MARTINI ON THE ROCKS



Martini on the Rocks image

A martini straight up will wilt on a hot day, but on the rocks it's just right.

Number Of Ingredients 3

3 ounces London Dry-style gin
3/4 ounce dry vermouth
1 small strip of lemon peel

Steps:

  • Fill a mixing glass with ice. Pour in gin and vermouth. Stir for 30 seconds, then strain into an old-fashioned glass over fresh ice. Twist the lemon peel over the drink, then drop it in.

Frank Caiafa's modified Martinez has been a staple for years on the cocktail menu of the Peacock Alley bar in the Waldorf Astoria. The pre-Prohibition drink's flavor is rendered more complex by his using both sweet and dry vermouth (making this a "perfect" Martinez), as well as the addition of orange bitters. At the Waldorf, Mr. Caiafa barrel-ages his own gin. But for the home bartender, the Ransom or Greenhook commercial brands will do nicely. Like many of the drinks on the Peacock Alley list, it's an elegantly modernized version of a classic.

2 ounces Old Tom gin, preferably Ransom or Greenhook Ginsmiths
1 ounce sweet vermouth, preferably Martini & Rossi
3/4 ounce Noilly Prat extra-dry vermouth
1/4 ounce maraschino liqueur, preferably Luxardo
1 dash Angostura bitters
1 dash orange bitters, preferably Regans'
Lemon twist, for garnish

Steps:

  • Combine all ingredients in a mixing glass three-quarters filled with ice. Stir until chilled, about 30 seconds. Strain into a chilled cocktail glass. Garnish with lemon twist.

CAESAR COCKTAIL

Sometimes it seems there are as many Caesar recipes as there are Canadians of drinking age. The building blocks are usually the same: vodka, hot sauce, Worcestershire sauce, lime juice, spices (for the rim of the glass) and clam-tomato juice, be it the standard Mott's Clamato or one of the newer brands. But every bar and citizen has a special twist, usually in the departments of spices and garnish. This recipe is an adaptation of the one used by the bartender London Richard at his restaurant Sorso, near Calgary, Alberta. For vodka, he prefers Calgary's own Burwood Vodka. For the spiced rim, the nationally popular mix known as Montreal steak spice plays a part. The garnish is a pickled pineapple and a bacon-wrapped, cream-cheese stuffed pickle. This version is a bit less complicated. But since a Caesar is a form of individual expression, follow your creative urge wherever it takes you. As long as you've got the Clamato and a decently complex spiced rim, you'll end up with a wonderfully savory eye-opener that may render the Bloody Mary a dim memory.

1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/2 teaspoon steak seasoning
1/4 ounce lime juice (from about 1/2 a lime), and more for coating the rim of the glass
2 ounces vodka
2 dashes Worcestershire sauce
2 dashes hot sauce
4 ounces Mott's Clamato or other tomato-clam juice
A pickled vegetable (green beans are popular), for garnish

Steps:

  • Blend the celery salt, garlic salt and steak seasoning. Dip the rim of a pint glass or Mason jar in lime juice, then dip it in the spice mix to create a spiced rim.
  • Add the vodka to the glass. Fill with ice. Add the Worcestershire and hot sauces, and the lime juice. Fill glass with Clamato. Stir briefly, about 5 seconds. Garnish with a pickled vegetable of your choice.

HUMMER

This popular Michigan drink, which is thick and creamy and tastes like coffee ice cream, is credited to bartender Jerome Adams, who invented it one night in 1968 at the Bayview Yacht Club in Detroit. The drink caught on with the local sailing set and over time spread inland. Mr. Adams, who died in 2018, went on to bartend at the club for more than 50 years, making countless hummers along the way. Brian Bartels, the author of "The United States of Cocktails," has modified the recipe ever so slightly, topping his hummer with a cherry.

1 1/2 ounces white rum, preferably Bacardi
1 1/2 ounces Kahlúa or another coffee liqueur
2 scoops vanilla ice cream
1/2 cup crushed ice
Maraschino cherries, for garnish (optional)

Steps:

  • Combine all ingredients in a blender and blend until the ice is broken down. Serve in a chilled rocks glass, and garnish with a cherry if you like.

RUM AND PINEAPPLE JUICE

This easygoing highball tastes like the tropics. Nutmeg freshly grated over the top adds a hint of spice.

2 to 3 ounces dark rum
4 ounces chilled pineapple juice
Splash of soda water
Nutmeg
Pineapple chunk, for garnish

Steps:

  • Fill a highball glass with ice and add rum, pineapple juice and soda. Grate a little nutmeg on top and garnish with a chunk of pineapple.
