Steps:
- Preheat oven to 375 °F.
- Cream butter and cream cheese together. Blend in the flour and the salt, to taste. Chill for several hours until firm enough to roll out. Roll mixture to 1/4-inch thick on a cutting board generously sprinkled with confectioner's sugar. Cut dough into 1 by 3-inch pieces with a pastry wheel. Put dates and/or cranberries on the bottom of each strip and roll up. Place fold side down on a sheet tray.
- Place in oven and bake for 15 to 20 minutes until golden brown. Sprinkle with confectioner's sugar to serve.

- Preheat oven to 350 degrees F. Coat a 9×13 pan with cooking spray and set aside. In a medium bowl, combine cake mix, 1 egg and 1 stick of butter. Using a hand-held mixer, beat on medium speed until combined. Press into the bottom of the prepared pan and set aside.
- Place the cream cheese, 2 eggs and the vanilla in a large bowl. Using a hand-held mixer, beat on medium speed until smooth. Add the confectioners’ sugar and beat until smooth. Add 1 stick of butter and beat until smooth. Fold in the toffee bits using a spatula.
- Pour mixture over top of the crust and spread evenly. Bake in the preheated oven for 40 to 45 minutes, leaving the center of the cake gooey. Add sprinkles, if desired. Let cool and cut into squares.

Put cranberries through a grinder. Add ground berries, pineapple, nuts and sugar to cooled gelatin mixture. Mix well. Pour into a bowl or mold. Refrigerate until completely set. Place mold in a warm water bath and run a knife around the edges to loosen. Invert onto a serving plate, garnish with parsley and a dollop of sour cream or whipped cream.
