the pasta liquid for the sauce.
  • While the pasta is cooking, heat a large skillet over medium-high heat. Add the olive oil and sausage to the hot pan and cook, breaking apart the sausage with the back of a wooden spoon. When the sausage is almost entirely cooked, about 4 minutes, add the shallot and garlic and cook an additional 2 minutes, stirring often. Using tongs or a pasta fork, scoop the pasta directly into the pan with the sausage. Sprinkle with 3/4 cup of the Parmigiano-Reggiano and toss with the tongs to combine. Add the mascarpone, fava beans, 1/4 teaspoon salt, the rosemary and about 1 cup of the pasta cooking liquid. Stir with a wooden spoon to combine, adding more pasta liquid as needed to form a sauce and coat the pasta. Serve sprinkled with the remaining 1/4 cup Parmigiano-Reggiano.

2 garlic cloves, coarsely chopped
1/8 teaspoon crushed red pepper flakes
1/2 lb Italian sausage, casings removed

1 3/4 cups diced tomatoes (plum are meatiest)
1 cup fava beans, shelled (about 1 lb)
kosher salt
fresh ground black pepper
3/4 lb fresh pasta (sheets cut as desired) or 34 lbs fettuccine pasta
2 tablespoons parmesan cheese, grated

Steps:

  • In a large saucepan, heat oil over medium heat; add onion, garlic, and pepper flakes and cook until onion is translucent, about 6 minutes.
  • Add sausage and brown, while breaking up with a fork or wooden spoon, about 3 minutes.
  • Add wine and simmer 1 minute; add tomatoes and fava beans.
  • Let saute until tomatoes begin to soften, about 5 minutes; season with salt and pepper.
  • Meanwhile cook pasta in boiling salted water until al dente; drain, reserving 1/2 cup cooking liquid (return pasta to pot).
  • Add the sauce to the pasta in the pot and toss, over medium heat, until sauce coats pasta (about 2 minutes); add reserved cooking liquid as needed.
  • Transfer pasta to a serving bowl and pass cheese.

12 ounces Andouille sausage, diced
1 shallot, minced
2 garlic cloves, minced
1 bunch collard greens, stems discarded, leaves coarsely chopped (4 1/2 cups)
1 tablespoon fresh thyme leaves
1 (15-ounce) can cannellini beans, drained and rinsed
1 cup diced fresh tomato (from 1 large)

1/4 cup thinly sliced chives
1 lemon, zested and cut into wedges, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to the package's instructions.
  • Meanwhile, heat oil in a large heavy-bottomed skillet over medium-high. Add sausage and cook, stirring occasionally, until browned, 5 to 7 minutes. Add shallot and garlic and cook, stirring often, until translucent, about 2 minutes.
  • Add collard greens and toss to wilt, 2 to 3 minutes. Season with salt and pepper. Add the thyme, cannellini beans and tomatoes and toss to warm through. Season again with salt and pepper to taste.

1/8 teaspoon dried hot red pepper flakes
1 (14-oz) can diced tomatoes in juice, drained, or 2 large fresh plum tomatoes, cut into 1/4-inch dice
1 (15- to 19-oz) can small white beans, drained and rinsed
2 cups chicken stock or broth
1 lb campanelle (bell-shaped pasta), rotini (corkscrew pasta), or medium shells
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh basil
1/2 oz finely grated Pecorino Romano (1/4 cup)

Steps:

  • Preheat oven to 400°F.
  • Cut off and discard top of garlic head to expose cloves, then wrap head in foil and roast in middle of oven until cloves are tender, about 45 minutes. Open foil carefully and cool to warm. Squeeze garlic from skins into a small bowl, then mash to a paste with a fork.
  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook sausage, stirring and breaking up large pieces, until browned, about 4 minutes. Add sliced garlic, shallot, and red pepper flakes and cook, stirring occasionally, until shallot is pale golden, about 2 minutes. Stir in tomatoes, beans, garlic paste, and stock and simmer, uncovered, stirring occasionally, until slightly thickened and reduced by half, 15 to 20 minutes.
  • Meanwhile, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander. Toss pasta with sausage mixture, parsley, basil, cheese, and salt to taste in a large bowl (or in pasta pot) until combined well. Serve with additional cheese, if desired.

I think this is such a fabulous dish to celebrate Spring!! Fava bean (also called Broad beans) season is late spring and after the beans are ready to use this prepares so fast, you'll have more time to spend outside in the lengthening daylight. If you don't have access to fresh or frozen fava beans, you can substitute lima beans (not my favourite, but some like them) or edamame. This recipe is from Organic Style, 5/2005, I added a bit of garlic and garnished with a little mint. The prep time mostly is shelling the fava beans, the cooking time includes removing their outer skins.

2 lbs fresh fava beans or 2 cups shelled or frozen fava beans
kosher salt
8 ounces orecchiette
2 tablespoons unsalted butter

Steps:

  • Shell fava beans and cook in a medium pot of boiling salted water 2 minutes.
  • Drain and immediately plunge into a large bowl of ice water.
  • Peel off outer skins of beans---there is a dark green, thick ridge on the rounded side of the bean-starting there, pinch the skin and pull it open, once the skin opens a bit you can squeeze the bottom and the bean slips out into your bowl.
  • Cook pasta in boiling salted water according to package directions until al dente (you definitely don't want to overcook the pasta for this dish).
  • Reserve a half cup of the water the pasta has cooked in and drain pasta in colander, you don't have to worry about excess water in the "little ears" as it will help tie the pasta sauce together.
  • Return pot to medium heat, add butter and garlic, cook until garlic is soft.
  • Add half-and-half, heat one minute.
  • Stir in lemon juice, zest and pepper.
  • Add pasta and cheese, stirring until pasta is coated and cheese is melted.
  • Add favas and toss, adding a few tablespoons of reserved pasta water if pasta seems dry (the starch from the cooking water will help make the sauce creamy, it shouldn't seem sticky).
  • Serve immediately in warm bowls, garnishing with mint if desired.
