PASTA SALAD WITH ITALIAN DRESSING

Pasta Salad with Italian Dressing image

This pasta salad with Italian dressing is easy to make and has the most incredible flavors. Crispy prosciutto, tender bocconcini balls, tangy banana peppers, cherry tomatoes, olives, basil, and parmesan cheese get tossed with your favorite pasta and delicious Italian dressing. It's irresistible!

Provided by Kristen Stevens

Categories     Salad     Side Dish

Time 30m

Number Of Ingredients 12

16 ounces dry pasta (we like bow-tie)
1 cup Italian salad dressing (we like our homemade Italian salad dressing best but store-bought works, too)
4 ounces prosciutto
8 ounces mini bocconcini (or regular bocconcini cut in half)
1 green bell pepper (diced)
1 cup cherry tomatoes (sliced in half)
¾ cup olives
¼ cup thinly sliced red onion
½ cup thinly sliced basil leaves
½ cup Italian parsley (chopped)
Optional: 1 cup banana peppers
½ cup grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil over high heat. Cook the pasta according to the package directions. Drain the water then add the pasta to a large bowl and toss with ¼ cup of the Italian salad dressing.
  • While the pasta is boiling, crispy the prosciutto. Heat a large frying pan over medium-high heat then add the prosciutto in a single(ish) layer. Let it cook until it shrinks and becomes crisp then turn it over and cook it for another minute on the other side. Remove it from the pan and crumble it a little into a bowl.
  • Add the bocconcini, bell pepper, cherry tomatoes, olives, red onion, basil, parsley, banana peppers, crispy prosciutto, and parmesan cheese to the bowl with the pasta. Pour the remaining dressing over the top then toss to coat.

ITALIAN PASTA SALAD

Italian Pasta Salad image

This Italian Pasta Salad is what everyone needs in their go-to recipe arsenal for quick and easy recipes ideal for a potluck, picnic or any other summer get-togethers. It's healthy, it's fast, super easy to make, delicious and bursting with flavor.

Provided by Joanna Cismaru

Categories     Salad

Time 25m

Number Of Ingredients 19

1 pound pasta (such as penne, elbow, fusilli or rotini)
1 large green bell pepper (chopped)
1 cup cherry tomatoes (cut in half or quartered)
8 ounce salami (thickly sliced or cut in small pieces)
8 ounce bocconcini (mini, or cut in half or quarters if using regular size bocconcini)
½ medium red onion (finely chopped)
8 ounce spicy salami (thickly sliced or cut in small pieces)
8 ounce Monterey Jack cheese (cut in small cubes)
1/2 cup Kalamata olives (sliced)
2 cloves garlic (minced)
2 tablespoon parsley (fresh, chopped)
2 tablespoon oregano (fresh, chopped (or 1 tbsp dried oregano))
2 tablespoon basil (fresh, chopped (or 1 tbsp dried basil))
¼ teaspoon red pepper flakes
½ cup olive oil
3 tablespoon white wine vinegar
2 tablespoon lemon juice
½ teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)

Steps:

  • Cook pasta: Cook the pasta according to the package directions. For 1 lb of pasta you will need about 2 gallons of liquid, also make sure to salt your water well, at least 2 tbsp of salt. After you drain the pasta do not rinse it, if anything add a little olive oil to it to prevent it from sticking together.
  • Combine salad ingredients: Toss all the pasta salad ingredients together.
  • Prepare salad dressing: In a small bowl or jar add all the dressing together and whisk well. If using a jar, put the lid on and close it, then shake well. You want the dressing to emulsify a little bit, this will ensure the pasta will absorb the dressing.
  • Toss and serve: Pour the dressing over the pasta and toss well. Chill for at least 1 hour before serving.

Provided by Heather

Categories     Side Dish

Time 25m

Number Of Ingredients 15

24 ounces tri-color rotini pasta (uncooked)
1 pint cherry tomatoes (halved)
12 ounces sliced pepperoni
1 red onion (diced)
1 green bell pepper (diced)
16 ounces mozzarella cheese (cubed)
1 cup grated parmesan cheese
8 ounces olives (sliced)
1 1/2 cups olive oil
1/2 cup red wine vinegar
2 tablespoons Italian seasoning
2 teaspoons garlic powder
1 1/2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon red pepper flakes

Steps:

  • Cook pasta according to package directions for al dente pasta. Drain and rinse with cold water until pasta is room temperature. Place pasta in a large bowl.
  • Add cherry tomatoes, pepperoni, onion, bell pepper, mozzarella, parmesan, and olives to the bowl. Set aside.
  • In a separate bowl, add olive oil, vinegar, italian seasoning, garlic powder, salt, pepper, and red pepper flakes. Stir to combine.
  • Pour vinaigrette over pasta salad, then toss to coat. Refrigerate for 1 hour before serving. Pasta salad will keep for 3-4 days, refrigerated in a sealed container. Pasta WILL continue to soak up the dressing the longer it sits, so it may need a splash of olive oil and vinegar if it has been sitting for several hours.
