ITALIAN MEATLOAF

- Preheat the oven to 350 degrees F.
- For the meatloaf: Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, parsley, Italian seasoning, salt, seasoned salt and some pepper in a large mixing bowl. Add the eggs. With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain. Lay the pancetta slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
- For the tomato sauce: Put the diced tomatoes into a bowl. Add the brown sugar, dry mustard and cayenne pepper and splash in the Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
- Bake for 45 minutes, and then pour another third of the remaining tomato sauce over the meatloaf. Bake until no longer pink in the middle, for an additional 20 to 25 minutes. Allow to sit 10 minutes before serving.
- Serve with the remaining tomato sauce on the side as a dipping sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
- Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

- Preheat oven to 400 degrees F (200 degrees C).
- Combine beef, bread crumbs, Parmesan cheese, eggs, Worcestershire sauce, garlic, and Italian seasoning in a large bowl. Season with salt and black pepper. Transfer mixture to a 9x5-inch loaf pan.

PAUL'S ITALIAN-STYLE MEATLOAF
A twist on the old standard meatloaf. This is from someone who used to run an old BBS that had a cooking "echo". I use 1/2 ground beef, and 1/2 ground turkey. Use a commercial canned marinara or make your own.

Steps:
- Pre-heat the oven to 350°F.
- Put a cookie sheet in oven while preheating.
- In a large bowl, mix together the beef, breadcrumbs, milk, egg and spices.
- Heat the oil in a skillet. Add the onion and garlic. Cook until just soft.
- Mix into the meat mixture.
- Put into a loaf pan. Place loaf pan on preheated cookie sheet and bake for 1 hour or until firm in the middle.
- Cool slightly and slice.
- Heat marinara sauce, and top slices of meatloaf with it.

ITALIAN MEATLOAF

- Preheat oven to 350 degrees F.
- Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
- Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
- Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.
ITALIAN STYLE MEATLOAF
When paired with some pasta, this slight modification to the standard "loaf" makes for a nice meal. And yes, when it comes to meatloaf...a change is sometimes very good.

- Begin by pre-heating your oven to 375 degrees.
- In a large bowl, combine the meat, eggwhites, oats, bread crumbs, garlic and onions.
- Once mixed well, place into a loaf pan and cover with 1 cup of marinara.
- Place into the oven and cook for 50-55 minutes.
- When there's about 15 minutes left for the meatloaf cook, place broccoli in a medium saucepan and add about 1/2 cup of water.
- Place over a burner set on medium to high heat and bring water to a boil.
- Once the water begins to boil, reduce heat to low, cover, and let steam for about 10 minutes. (Or until it has reached your desired tenderness).
- At the same time that you are steaming the broccoli, add about 2 cups of water to a medium pot.
- Bring the water to boil and add the pasta. Cook until it has reached your desired tenderness.
- When the meatloaf is cooked, let it stand for 5-10 minutes before cutting.
- Place an equal amount of meatloaf, pasta and broccoli on 4 separate plates.
- Top each portion of pasta with 1/4 cup marinara sauce.

- how to prepare Melt the butter in a saucepan over medium heat. Add the onions, celery, bell pepper, green onion, the Magic Seasoning Blend, garlic, Magic Pepper Sauce, Worcestershire sauce and bay leaves. Cook, stirring occasionally and scraping the bottom of the pan until the mixture starts sticking excessively, about 6 minutes. Stir in the milk and catsup. Continue cooking for about 2 minutes, stirring occasionally. Remove from heat and allow to cool at room temperature. Preheat the oven to 350°F. Place the beef and pork in a large mixing bowl. Add the eggs, cooked vegetable mixture (remove bay leaves) and bread crumbs. Mix by hand, being careful not to overmix. Overmixing will release the protein in the meat and make it mushy. Blend no longer than necessary to distribute ingredients. Place mixture in an ungreased 13" x 9" baking pan. Shape into a loaf that is about 12 x 6 x 1-1/2 inches - - it will not touch the sides of the pan - - and bake uncovered for 25 minutes. Raise heat to 400°F and continue cooking until done, approximately 35 minutes.
ITALIAN STYLE MEATLOAF
We belong to a Wine club. Occasionally they post food recipes. So far they have all been exceptional but I thought meat loaf is meat loaf--not true. When I finally tried it, it was outstanding. The only one I will make from now on. Now I usually double it and freeze half for a quick gourmet meatloaf when I am busy.

- Preheat oven to 375 degrees F.
- Prepare the ingredients; Remove the sausage from the casings and crumble. Grate the mozzarella. Chop the onion and mince the garlic and cook in butter until they're soft and translucent. Make the bread crumbs. Chop the sun-dried tomatoes, and measure out the other ingredients.
- In a large bowl, gently mix the ground beef, sausage, grated cheese, cooked onions and garlic, bread crumbs, chopped tomatoes, basil, oregano and salt and pepper to taste. Blend about 2/3 of the V-8 juice, the egg and red wine separately, and fold this liquid mix into the dry ingredients.
- Divide the meat mixture into two parts. Form them into long oval loaves and place them on a baking sheet lined with lightly greased aluminum foil. ( You will be sorry if you don't use the foil at clean up time) Brush the loaves with the remaining V-8 juice and dust with a little more dried oregano, salt and pepper.
- Bake for 45 minutes to 1 hour or until the temperature at the center reaches 150 to 160°F Allow it to rest for 15 minutes before slicing.
