You've never had a pudding dessert this good! It is elegant and delicious. Everyone will want the recipe. This is NOT your ordinary pudding dessert! It is well worth your efforts.

1 cup all-purpose flour
½ cup finely chopped pecans
½ cup butter or margarine, melted
1 (8 ounce) package cream cheese, room temperature
1 cup confectioners' sugar
1 cup frozen whipped topping, thawed
2 (3.5 ounce) packages instant coconut cream pudding mix
2 cups milk
3 cups frozen whipped topping, thawed
½ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees F). In a medium bowl, stir together the flour, 1/2 cup pecans and melted butter or margarine. Press into the bottom of a 9x13 inch baking dish. Bake for 15 minutes in the preheated oven, then chill until cold.
  • In a medium bowl, mix together the cream cheese and confectioners' sugar until smooth. Stir in the whipped topping. Drop spoonfuls onto the chilled crust, and spread evenly. Return to the refrigerator while you prepare the next layer.
  • In a medium bowl, mix together the pudding mixes and milk. Yes this is half as much milk as the package states. Spread over the cream cheese layer. Chill until set.
  • Spread remaining whipped topping over the top, and garnish with chopped pecans.

2 packets graham cracker, or marie biscuits
2 cans sweetened condensed milk
1 lb coconut, fine desiccated

Steps:

  • First, crush the biscuits or crackers into a fine meal in a bowl.
  • To this, add sweetened condensed milk and mix well until the batter becomes a sticky consistency.
  • Take two tablespoons of batter and roll into a ball.
  • In a separate bowl, empty the packet of fine desiccated coconut and coat the ball in the coconut flakes.
  • Repeat with the rest of the mixture until done.
  • Once the balls are well-coated with the coconut, place in a container and refrigerate for 2-3 hours.
  • Retrieve and serve.
  • Enjoy!

1/2 cup butter, melted
1 cup all-purpose flour
1-1/4 cups sweetened shredded coconut
1/4 cup packed brown sugar
1 cup slivered almonds
2-2/3 cups cold milk
1/2 teaspoon coconut extract
2 packages (3.4 ounces each) instant vanilla pudding mix
2 cups whipped topping
Fresh strawberries, optional

Steps:

  • In a large bowl, combine the first five ingredients; press lightly into a greased 13-in. x 9-in. baking dish. Bake at 350° for 25-30 minutes or until golden brown, stirring every 10 minutes to form coarse crumbs. Cool. , Divide crumb mixture in half; press half into the same baking pan. In a large bowl, whisk the milk, extract and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. , Fold in whipped topping; spoon over the crust. Top with remaining crumb mixture. Cover and refrigerate overnight. Garnish with fresh strawberries if desired.

1 package (8 ounces) cream cheese, softened
1 package (15-1/2 ounces) Oreo cookies, crushed
1 package (14 ounces) sweetened shredded coconut
2 cups sliced almonds
2 teaspoons vanilla extract
3-1/2 cups semisweet chocolate chips
2 tablespoons plus 1-1/2 teaspoons shortening

Steps:

  • In a large bowl, beat cream cheese until smooth. Beat in cookie crumbs. Add the coconut, almonds and vanilla; mix well. Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave-safe bowl, combine chocolate chips and shortening. Microwave on high until melted, stirring every 15 seconds; stir until smooth. Dip balls into melted chocolate; shake off excess. Place on waxed paper until set. Store in an airtight container in the refrigerator.

1 (29 ounce) can sliced peaches in juice
1 (18 ounce) box butter pecan cake mix
1 cup flaked coconut
1 cup chopped pecans
3/4 cup butter, melted

Steps:

  • Preheat oven to 325 degrees F.
  • Spread peaches and juice in the bottom of a 13X9 inch baking dish that has been sprayed with oil.
  • Sprinkle dry cake mix over peaches, evenly.
  • Do not pack into the peaches.
  • Pour melted butter over the cake mix.
  • Mix the coconut and pecans together and spread evenly on top of butter cake mix.
  • Bake 55-60 minutes.

1 (9 ounce) package Jiffy white cake mix
1/4 cup coconut, toasted
1/4 cup butter, softened
1 (16 ounce) can sliced peaches, drained
2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 cup sour cream
1 egg, lightly beaten

Steps:

  • Preheat oven to 350ºF.
  • Combine cake mix and coconut; cut in butter with pastry blender or 2 table knives until mixture is crumbly.
  • Press lightly onto the bottom and 1/2-inch up sides of an 8-inch square baking dish.
  • Bake for 15 minutes. Remove from oven.
  • Arrange peach slices over crust.
  • Combine sugar and cinnamon; sprinkle over peaches.
  • Blend sour cream and egg; pour over peaches.
  • Bake 15 minutes or just until set.
