This Peanut Butter & Oatmeal Mug Cake is a simple and fast, sweet and salty fix for dessert or breakfast, it's ready in just 5 minutes!

Steps:
- Whisk milk, vegetable oil, and sugar together in a 12 oz. or large mug.
- Whisk in the flour until smooth.
- Whisk in the oatmeal, baking powder, and salt until full incorporated.
- Spoon 2 tablespoons of peanut butter on top and push slightly into the batter.
- Microwave on HIGH for 30 seconds, and then in 15-second bursts until the top looks dry and cooked and springs back when pressed with a finger. Mine took about 90 seconds to cook.
- Top with the remaining tablespoon of peanut butter and let stand at least 5 minutes before eating.

Steps:
- Line bottom and sides of a 13 x 9 inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil.
- Stir together cake mix and oats in large bowl.
- Stir in butter with a fork until mixture is crumbly and dry ingredients are moistened.
- Press half of oat mixture evenly onto bottom of pan.
- Stir together peanut butter and preserves in a medium bowl.
- Gently spread peanut butter mixture evenly over oat mixture in pan.
- Sprinkle peanuts and remaining half of oat mixture evenly over peanut butter mixture.
- Bake at 375F for 30 minutes or until top is golden brown.
- Let cool in pan on a wire rack 1 hour or until completely cool.
- Lift baked bars from pan, using foil sides as handles.
- Place on cutting board and cut into 24 bars.
PEANUT BUTTER OATMEAL

- In a small saucepan, bring water and salt to a boil. Stir in oats; cook 5 minutes over medium heat, stirring occasionally. Transfer oatmeal to 2 bowls; in each bowl, stir half each peanut butter, honey, flaxseed, cinnamon and, if desired, apple. Serve immediately.

Pour into greased 9 x 13 pan. Bake 30 minutes. While baking, make icing by boiling 1/2 cup water and 1 cup sugar for 1 minute. Let cool. Add peanut butter. - Use 5 (6 ounce size) milk chocolate covered peanut butter cups. Combine water and rolled oats; cool to room temp; set aside. Cream together butter, brown sugar, sugar and vanilla; beat in eggs. Blend in oatmeal mixture. Combine flour, baking soda, baking powder, cinnamon and salt; add to creamed mixture. Beat 1 minute on medium speed. Pour batter into a greased and floured 13x9x2-inch pan. Chop peanut butter cups and sprinkle on top of batter. Do NOT stir. Bake at 350℉ (180℃) for 40 to 45 minutes or until cake tests done. Let cake cool completely before frosting. For Frosting. Melt butter in small saucepan. Add chocolate and stir constantly over very low heat until melted. Pour into small bowl. Add remaining ingredients and beat until well blended. Chill to spreading consistency, about 15 minutes. Frost cake.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
- In a small bowl, pour boiling water over oats. Mix well, and cool.

PEANUT BUTTER OATMEAL CAKE
I threw this together trying to come up with something tasty and healthy that me, my boyfriend, and our dogs could enjoy for my boxer-rot's 3rd birthday... Please don't let that throw you off, this is so good and couldn't be easier. I'm thinking about topping the "people" portions with some homemade cream cheese icing. Since wheat and corn are bad for pups, this uses oatmeal for the flour, and dogs love peanut butter of course. I've also used natural, nutrient-filled sweeteners, and other sound ingredients such as aluminum-free leavening. Hope you enjoy!

- Heat oven to 375°F
- Grease, flour, and line the bottom of a cake pan with parchment. (I love Baker's Joy, and this is a minimal amount of wheat flour, anything else won't keep the sticky oatmeal from sticking).
- Whisk together ground oats, baking powder, baking soda, and salt in a medium bowl.
- In another bowl, whisk together the egg, canola oil, raw sugar, molasses, honey, peanut butter, water, and vanilla until smooth. Incorporate into dry mixture.
- Pour into cake pan and bake 15 minutes or until set. Mine was finished in exactly 15 minutes. The oats make this cake finish faster than other cakes, so be sure to not overcook.
- Voila! Enjoy.
