HONEY WHEAT BREAD I
This is a county fair blue ribbon winning loaf - it is delicate and soft.

Steps:
- Dissolve yeast and sugar in 1/2 cup warm water.
- Combine milk, 1/4 cup water, shortening, honey, salt and wheat flour in food processor or bowl. Mix in yeast mixture, and let rest 15 minutes. Add bread flour, and process until dough forms a ball. Knead dough by processing an additional 80 seconds in food processor, or mix and knead by hand 10 minutes. Place the dough in a buttered bowl, and turn to coat. Cover the bowl with plastic wrap. Let dough rise for 45 minutes, or until almost doubled.
- Punch down, and divide dough in half. Roll out each half, and pound out the bubbles. Form into loaves, and place in buttered 9x5 inch bread pans. Butter the tops of the dough, and cover loosely with plastic wrap. Let rise in a warm area until doubled; second rise should take about 30 minutes.
- Place a small pan of water on the bottom shelf of the oven. Preheat oven to 375 degrees F (190 degrees C).
- Bake for 25 to 35 minutes, or until tops are dark golden brown. Butter crusts while warm. Slice when cool.

SUNFLOWER SEED & HONEY WHEAT BREAD

- In a large bowl, dissolve yeast in warm water. Add the bread flour, oil, honey, salt and 4 cups whole wheat flour. Beat until smooth. Stir in sunflower kernels and enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide into 3 portions. Shape into loaves; place in 3 greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 minutes., Bake at 350° until golden brown, 35-40 minutes. Brush with melted butter. Remove from pans to wire racks to cool. Freeze option: Securely wrap and freeze cooled loaves in foil, and place in resealable plastic freezer bags. To use, thaw at room temperature.

NO-KNEAD SEEDED OVERNIGHT BREAD
Turn out a hearty, chewy-crusted loaf worthy of the best bakeries -- all without breaking a sweat. This no-knead, no-fuss oat and wheat bread is packed with pumpkin, flax, poppy, and sesame seeds. Martha made this recipe on Martha Bakes episode 505.

- Stir together 3 cups whole-wheat flour, bread flour, oats, salt, yeast, 1/4 cup pumpkin seeds, and 2 tablespoons each flax, poppy, and sesame seeds in a large bowl. Whisk honey or sugar into water in measuring cup, then stir into flour mixture. Drizzle a thin layer of oil over top of dough, cover with plastic wrap, and refrigerate 2 hours, then let rise at room temperature 12 to 18 hours.
- Coat inside of a large Dutch oven or ovenproof pot with oil and sprinkle evenly with 2 tablespoons whole-wheat flour. Stir dough to deflate, then quickly form into a ball and place in pot. Sprinkle with remaining 1 tablespoon whole-wheat flour and smooth into dough with your hands. Brush with egg white and sprinkle with remaining 1 tablespoon each pumpkin, flax, poppy, and sesame seeds. Cut an X in top of dough with a sharp knife. Cover; let rise in a warm spot until doubled in bulk, about 1 1/2 hours.
- Preheat oven to 475 degrees with a rack in lower third. Lightly sprinkle top of dough with water, cover, and place in oven. Reduce oven heat to 450 degrees. Bake until browned, about 45 minutes. Remove lid; bake 15 minutes more. Let cool in pot on a wire rack 15 minutes, then turn bread out onto rack to cool completely. To store, wrap tightly in plastic and keep at room temperature up to three days.
HONEY AND FLAXSEED BREAD
A delicious whole grain bread. It is my favorite bread of all time! It is for bread makers. You may substitute vegetable oil for flaxseed oil if flaxseed oil is unavailable.

Cover and let rest 10 minutes. Punch down dough; divide in half. Shape into loaves. Place in 2 greased 8x4-in. loaf pans, seam side down. Cover and let rise in a warm place until doubled, about 15 minutes., Preheat oven to 350°. In a small bowl, beat egg; brush over loaves. Bake until golden brown, 25-30 minutes. SEEDED WHOLE WHEAT BREAD
I was looking for a bread recipe that combined the things I liked and couldn't find anything. So I finally decided to come up with one myself. For a first try it came out pretty darn good.

Steps:
- Combine first 6 ingredients, mix well. Let set until lukewarm.
- Mix yeast with warm water and sugar. Let set until bubbly.
- In mixing bowl combine cereal mixture, yeast mixture and all of the remaining ingredients except the bread flour.
- Using paddle attachement mix for 3-4 minutes. Change to dough hook and add bread flour. Mix for 3-4 minutes. The dough will be a little sticky. Turn out onto floured counter and knead for 3-4 minutes, adding bench flour only to prevent sticking.
- Place in greased bowl. Cover and let raise until double. Punch down, divide in half, form loaves and place in bread pans. Cover and let raise 30-40 minutes. Bake 375 degrees 25-30 minutes, until bottom of pan "hisses" when touched quickly with damp finger tip. Remove from pans, let cool on cooling rack.
