Peach Fritters image

We had a case of lovely O'Henry peaches and a fryer with leftover oil. Put two and two together and created this warm variation on various fruit fritter recipes. Kids loved 'em!

vegetable oil for frying
1 cup unbleached all-purpose flour
1 tablespoon white sugar
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon salt
1 pinch ground nutmeg
¼ cup heavy whipping cream
3 ounces vanilla yogurt
1 egg
1 cup peeled and diced fresh peaches, or more to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk flour, sugar, baking powder, cinnamon, ginger, and salt together in a bowl. Beat cream, vanilla yogurt, and egg together in a separate bowl until smooth. Pour flour mixture into cream mixture and mix until a sticky dough forms; fold in peaches.
  • Drop spoonfuls of the dough, working in batches, into the hot oil and fry until fritters are golden brown on all sides, about 5 minutes. Remove fritters with a slotted spoon to a paper towel-lined plate to drain.

Vegetable oil for deep frying
2 cups Original Bisquick™ mix
1/2 cup cold water
1 egg
1/4 cup sugar
1 teaspoon ground cinnamon
2 large peaches, peeled and sliced
1/4 cup powdered sugar

Steps:

  • In deep fat fryer or heavy saucepan, heat 3 inches oil over medium-high heat to 350°F.
  • In large bowl, mix Bisquick™ mix, cold water, egg, sugar and cinnamon. Fold in peaches.
  • Drop dough by rounded tablespoonfuls into hot oil; fry 2 to 3 minutes on each side until golden brown. Remove from oil with slotted spoon; place on paper towel-lined plate to drain. Sprinkle with powdered sugar, and serve.

2 medium ripe bananas, mashed
¾ cup packed brown sugar
⅓ cup unsweetened applesauce
1 large egg, lightly beaten
1 teaspoon almond extract
1 cup whole wheat flour
2 teaspoons baking powder
1 ¼ teaspoons salt
1 teaspoon ground cinnamon
½ teaspoon baking soda
1 cup quick-cooking oats
1 cup diced fresh peaches

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease twelve 2 1/2-inch muffin cups.
  • Stir together bananas, brown sugar, applesauce, egg, and almond extract in a large bowl. Sift together flour, baking powder, salt, cinnamon, and baking soda in another bowl.
  • Add flour mixture and oats to banana mixture; gently stir just until combined. Do not overmix. Fold in peaches. Spoon batter evenly into prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, 15 to 20 minutes. Remove muffins from pan, transfer to a wire rack, and let cool completely.

This came up on one of those feeds from facebook and I made a few changes from other recipes I like and they turned out so good, light and fresh and enjoyed by all that tried them. Hope you like them too. I made these with fresh peaches but thinking frozen ones, thawed and drained would work good too

6 -8 peaches, cut into pieces
1 cup flour
1 teaspoon brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking powder
2/3 cup milk
2 eggs, well beaten
1 teaspoon butter, melted
1 tablespoon powdered sugar

Steps:

  • Mix flour, brown sugar, cinnamon, salt and baking powder together in bowl.
  • In separate bowl mix milk, eggs and butter.
  • Slowly add dry and wet together and add peach pieces to the mix.
  • Fry in deep hot oil (375) for 3-5 minutes or until golden brown.
  • Remove from oil and drain o paper towels.
  • Sprinkle fritters with powdered sugar or make a vanilla glaze and drizzle over tops.

  • In a small bowl, combine all the dry ingredients first; flour, sugar, salt, baking powder, cinnamon and nutmeg. Give it a little whisk. Add peaches, milk, vanilla, and the egg to dry mixture. Then stir well until combined.
  • Heat oil to 350 degrees F. Working in batches, gently drop a large spoonful (about half a ladle) into the sizzling oil. (I did 3 at a time to make sure they weren't crowded in a deep skillet). Frying until they’re golden brown on both sides, 2-3 minutes per side.
  • While those are cooling a couple minutes, in a small bowl, whisk the powdered sugar, honey, cinnamon, and milk or cream to combine. Add more milk or cream as needed to make the glaze "drizzly". Drizzle each fritter with the glaze, and serve immediately.
