2 3/4 cups sugar
4 ounces unsweetened chocolate
3 tablespoons butter, plus more for greasing pan
1 cup half-and-half
1 tablespoon corn syrup
1 tablespoon vanilla extract
1 cup chopped, roasted nuts, optional

Steps:

  • Grease an 8 by 8-inch pan with butter. In a heavy-bottomed saucepan, combine the sugar, chocolate, 1 1/2 tablespoons of the butter, half-and-half, and corn syrup. Over medium heat, stir with a wooden spoon until sugar is dissolved and chocolate is melted. Increase heat and bring to a boil. Reduce heat to medium-low, cover, and boil for 3 minutes. Remove the cover and attach a candy thermometer to the pot. Cook until the thermometer reads 234 degrees F. Remove from the heat and add the remaining butter. Do not stir. Let the mixture cool for 10 minutes or until it drops to 130 degrees F. Add vanilla and nuts, if desired, and mix until well-blended and the shiny texture becomes matte. Pour into the prepared pan. Let sit in cool dry area until firm. Cut into 1-inch pieces and store in an airtight container for up to a week.

8 tablespoons (1 stick) butter
3 cups sugar
2/3 cup cocoa
1 teaspoon salt
1 1/2 cups milk
1/2 cup smooth peanut butter
1 cup chopped pecans
2 teaspoons vanilla extract

Steps:

  • Coat an 8-by-8-inch pan with 4 tablespoons of the butter. In a medium saucepan, stir together the sugar, cocoa and salt. Stir in the milk. Bring the mixture to a rolling boil and reduce the heat to medium-low. Attach a candy thermometer to the saucepan and simmer for 25 to 30 minutes, or until the mixture reaches 240 degrees F. Remove the pan from the heat, stir in the remaining 4 tablespoons butter, the peanut butter, the pecans and the vanilla. Pour the fudge out onto the buttered pan. Let the fudge cool for 20 minutes, then cut it into bite-size pieces.

I clipped this recipe from a December 1983 issue of The Charlotte (NC) Observer, which was running a contest to see who made the best fudge. This recipe won in the "Plain Chocolate Fudge" category (no additives such as nuts). I made this for presents at the holidays and now my grown kids are making it for gifts themselves. I buy disposable aluminum pans approx 5x8-inch so I can just wrap them up and give them as gifts. This recipe makes three pans-full.... or two 8x8-inch pans of fudge.

4 cups sugar
1 cup whole milk
1 teaspoon vanilla
1 cup butter (no margarine)
25 large marshmallows, cut in quarters
2 ounces unsweetened chocolate squares, cut up
12 ounces semi-sweet chocolate chips
11 1/2 ounces milk chocolate chips

Steps:

  • Butter two 8x8-inch or three 5x8-inch pans.
  • In a large heavy pot (I use a dutch oven size pot), mix together sugar, milk, vanilla, and butter; stir to mix.
  • Bring to a boil, stirring constantly.
  • Then let boil for 2 minutes, not stirring.
  • NOTE: You need to move quickly during the next couple of steps so have the marshmallows and chocolate squares cut up and cut open the bags of chocolate chips.
  • Turn off heat but leave pot on the burner.
  • Add marshmallows, quickly stirring until melted.
  • Add each chocolate separately in the order listed in the recipe, quickly stirring until melted.
  • Pour into prepared pans.
  • Let cool.
  • Fudge tastes better each day --- if it lasts!

Now days, everyone asks me for it on the holidays so it's stayed a holiday tradition. It takes almost 30 minutes exactly from start to finish and sets up every time. I have never made it where it doesn't get hard. Handed down from my aunt whom I was named after.

1 (12 ounce) can evaporated milk
1 cup butter
32 marshmallows
12 ounces semi-sweet chocolate chips
1 dash vanilla

  • Combine sugar, milk and butter in heavy saucepan. Cook over medium heat stirring constantly to soft ball stage.
  • Remove from heat.
  • Add vanilla, marshmellows and stir til almost melted.
  • Add chocolate chips and stir until everything is completely melted.
  • Toss in pecans if desired.
  • Pour on to large buttered platter or plate.
  • Allow to cool completely. I cut into squares using the pizza cutter. Store in tight container - though it won't last long at all!
  • This can be easily cut in half for smaller batch.

This is an extremely rich and creamy fudge recipe, it will definitely satisfy a sweet tooth craving. My husband and co-workers are always asking me to make this. If you have never made fudge, it may take a few times to get it right. Do not heat past 238 degrees or the fudge becomes dry. Also, if it is cooled too much before you beat it, it will harden very quickly. Beat the fudge until it just starts to lose its gloss.

Aunt Helen's Old Fashioned Chocolate Fudge With Peanut Butter image

This is real old fashioned fudge made by boiing sugar, milk, and chocolate to the softball stage. It's tricky, but once you get it you won't make fudge another way. It took me a long time to get this right and I learned some tricks along the way which I'm sharing here.

1 1/4 cups whole milk
4 ounces unsweetened chocolate
4 cups sugar
1/2 teaspoon salt
3/4 cup jif chunky peanut butter
1 teaspoon vanilla

Steps:

  • Butter 1 8x8 inch square glass pan and set aside.
  • melt chocolate in milk using sturdy, heavy bottomed pan.
  • Stir in salt and sugar with wooden spoon until just mixed.
  • Cook the chocolate, milk, salt and sugar mixture on medium or a little less than medium heat until it reaches softball stage. DO NOT STIR and DO NOT SCRAPE THE SIDES OF THE PAN.
  • Softball stage: You can use a candy thermometer. I find the thermometers unreliable, so I check the progress of the fudge by dropping a small amount in cold water. If I can easily make a soft ball of it with my fingers, it is ready. With one batch of fudge, this generally takes about 8 minutes or a little longer. Obviously if you double the batch it takes more time. However, don't just assume 8 minutes will work. Either use the softball test or a candy thermometer to make sure. What works on my stove may be different for yours.
  • When fudge has reached softball stage, place in a sink partially filled with ice and water. Make sure there's not so much that it could seep into the pan. This is just to cool the pan.
  • Stir in peanut butter and vanilla with a wooden spoon. Do not scrape the sides of the pan. Stir until the peanut butter is melted and the fudge begins to thicken and lose some of its gloss. Pour into prepared pan. Cool, slice, and enjoy.
  • Don't skip the peanut butter. It gives it an amazing layer of flavor and also helps it set faster. I have only tried this with Jif so I can't guarantee any other peanut butter will be as good.

1 tablespoon cold unsalted butter, plus more for pan
1 1/2 cups heavy cream
3 cups sugar
3 ounces best-quality unsweetened chocolate, finely chopped
1/4 cup light corn syrup
1/4 teaspoon salt

Steps:

  • Butter an 8-inch square baking pan; line with parchment paper, allowing a 1-inch overhang. Butter parchment paper, and set aside. Check the calibration of the candy thermometer. Put butter into a large bowl, and set over a wire rack; set aside. Put cream, sugar, chocolate, corn syrup, and salt into a medium heavy saucepan.
  • Cook over medium-low heat, stirring constantly, until sugar has dissolved and chocolate has melted, about 10 minutes. Raise heat to medium. Bring mixture to a boil, washing down sides of pan with a wet pastry brush to prevent sugar crystals from forming. Attach warm thermometer to pan; continue to cook, without stirring, until mixture registers 238 degrees (soft-ball stage), 10 to 15 minutes.
  • Immediately pour mixture into bowl with butter (do not scrape out the bottom of the pan). Attach thermometer to bowl. Let mixture cool, undisturbed, until it registers 110 degrees, about 1 1/2 hours.
  • Remove thermometer. Transfer bowl to a work surface. Using a wooden spoon, begin to gently stir mixture.
  • Continue to stir, gradually increasing speed until mixture thickens, lightens in color, and loses its sheen, 4 to 5 minutes.
  • Pour into prepared pan. Using a small offset spatula, quickly spread fudge to sides of pan, and smooth top. Let fudge cool in pan on a wire rack, about 1 hour. Cover with plastic, and refrigerate until completely set, about 8 hours. Run a sharp knife around nonparchment sides to loosen; lift fudge out. Cut into 64 one-inch pieces. Fudge can be refrigerated between layers of parchment in an airtight container up to 1 week; bring to room temperature before serving.
