CHERRY PEACH COBBLER
There's no pitting cherries and peeling peaches when you're throwing together this quick cobbler. It uses convenient canned fruit and purchased pie filling. Sandra Pierce of North Bonneville, Washington shared the recipe.

- In a greased microwave-safe 8-in. square baking dish, combine the pie filling, peaches, lemon juice and cinnamon. Microwave, uncovered, on high for 3-4 minutes or until heated through, stirring once., In a small bowl, combine the biscuit mix, 3 teaspoons sugar, milk, butter and lemon zest. Drop by rounded tablespoonfuls onto filling. Combine cinnamon and remaining sugar; sprinkle over topping. , Bake at 400° for 17-19 minutes or until golden brown. Serve warm with ice cream.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 2-quart baking dish.
- Mix pears, cherries, cornstarch, 2/3 cup sugar, and almond extract in prepared baking dish. Combine flour, 1/3 cup sugar, salt, and nutmeg in a bowl; cut in butter with a knife or pastry blender until mixture resembles coarse crumbs. Sprinkle flour mixture over fruit.
- Bake in preheated oven until crust is golden, about 1 hour.

- Preheat oven to 350 degrees F (175 degrees C).
- Arrange peaches evenly in an 8x8-inch baking dish.

- For the topping: Preheat the oven to 375 degrees with rack in the middle position. In a large bowl, whisk together flour, oats, sugar, cinnamon, and salt. Stir in oil and water until blended. Topping will look like clumpy wet sand. Stir in almonds and set aside.
- For the filling: In a large saucepan of boiling water, working in batches, blanch peaches for 1 minute. Remove them with a slotted spoon and transfer to a bowl of cold water. When cool enough to handle, peel off skin. Halve, pit, and cut peaches into 1/2-inch wedges.
- In a medium bowl, mix together peaches, lemon juice, flour, and sugar. Place filling in an 8-inch square baking pan. Sprinkle topping evenly over peaches. Bake until the topping turns a deep, golden brown and the filling is bubbling around the edges, 30 to 35 minutes. Serve warm or at room temperature with vanilla ice cream, if desired.

- Drain peaches, reserving syrup. Drain cherries and set aside.
- In 2-quart saucepan over medium-high heat, heat cornstarch, lemon juice and reserved peach syrup to boiling. Reduce heat to medium-low and add drained peaches and cherries. Cover and simmer 5 minutes or until heated through, stirring mixture occasionally.
- Spoon peach-cherry mixture into 6-dessert bowl.
- With paper towels, wipe saucepan clean. In same saucepan over medium heat, heat butter, then add uncooked oats and cook until lightly browned (about 4 minutes), stirring occasionally.
- Add honey to oat mixture and toss until oats are well coated.
- To serve, sprinkle warm oat-honey mixture over peach-cherry mixture in dessert bowls.

- Drain peaches, reserving the syrup in a saucepan; set peaches aside. Stir brown sugar, cornstarch, honey, cinnamon and nutmeg into the peach syrup until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add lemon juice, raisins, pecans and reserved peaches. Pour into a greased 2-qt. baking dish. , For topping, combine flour, sugar and butter. Sprinkle over peach mixture. Bake at 350° for 35 minutes. Serve with ice cream if desired.

- If using canned cherrie, drain cherries, reserving 1/2 cup juice.
- In a large mixing bowl combine frozen or canned cherries and reserved juice; add sugar and toss to coat.
- Let stand for 5 minutes.
- In a small bowl combine flour, peel, and cinnamon; sprinkle over cherries.
- Toss to mix.
- Add pears; toss to mix.
- Transfer to an ungreased 2 quart square baking dish.
- Combine granola and butter; sprinkle over filling.
- Bake in a 375 degree oven about 30 minutes or until pears are tender.
- If necessary, to prevent overbrowning, cover with foil the last 5 to 10 minutes.
- If desired, serve warm with Icecream.
