Delicious drop cookies using Honey Bunches of Oats and peanut butter!

Steps:
- Beat the butter, peanut butter and sugar in large bowl with electric mixer until light and fluffy. Blend in egg.
- Add flour and baking powder; mix well.
- Stir in cereal.
- Drop tablespoonfuls of dough, 2 inches apart, onto baking sheets.
- Bake 8 to 10 min. or until lightly browned.
- Cool on baking sheets 5 min.
- Remove to wire racks; cool completely.

- Preheat oven to 350 degrees F. Grease a cookie sheet. Using a mixer with the paddle attachment, mix together the butter, brown sugar, honey, egg and water thoroughly. Sift together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix. Add any additional ingredients you've chosen. Drop by heaping teaspoonfuls onto the cookie sheet. Bake 12 to 15 minutes. Cool on a wire rack.

Steps:
- Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
- Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
- Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
- When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
- Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
- Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
- Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.
- Place the baking sheet on a wire rack. Let cool on the baking sheet for 2 minutes before transferring cookies to the wire rack to cool completely.

- Butter 2 mini muffin tins, or use 1 tin and bake in 2 batches. In a small saucepan, melt the butter over low heat. Meanwhile, in a large bowl, combine the oats, coconut, walnuts, and flour and mix. Stir the honey into the melted butter and bring to a boil, stirring often. Add chocolate chips and pour the butter mixture over the dry ingredients and mix well. Press 1 heaping tablespoon of the mixture into each mini muffin cup. Bake until just beginning to brown, 15 to 20 minutes. Remove from the oven and immediately press a walnut half on top of each honey bunch. Let cool 10 minutes in the pan, then transfer to a wire rack and cool completely. Store in an airtight container.

- Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and extracts. Steps:
- Cream together shortening (butter or margarine), sugar, brown sugar, eggs and vanilla. Sift flour, salt and baking soda together. Add dry ingredients to creamed ingredients a little at a time while stirring. Add oats and stir. Add Honey Bunches of Oats and stir. Add pecan pieces and stir.
- Drop by teaspoonful on ungreased baking sheet. (I prefer a baking stone.)
- Bake at 375 degrees for 10 to 12 minutes.
