- Preheat oven to 375°. Line bottom of a greased 15x10x1-in. baking pan with parchment; grease paper., Beat eggs on high speed 3 minutes. Beat in vanilla and salt. Gradually add sugar, beating until mixture becomes thick and lemon-colored. Fold in biscuit mix. Spread in prepared pan. , Bake until cake springs back when lightly touched, 8-10 minutes. Cool 5 minutes. Invert onto a clean kitchen towel dusted with confectioners' sugar. Gently peel off parchment. Roll up cake in towel jelly-roll style, starting with a short side. Cool completely on a wire rack., Meanwhile, beat cream until it begins to thicken. Add 3 tablespoons confectioners' sugar; beat until stiff peaks form., To assemble, unroll cake; spread half of whipped cream over cake to within 1/2 in. of edges. Top with peaches and remaining whipped cream. Roll up again, without towel. Place seam side down on a serving platter. Dust with remaining confectioners' sugar. Refrigerate 2 hours.

EASY CAST-IRON PEACH BISCUIT ROLLS
I used to love going to the local coffee shop and enjoying fresh peach cinnamon rolls, but being a busy mom of three, I don't have the time anymore. To re-create it at home, I developed this no-yeast recipe that's quick and easy! -Heather Karow, Burnett, Wisconsin

- Preheat oven to 350°. In a small bowl, mix brown sugar, butter and cinnamon until crumbly. Reserve half for topping. Sprinkle remaining crumb mixture onto bottom of a 10-in. cast-iron or other ovenproof skillet., For dough, in a large bowl, mix flour, sugar, baking powder and salt. Cut in butter until crumbly. Add milk; stir to form a soft dough (dough will be sticky). Roll into an 18x12-in. rectangle. Sprinkle reserved topping to within 1/2 in. of edges., Drain peaches, reserving 2 tablespoons juice for glaze. Chop peaches; place over topping. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place in prepared skillet, cut side down., Bake until lightly browned, 25-30 minutes. Cool on a wire rack 10 minutes. For glaze, combine confectioners' sugar and 1-2 tablespoons reserved peach juice to reach desired consistency. Drizzle over warm rolls.

PEACHY CINNAMON ROLLS
This is a twist from the original cinnamon roll. My family loves to wake up to these on Sunday mornings.

Steps:
- Mix the first three ingrediants with a wire whip before adding eggs, oil and salt. Mix. Gradually add flour with a large spoon and combine well.
- Turn dough onto a floured surface and knead until smooth, at least 3 to 5 minutes. Let dough rise in a covered bowl for about 30 minutes until smooth. Punch down and let rise a second time in a covered bowl until double in size, about 15 minutes.
- Heat oven to 350 degrees. On a floured surface divide dough in two, roll one portion of dough about 1/4 inch thick into a rectangle and spread with melted butter. Sprinkle heavily with cinnamon mixture and scatter with peach pieces.
- Roll the dough tightly, starting on the long side of the rectangle. Rolla section at a time to avoid tearing dough. Using dental floss, cut 1 1/2 inch thick slices of the roll. Place the sliced rolls, spiral sideup, on a baking sheet lightly covered with cooking spray.
- Repeat with second portion of dough.
- Bake 15 minutes until golden.
- Let rolls cool about five minutes before icing. Serve warm for the best taste.

PEACH BUTTER
Peach butter is a wonderful delight in the winter to remind you of how summer tastes. Great on hot buttered biscuits!

Steps:
- Set out a large bowl of ice water.
- Bring a large pot of water to a boil.
- Carefully put 2 peaches at a time in the boiling water; leave them until scalded, 30 seconds to 1 minute. Quickly transfer to the ice water, leaving them to cool for 30 seconds to 1 minute. Remove to a paper towel-lined plate. Repeat to scald and cool remaining peaches.
- Peel peach skin; discard skin and pits. Chop peach flesh and place in a large pot over medium-low heat. Cook, stirring frequently, until soft, about 30 minutes, adding water if necessary to prevent from sticking.
- Meanwhile, inspect 4 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until peach butter is ready. Wash new, unused lids and rings in warm soapy water.
- Place cooked peaches in a blender; puree until smooth. Measure out 8 cups peach pulp and transfer back to the pot. Reserve any extra pulp for another use.
- Add sugar, cinnamon, and nutmeg to the peach pulp. Bring to a simmer over medium-low heat; simmer, stirring frequently, until mixture has reduced and thickened, 5 to 10 minutes.
- Pack peach butter into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
- Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

PEACHES AND CREAM GRILLED CINNAMON ROLLS RECIPE BY TASTY
In true Dollar Dish fashion, we use the help of store-bought ingredients to make a delicious and unique dessert. This time we're pairing canned cinnamon rolls and with fresh, juicy summer peaches and taking them to the grill. They're crunchy on the outside and ooey gooey on the inside with just the perfect amount of sweetness.

- Preheat the grill to medium heat (350°F/180°C). Grease a 6-7-inch (16-17 cm) cast iron skillet with canola oil or butter.
- Open the can of cinnamon rolls and set the icing aside. Arrange the rolls in 2 rows of 4 on a lightly floured surface. Gently press together to seal into one large piece. Flour the top of the cinnamon rolls and use a rolling pin to roll out to a 12 x 8-inch (30x20 cm)rectangle.
- In a medium bowl, toss the diced peaches with the sugar.
- Spread the peaches evenly over the cinnamon roll dough. Starting from a long end, roll up the dough, sealing the peaches inside.
- Cut the dough log into 8 equal pieces and arrange in the prepared pan with the fruit facing up. Cover with aluminum foil.
- Place the pan on the grill over indirect heat and cook for 30-35 minutes, until the cinnamon rolls are cooked through.
- Remove the pan from the grill and drizzle the warm cinnamon rolls with the reserved icing.
- Let cool for about 5 minutes before serving.

- In a small saucepan, combine the first five ingredients. Bring to a boil; cook and stir for 2 minutes. Pour into a greased 13x9x2-inch baking dish; top with cinnamon rolls.
