CHOCOLATE CHIP COOKIES WITH AVOCADO



Chocolate Chip Cookies with Avocado image

I read that when baking you can replace half or all of the butter with mashed avocado to make it a little healthier. I got out my favorite cookie recipe from my dad and tried it. I replaced half the butter. They were still very yummy and I couldn't tell there was avocado in them.

cooking spray
2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup white sugar
¾ cup brown sugar
½ cup unsalted butter, softened
½ cup mashed avocado
1 teaspoon vanilla extract
1 egg
10 ounces chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray baking sheets with cooking spray.
  • Combine flour, baking soda, and salt in a bowl. Beat white sugar, brown sugar, butter, avocado, and vanilla extract together in a bowl using an electric mixer until creamy; beat in egg until smooth. Stir flour mixture, a few tablespoons at a time, into creamed mixture until dough is just mixed; stir in chocolate chips. Drop dough by the spoonful onto the baking sheets.
  • Bake in the preheated oven until edges of cookies are lightly browned, 8 to 10 minutes. Cool cookies on baking sheet for 2 minutes before transferring to a wire rack to cool completely.

1 ½ cups white sugar
1 cup butter, softened
¾ cup mashed avocado
2 eggs
3 ¼ cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon sea salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat sugar, butter, and avocado together in a bowl using an electric mixer until smooth. Add eggs and beat until incorporated.
  • Whisk flour, baking soda, baking powder, and salt together in a separate bowl; stir into avocado mixture until dough is well mixed. Roll dough into walnut-sized balls. Arrange balls, 2-inches apart, on a non-stick baking sheet. Flatten dough slightly.
  • Bake in the preheated oven until bottoms of cookies are lightly browned, 8 to 10 minutes. Cool cookies on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

2 avocados
2 eggs, lightly whisked
2 tablespoons coconut oil, melted
1/2 cup maple syrup
1 teaspoon vanilla extract
1/4 cup vanilla Tone It Up Protein
1/2 cup oat flour or almond flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon sea salt
2 tablespoons peanut butter
Coconut oil spray

Steps:

  • Preheat oven to 350°F.
  • In a bowl, combine wet ingredients (minus the peanut butter).
  • In a separate bowl, combine dry ingredients.
  • Mix wet ingredients into dry ingredients.
  • Pour mixture into a baking pan sprayed with coconut oil spray.
  • Top with peanut butter, with a few dollops around the entire pan. Use your knife to drag the peanut butter through the mixture to create swirls.
  • Bake for 30-35 minutes, or until a toothpick comes out clean.

I am always looking for good snacks that go along with my Nutritarian eating style. Avocado can be used instead of butter to make baked goods more nutritious. Leangreenbean.com had peanut butter chocolate chip cookies using avocado but I wanted to try a version without chocolate. These have turned out to be our favorite cookies. We usually have some in the freezer. They are good even without thawing. I frequently double the recipe so I can use the whole Hass avocado.

3/4 cup rolled oats (not instant)
1/2 teaspoon baking powder
1/3 cup raisins
1/3 cup walnuts, chopped
1/3 cup avocados, diced or 1/2 ripe Hass avocado
2/3 cup natural-style peanut butter
1 egg
3 tablespoons agave nectar or 3 tablespoons honey

Steps:

  • Combine oats, baking powder, raisins and walnuts and set aside.
  • Scoop avocado into medium bowl. Use electric mixer to cream avocado.
  • Add peanut butter, egg and sweetener and combine until well mixed. Scrape beaters.
  • Add oat mixture and mix by hand until combined.
  • Drop cookies using rounded teaspoon onto non-stick baking sheet and flatten slightly.
  • Bake at 350° for 10-12 minutes. They are done when the edges of the cookies just begin to brown.
