OLD-FASHIONED PEACH COBBLER WITH SUGARED CRUST
This classic southern old-fashioned Peach Cobbler recipe uses brown, white, and turbinado sugar to create the best crispy sugared crust BURSTING with flavor!

- Preheat oven to 350 degrees F.
- In a medium saucepan, combine the sliced peaches (4 cups) with the brown sugar (1/2 cup) and a small pinch of salt and and cook on medium for just a few minutes, until the sugar is dissolved and the peaches are very juicy.
- Add the melted butter (8 tablespoons) to the bottom of a 9x13 baking dish. (Tip: You can melt it separately and pour it in, or just stick the whole pan in the microwave or in the oven to melt the butter directly in it.)
- In a large bowl, mix together the flour (1 cup), the baking powder (1 teaspoon), and the sugar (3/4 cup). Stir in the milk (3/4 cup) until just combined. Pour on top of the melted butter in the baking dish, and smooth it out as best you can with a wooden spoon or spatula (it's OK if it's not perfect!).
- Pour the peach mixture evenly on top of the flour mixture.
- Sprinkle evenly with the ground cinnamon (1 teaspoon) and the turbinado sugar (1/4 cup).
- Bake for 30-40 minutes, or until browned on top. If you like, you can broil it for the last 2-3 minutes to form an extra-crispy and browned caramelized sugared layer on top. Serve warm with vanilla ice cream or whipped cream, if desired.

- Heat oven to 375°F. Spray 13x9-inch pan with cooking spray. Scatter peach slices evenly in pan. Sprinkle granulated sugar, cornstarch, 1/2 teaspoon cinnamon and the lemon juice evenly over top; stir to combine. Top evenly with 3 tablespoons cubed butter.
- In 1-quart saucepan, heat 1/2 cup butter over medium heat 8 to 10 minutes, stirring frequently, until light golden brown. Pour into large bowl. Stir cookie mix, 1/2 teaspoon cinnamon and the egg into browned butter with wooden spoon until soft dough forms. Spoon dough in tablespoons evenly over top of peach mixture; sprinkle with sparkling sugar.
- Bake 30 to 35 minutes or until cookies are golden brown and edges of fruit filling are bubbly. Cool 10 minutes before serving.

- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Arrange the peaches in the prepared pan. Scatter the butter over the peaches, then sprinkle the brown sugar evenly on top. Set aside. Mix flour, white sugar, baking powder, and salt in a bowl. Stir the oil into the beaten eggs, then stir the egg mixture into the dry ingredients. Spoon the batter over the peaches, then sprinkle cinnamon on top.

PEACH COBBLER WITH SUGAR COOKIE CRUST
While we were vacationing with friends in Duck, N.C. we bought a bushel of peaches. I was requested to make a cobbler with them, and I researched the internet for the perfect recipe to WOW everyone.I thought the boiling water in the dough was unique and decided to try this recipe that I adapted from All.Recipes.com turned out to be the hit of the vacation. I double the recipe and put in 9 x 13 pan.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
- Toss to coat evenly, and pour into a 2 quart baking dish.
- Bake in preheated oven for 10 minutes(I cooked filling on top of stove until thickened).
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
- Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal.
- Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them.
- Sprinkle entire cobbler with the sugar and cinnamon mixture.
- I sprinkled only a little bit, since it was turning the top too brown for my taste.
- Bake until topping is golden, about 30 minutes.

- Heat oven to 400°F. In 4-quart saucepan, mix 1/3 cup sugar, the cornstarch and cinnamon. Stir in peaches, water and lemon juice. Heat to boiling, stirring constantly; boil and stir 1 minute. Pour into ungreased 8- or 9-inch square (2-quart) glass baking dish.
