2 cups butternut squash (, peeled, seeded, and cubed)
1 tablespoon olive oil
salt and pepper
1 tablespoon olive oil
1/2 lb sausage (, crumbled, without casings)
1 tablespoon olive oil
4 garlic cloves (minced)
6 oz spinach
1 cup heavy cream
1/3 cup Parmesan cheese (shredded)
1/4 teaspoon salt
8 oz farfalle ((bow tie pasta))

Steps:

  • Preheat oven to 400 F.
  • In a large bowl, toss cubed butternut squash with olive oil, salt, and pepper.
  • Spread the squash on a parchment paper-lined baking sheet in one layer, without overcrowding.
  • Roast in the preheated oven at 400 F for 30 minutes. Remove from oven.
  • In a medium skillet, heat 1 tablespoon of olive oil on medium heat.
  • Add crumbled sausage and cook for about 10 minutes, regularly stirring, until the sausage is cooked through. Remove from heat and set aside.
  • Tip: Cook the sausage while the butternut squash is being roasted.
  • In a separate, large skillet, heat 1 tablespoon of olive oil together with minced garlic and spinach over medium heat. Cook, occasionally stirring, for about 5 or 7 minutes until spinach starts to wilt.
  • Add heavy cream. Bring to a brief boil, then immediately reduce to simmer (boiling but not intensely). Add shredded Parmesan cheese. Keep stirring the sauce with the Parmesan cheese on low to medium boil (simmer) until the cheese melts. Remove from heat.
  • Season with salt to taste, about 1/4 teaspoon of salt. No salt might be necessary if the sausage is very salty.
  • Tip: Use your judgment about whether to add salt or not based on how salty the sausage is. Make the cream sauce while the butternut squash is being roasted.
  • Cook pasta al dente in boiling water according to package instructions. That usually means cooking pasta in boiling water for about 7 to 11 minutes. Drain.
  • To a large skillet with the creamy spinach sauce, add drained cooked pasta and cooked sausage. Stir. Season with salt and pepper, if desired.
  • Top the pasta with roasted butternut squash. Stir the squash in, or leave it on top.

Whether you're after a night in with your special someone or your sweatpants, this is your pasta: a cozy combination of spicy sausage and squash that's glossed with nutty, sage-spiked butter and Parmesan. It's inspired by the cavatelli with sausage and browned sage butter at Frankies 457 Spuntino in Brooklyn - the most ordered dish on dates, according to the owners, but appealing no matter the occasion, according to us. The key to making the dish sing is the unsexy color (brown). You'll want to get a hard sear on the sausage and the squash, and let the butter bubble until brown and toasty. If you're looking for a vegetarian option, omit the sausage. The meat will be gone, but the comfort won't be.

1 pound cupped or tubed pasta, like orecchiette or penne
1 pound hot Italian sausage links
2 tablespoons extra-virgin olive oil, plus more for the pasta
3/4 pound peeled butternut squash, cut into 1/2-inch cubes (about 2 cups)
Salt and pepper
6 tablespoons unsalted butter
8 sage leaves
1/2 cup grated Parmesan, plus more for garnish

Steps:

  • Bring a large pot of heavily salted water to a boil. Meanwhile, cook the sausage: In a sauté pan or skillet large enough to hold all the pasta, add the sausage and enough cold water to cover. Set over medium-high heat, then remove from the heat when the water hits a boil, about 8 to 10 minutes.
  • Transfer the sausage to a cutting board and cut into 1/2-inch coins. Dry out the pan and return it to the stove.
  • In the same pan, heat the olive oil over high until nearly smoking. Add the sausage and cook, flipping once, until dark brown on both sides, 5 to 7 minutes. Remove the sausage to a paper towel-lined plate, then reduce the heat to medium. Add the squash and a pinch of salt to the pan. Let cook, stirring briefly and scraping up any browned bits on the bottom of the pan, until browned, 5 to 7 minutes.
  • While the squash is browning, add pasta to boiling water, and cook to al dente according to package directions. Reserve 1 cup of the pasta cooking water, and drain the pasta.
  • When the squash is nicely browned, add the butter and sage and cook until the butter is golden, nutty smelling and foaming, just a minute or two, then immediately remove the pan from the heat and add back the sausage.
  • Add the pasta to the pan and mix with the brown-butter sauce (if the pasta has cooled off quite a bit, return the pan to low heat while you combine everything). Stir in the cheese, then add pasta water as needed to smooth the sauce. Adjust with salt and pepper, and serve with extra Parmesan, if you like.

1 ⅔ cups cubed butternut squash
1 large onion, chopped

8 ounces uncooked penne pasta
½ pound turkey sausage
¼ cup heavy cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a roasting pan with the olive oil. Place the squash and onion in the pan, and season with salt and pepper. Roast 30 minutes, or until squash is tender.

1 Tbsp. all-purpose flour
2 cups milk
1 cup heavy cream
1 1/2 cups finely grated Parmesan, divided

Steps:

  • Heat oil in a medium heavy pot over medium-high. Cook sausage, breaking up into about 1" pieces with a wooden spoon, until well browned, 5-7 minutes. Add flour and cook, stirring constantly, until evenly distributed, about 1 minute.
  • Combine milk, cream, and 2 cups water in a large bowl or glass measuring cup. Stirring sausage mixture constantly, slowly stream in milk mixture; bring to a simmer. 1 pound Italian hot sausage
1 cup chopped onion
5 garlic cloves, thickly sliced
1 tablespoon chopped basil
1 tablespoon chopped fresh sage
¼ teaspoon red pepper flakes (optional)
1 cup white wine
1½ cups butternut squash, peeled, seeded and cut into ½-inch dice
2½ cups chicken stock
2 tablespoons salt (optional)
1 pound DaVinci® pasta: sea shells, penne rigate or rigatoni
6 tablespoons Parmesan cheese (optional)
2 tablespoons softened butter

Steps:

  • Pour 1 tablespoon of olive oil into a large skillet (12 inches), and cook over high heat for 2 minutes. Take the sausage out of the casing and add it to the hot oil. Cook for about 3 minutes until it browns. Using the back of a wooden spoon, break the sausage up into small, bite-size pieces while it is browning. Turn off the heat. Using a slotted spoon, place the sausage in a bowl; cover and set aside. Keep about 1 tablespoon of the oil and fat left in the pan, and discard the rest. Add the remaining 2 tablespoons of olive oil to the pan, and cook over medium heat for 3 minutes. Add the onion, garlic, basil and sage, and cook for 4 minutes, stirring well, until the onion and garlic start to brown. (If you like it really spicy, add the optional ¼ teaspoon of red pepper flakes.) Add the reserved sausage and cook for 2 more minutes, stirring well. Add the wine and deglaze the pan. Cook for 5 more minutes, stirring well to dislodge the brown bits at the bottom of the pan. Add the diced butternut squash and cook for 2 minutes, stirring well. Add the chicken stock, bring to a boil over high heat, and then reduce the heat and allow to simmer for 30 minutes. While the sauce is cooking, bring a large pot of water to a boil. (If you wish, add the optional 2 tablespoons of salt.) When the water reaches a rolling boil, add the pasta and cook according to the instructions on the package. When the pasta is cooked, drain it well in a colander over the sink. Pour the pasta back into the pot, add the sauce, and cook over medium heat for 3 to 5 minutes, stirring constantly. Remove the pan from the heat, add the optional Parmesan cheese and softened butter, and serve.

1 tbsp cider or white wine vinegar
2 tbsp olive oil , plus extra for the dish
1 butternut squash (about 900g), peeled, deseeded and cut into 2-3cm cubes
pinch of chilli flakes
6 sausages (about 400g)
50g unsalted butter
small bunch of sage (about 10 leaves)
50g plain flour
600ml whole milk , plus extra for topping up, if needed
½ nutmeg , grated
40g grated parmesan , plus extra to serve
1 tbsp Dijon mustard
400g fusilli
70g mushrooms , sliced
1 garlic clove , crushed
100g kale , chard or spinach, chopped
50g pumpkin seeds

Steps:

  • Heat the oven to 200C/180 fan/gas 6. Whisk together the vinegar and half the olive oil. Put the squash in a roasting tin and toss with the dressing, the chilli and seasoning. Squeeze the sausagemeat out of the skins, roll into small meatballs (you should have about 35). Arrange around the squash and roast for 35-40 mins, turning halfway, until the squash is tender and the meatballs are caramelised.
  • Meanwhile, melt the butter in a saucepan over a medium heat, until bubbling. Add the sage and allow to sizzle for a few minutes, or until crisp. Remove using a slotted spoon and set aside on a plate lined with kitchen paper. By this point, the butter should have browned. Stir in the flour and cook for a few seconds, then gradually pour in the milk, whisking continuously until you have a smooth sauce, about 7-10 mins. Add the nutmeg and some seasoning, stir in the parmesan until melted, then stir in the mustard.
  • Oil a medium-sized baking dish. Cook the pasta following pack instructions until al dente, then drain and run under cold running water. Heat the remaining oil in a pan over a medium heat and fry the mushrooms with a pinch of salt for a few minutes, until softened and caramelised. Add the garlic, then the greens, stirring until the greens wilt, then add to the white sauce along with the squash, pasta and half the fried sage, adding up to 50ml milk or water if it's too thick.
  • Pour into the baking dish, then add the meatballs. Scatter over the remaining sage, the reserved squash seeds, and grate over the extra parmesan. Roast for 25-30 mins, until golden and bubbling. Allow to settle for 10 mins before serving.

This is really amazing, colorful and oh so tasty! The combination of sweet squash combined with sage, sweet or spicy Italian sausage is incredible! The Orichette pasta, "Little lamb ears" is perfect for this dish. I cooked the squash and sausage ahead of time, and set aside. This worked well since everything is heated through before cooking. This recipe was passed along to me from a GF. She's been bragging on it for years. I finally made it and now wonder WTH took me so long! From: Traditional Home, Sept. 2006 Although this recipe states that it serves 6-8, I think it serves 4-6 as a main dish. Serve with a green salad and sautéed haricot verts, some crusty bread and you have a lovely meal! Oh, don't forget the vino :D

  • Boil water (salted) for pasta.
