CARAMEL PECAN STICKY BUNS
Who doesn't like sweet, spicy, and nutty sticky buns? These are loaded with pecans, cinnamon, and sweet gooey goodness.

- Prepare bread dough according to recipe directions. Place in large greased bowl. Cover and let rise in warm place until doubled in size, about 30 to 45 minutes (see Note).
- For Caramel Pecan Topping: Melt 1 cup butter in medium saucepan over medium heat. Add 1 cup brown sugar and corn syrup; stir until smooth. Remove from heat. Stir in vanilla. Spread evenly in 13 x 9-inch baking pan. Sprinkle evenly with pecans.
- For Cinnamon Filling: Mix 3/4 cup brown sugar, 6 tablespoons butter, flour and cinnamon in small bowl with fork until blended. Roll dough to 16 x 10-inch rectangle on lightly floured surface. Crumble filling mixture evenly over dough. Beginning at long side, roll up tightly, pressing seam to seal. Cut evenly into 15 slices. Place cut side down in prepared pan. Cover loosely with plastic wrap. Let rise in warm place (80 degrees to 90 degrees F) 30 to 45 minutes or until doubled in size.
- Heat oven to 350 degrees F. Bake buns 30 to 35 minutes or until golden brown. Cool 10 minutes to allow caramel to thicken. Invert onto serving plate. Serve warm or at room temperature.

Steps:
- Dissolve yeast in warm water in a large mixing bowl. Add buttermilk, eggs, 2 1/2 cups flour, 1/2 cup of the butter or margarine, 1/2 cup of the sugar, baking powder and salt. Blend 30 seconds with mixer on low speed, scraping sides and bottom of bowl. Beat 2 minutes on medium speed. Stir in remaining 3 cups flour. (Dough should remain soft and slightly sticky) Knead for 5 minutes, or about 200 turns on a lightly floured board. Cover dough and allow to rest for half an hour.
- Divide dough in half and roll each half into a 12x7 inch rectangle. Spread each half with 1 tablespoon soft butter and sprinkle with 1/4 cup of the sugar and 1 teaspoon of the ground cinnamon. Roll up the halves, beginning at the wide side. Seal well by pinching the seams. Cut each roll into 12 slices.
- Coat two 9 inch round cake pans with 1/4 cup melted butter, 1/4 cup brown sugar, and 1/2 cup chopped pecans in each pan. Place 12 dough slices in each pan, leaving a small space between slices. Let rise until doubled.
- Bake in a preheated 375 degrees F (190 degrees C) oven for 30 minutes. Invert pans onto serving plates immediately.

PEACH STICKY BUNS
Breakfast, snack, dessert-when is a sticky bun NOT good? The rich dough for these buns gets extra softness from cream cheese, and it's so easy to make: Almost no kneading is required. Juicy peaches are the perfect addition to these gooey, caramel-coated pastries. Since they rise in a cast-iron skillet, these can also be "baked" on your grill once you're done grilling the burgers. Just keep the grill temperature at an even 375(ish) degrees F and bake as directed!

- For the dough: Spray a medium bowl with cooking spray and set aside.
- In a small bowl, whisk together the lukewarm water, granulated sugar and yeast until dissolved. Add the egg yolks, butter and cream cheese, then whisk to combine. Add the salt and 2 cups of the flour and stir to combine. Add 1 more cup of the flour and stir until the dough comes together in a rough ball, adding the remaining flour 1 tablespoon at a time as needed.
- Turn the dough out onto a clean work surface and knead briefly; the dough does not have to be totally smooth. Place the dough in the prepared bowl. Cover with plastic wrap and set in a warm place until the dough doubles in size, about 1 hour.
- For the smear and filling: In a second medium bowl, whisk together the butter, brown sugar, maple syrup, vinegar and salt until smooth. Set aside.
- In a third medium bowl, toss the peaches with the flour and set aside.
- Lightly spray a 9-inch cast-iron skillet with cooking spray. Spread 3/4 cup of the smear on the bottom of the skillet and then scatter 1 1/2 cups of the peaches on top.
- When the dough is doubled, gently deflate and turn out onto a lightly floured work surface. Press the dough into a 15-by-8-inch rectangle. Using an offset spatula, spread the remaining 1/2 cup of the smear on top, then scatter the remaining 1/2 cup of peaches on top.
- Working from the shorter end, roll the dough into a tight log. Cut the dough into nine 1 1/2-inch-long pieces and arrange in the prepared skillet. Cover with plastic wrap sprayed with cooking spray and let rise until puffy, about 20 minutes.
- Position a rack in the lower third of the oven and line it with aluminum foil to prevent the sticky caramel from spilling over from the pan and burning on the bottom of the oven. Preheat the oven to 375 degrees F.
- When the dough is puffy, remove the plastic. Bake the buns until they are lightly golden on top and an instant-read thermometer inserted into the center of a bun registers 180 degrees F, 25 to 35 minutes.
- Remove the skillet from the oven and let the buns cool 15 minutes. Place a serving platter upside-down on top of the skillet. Protecting your hands with oven mitts, grasp the skillet and platter and flip both in one motion so the platter is on the bottom. Gently lift the skillet straight up, letting the buns release in one piece. Serve warm for breakfast or as a snack, or with vanilla ice cream as a dessert.

- Prepare half the recipe for Granny Foster's Refrigerator Rolls dough through step 5.
- Butter a 9-inch round glass baking dish with 2 tablespoons butter; set aside.
- In a small bowl, combine raisins and bourbon, and let soak until plumped, about 20 minutes.
- In a second small bowl, combine cinnamon, 1/2 cup brown sugar, and remaining 6 tablespoons butter; set aside.
- In a third small bowl, combine remaining 3/4 cup brown sugar, honey, and pecans. Spread mixture evenly in prepared baking dish; set aside.
- Roll dough into a 12-by-6-inch rectangle about 1/4 inch thick. Spread the cinnamon mixture evenly over dough, leaving a 1-inch border. Drain raisins, and sprinkle over cinnamon mixture. Beginning at the long side of the dough, roll it into a log. Place the log, seam-side down, on a clean work surface. Using a sharp knife, cut the log crosswise into 1-inch-thick slices. Transfer slices, cut-sides down, to prepared baking dish (the slices should fit snugly). Set aside in a warm place, and allow to rise until slightly puffy, 20 to 30 minutes.
- Preheat oven to 350 degrees. Place baking dish on a baking sheet with sides and bake until a cake tester inserted in the center comes out clean and buns are golden brown, 45 to 50 minutes.
- Let cool for 5 minutes. While still warm, place a plate over baking dish. Invert baking dish to unmold. Serve warm or at room temperature.

- Combine 2 1/4 cups of the flour, the white sugar, salt and yeast in a large bowl or the bowl of your stand mixer. In a small saucepan (or the microwave), heat the water, milk and 2 Tbsp. of the butter until too hot to touch. Stir into dry ingredients, then add egg. Mix in enough additional flour to make it soft dough. Knead on a floured surface until smooth and elastic. Cover and let stand for 10 minutes.
- Meanwhile, in a medium bowl, combine the brown sugar, cinnamon and remaining butter. (I just cut the butter into the sugar with a pastry blender. You could also mix it together in a food processor). Place 1/3 cup of brown sugar mixture into the bottom of a loaf pan. Add 2 Tbsp. water and stir together to make a sauce (may be a bit lumpy, but not to worry. The lumps are butter and that will melt). Place the maraschino cherries on top of the sauce, if using.
- Roll the dough into a 9 x 14-inch rectangle on a lightly floured surface. Spread the remaining brown sugar/cinnamon mixture evenly on the dough, then sprinkle the sliced peaches on top. From the long side, roll up jelly roll style, trying not to pull or stretch the dough too much as you roll. Pinch the seam together and place on a cutting board, seam side down. Cut into 6 - 8 even slices (*I like to cut 1/2-inch off each end and then measure the remaining, divide by 6 or 8 and then pre-mark the dough lightly with the edge of the knife). Place the slices cut side up in the pan. Cover with plastic wrap and let rise in a warm place for about 40 - 60 minutes or until the dough has doubled.
