¾ pound Italian sausage
½ cup diced onion
6 cups chicken broth
1 (15 ounce) can diced tomatoes with basil, garlic, and oregano
5 ounces farfalle pasta
½ teaspoon Italian seasoning
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
½ cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh basil

Steps:

  • Cook Italian sausage and onion in a skillet over medium-high heat until sausage is browned and crumbly and onion is soft and translucent, about 8 minutes.
  • Mix in chicken broth, diced tomatoes, pasta, Italian seasoning, salt, and pepper. Bring to a boil. Reduce heat and simmer until pasta is tender, stirring occasionally, about 10 minutes. Add ricotta cheese and cook until ricotta is fully incorporated, 2 to 3 minutes more.
  • Top each serving with 2 tablespoons mozzarella cheese, 1 tablespoon Parmesan cheese, and 1/2 tablespoon fresh basil.

1 (16 ounce) package linguine
3 tablespoons olive oil
1 small sweet onion, thinly sliced
1 teaspoon minced garlic
1 (14.5 ounce) can diced Italian tomatoes
1 (10.5 ounce) can chicken broth
2 cups broccoli florets

Steps:

  • Prepare sausage according to directions. Cool slightly; cut into 1/4-in. slices. Prepare pasta according to package directions.
  • In a large saucepan, saute the onion and garlic in olive oil until tender. Stir in tomatoes and chicken broth. Bring to a simmer. Add the broccoli and cooked pasta. Cook until broccoli is tender, about 5 minutes. Add sausage; toss to combine.

A tasty, simple dish, season well. Feel free to add your own vegetables in.

Steps:

  • Cook pasta in a large saucepan of boiling salted water for 8-10 minutes. Drain and set aside.
  • Melt butter over medium heat in a large saucepan. Add flour, stir to form a roux, cooking for a few minutes.
  • Whisk in milk a little at a time. Add cream and mayonnaise if necessary, for extra thickness. Cook for 10-15 minutes till a thickened and smooth sauce.
  • Preaheat grill to hot. Remove sauce from hob and add most of cheese leaving a handful (around 4oz). Stir until cheese is melted.
  • Add pasta mix and place in an ovenproof dish. Sprinkle on rest of cheese. Place in oven until brown and bubbling.

I love Italian foods, especially those easy to prepare and freezer store. I lost a rigatoni and sweet Italian sausage dish that I liked so decided to create one of my own. I added spices such as allspice I thought would blend well.

16 ounces rigatoni pasta
1 -1 1/4 lb sweet mild Italian sausage (bulk or links with the casings removed)
4 slices slightly crisp bacon, chopped fine (or you may use bacon bits instead)
1 (6 ounce) can tomato paste
2 (8 ounce) cans tomato sauce
1 (28 ounce) can diced tomatoes
1 (14 1/2 ounce) can diced tomatoes (if you like it hot) (optional) or 1 (14 1/2 ounce) can diced tomatoes with mild green chilies (if you like it hot) (optional)
3 garlic cloves (more if you like garlic)
2 large onions
4 stalks celery
2 bell peppers
4 tablespoons dried parsley
2 tablespoons dried sweet basil leaves
1 tablespoon crushed fennel seed
1/2 teaspoon thyme (optional)
1/2 teaspoon allspice
pepper
1/4 cup olive oil (to keep pasta from sticking)
water (as needed, to keep sauce from becoming too thick)
3 tablespoons olive oil (if needed in braising the sausage) (optional)

Steps:

  • Chop vegetables fine and sauté in 1/4 cup olive oil until soft.
  • Set aside.
  • In a large skillet braise and break sausage into small pieces.
  • Add olive oil if needed to prevent sticking.
  • When thoroughly browned, add tomatoes, tomato sauce, tomato-paste, vegetables, spices, bacon bits and one-cup water.
  • Simmer for one hour, stirring occasionally.
  • Add water as needed to maintain sauce consistency.
  • To cook the rigatoni: Add 1/4 cup olive oil to twice the amount of unsalted boiling water necessary to cover the rigatoni.
  • Cook rigatoni al dente according to package directions (about 8-10 minutes.) When rigatoni is al dente, drain, toss with sauce and place on large serving dish.
  • You also can store in twelve GLAD 8 oz containers or six GLAD 16 oz containers for freezer storage.
  • The aroma of the frozen servings is even more pleasing as they reheat in a microwave oven.
  • A fresh tomato salad with a balsamic vinaigrette dressing completes the meal.

1 lb penne pasta
1 lb mild Italian turkey sausage link
1 cup chopped onion
2 garlic cloves, minced
1 tablespoon tomato paste
1/4 teaspoon salt
1/4 teaspoon pepper
2 (14 1/2 ounce) cans of diced petite tomatoes, undrained
1 teaspoon basil
1/2 teaspoon sugar
cooking spray
1 cup shredded mozzarella cheese
1 cup grated fresh parmesan cheese

Steps:

  • Preheat oven to 350.
  • Cook pasta according to package directions, omitting salt and oil. Drain the pasta and place in large bowl.
  • Remove casings from sausage. Cook sausage, onion and garlic in nonstick skillet over medium heat until browned, stirring to crumble. Add the tomato paste, salt, pepper and tomatoes, bring to boil. Cover, reduce heat, simmer 10 minutes, stirring occasionally.
  • Add sausage mixture and basil to cooked pasta, toss well. Place half of pasta mixture in 4 quart casserole dish, coated with cooking spray.
  • Top with half of mozarella and half of parmesan cheese. Repeat layers. Bake at 350 for 25 minutes or until bubbly. Yield : 8 servings.
