Steps:

  • Whisk peanut butter, soy, cayenne, oil and sesame oil. Add noodles and toss to coat. Sprinkle noodles with sesame and scallion to garnish.

2 teaspoons smooth peanut butter
1 tablespoon honey
2 tablespoons tamari, eyeball it (dark soy sauce)
1 teaspoon sesame oil (eyeball it)
1 teaspoon ground ginger or 1 inch fresh ginger, peeled and grated
1/4 lb spaghetti, cooked and rinsed under cold water
1 tablespoon light sesame seeds, toasted over medium-low heat for 3 minutes (optional)

Steps:

  • In a medium microwaveable bowl, heat the peanut butter in the microwave oven until melted, about 15-20 seconds (or heat peanut butter over low heat on stove until mushy).
  • Whisk honey and tamari into the peanut butter, then whisk in the sesame oil and the ginger.
  • Toss the spaghetti with the sauce, and top with the sesame seeds, if you want to go really groovy with the noodles.
  • If you want to bump up the crunch factor, add some shredded carrots, scallions, bean sprouts or other veggies.

1/2 pound spaghetti
1/4 cup Tamari dark soy, eyeball it
1/4 rounded cup smooth peanut butter, softened in microwave 15 seconds on high
2 tablespoons cider or rice wine vinegar
1 tablespoon dark sesame oil, eyeball it
2 tablespoons hot sauce
2 cups shredded cabbage and carrot mix, available in produce department
1 cup bean sprouts or pea shoots, any variety, available in produce department
3 scallions, chopped on an angle
2 tablespoons sesame seeds

Steps:

  • Cook pasta to al dente, with a bite to it, then cold shock it to stop the cooking process by running it under cold water in colander. Drain the pasta very well.
  • In the bottom of a large bowl, whisk together soy, peanut butter, vinegar, oil, sesame oil, and hot sauce. Add noodles and veggies and toss to combine the noodles and coat them evenly with sauce. Sprinkle scallions and sesame seeds throughout the salad and serve.

Coarse salt
1 pound thin spaghetti
1/2 cup smooth peanut butter, preferably natural
1 to 2 garlic cloves
1/2 teaspoon red-pepper flakes
1/3 cup soy sauce
1/3 cup rice vinegar
2 tablespoons toasted sesame oil
1 English cucumber, peeled and halved lengthwise
2 medium carrots, peeled and shredded

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, and transfer to a large bowl.
  • Meanwhile, make peanut sauce: In a blender or food processor, blend peanut butter, garlic, pepper flakes, soy sauce, vinegar, and sesame oil until smooth.
  • Cut cucumber crosswise into thirds; cut each piece lengthwise into 1/4-inch slices. Stack slices; cut lengthwise into very thin strips. Transfer pasta to a large bowl; toss with sauce, cucumber, and carrots. Serve at room temperature.

I highly recommend using a natural peanut butter for this recipe. You'll get a richer, more peanuty flavor without the extra sweetener. This is great for a dinner-for-two and you'll have leftovers for lunch the next day!

4 tablespoons soy sauce
2 garlic cloves, minced
2 inches fresh ginger, minced
2 tablespoons sugar
3 tablespoons peanut butter (natural or organic)
1 -2 dash rice vinegar
2 -3 dashes hot sauce (Tabasco)
1 teaspoon salt
8 -10 ounces Asian noodles, preferably soba
2 tablespoons sesame oil
sprinkles of black and white sesame seeds

Steps:

  • Mix the first 8 ingredients together in a nonreactive bowl and set aside.
  • Cook your noodles in a large pot of boiling water, following the directions on the package (probably for 3-5 minutes). Drain and rinse well with cold water. Return to pot and mix noodles with 2 tablespoons sesame oil.
  • If you want to eat your noodles cold, let them cool in the oil before mixing the peanut sauce with them. This will help the flavors stay bright. If you're eating them right away, mix the peanut sauce in right away and enjoy. Sprinkle sesame seeds on individual portions for extra flavor and crunch.

3 tablespoons water
2 ½ teaspoons brown sugar
1 clove garlic
½ tablespoon fresh ginger, minced
8 oz spaghetti, cooked according to package instructions
½ cup shredded carrot
½ cup shredded red cabbage
¾ cup edamame, shelled
peanut, for garnish
1 tablespoon black sesame seeds, for garnish
scallion, sliced, for garnish

Steps:

  • In a blender, combine the peanut butter, soy sauce, sesame oil, rice vinegar, water, brown sugar, garlic, and ginger and blend until smooth.
  • In a large bowl, add the spaghetti, carrots, cabbage, and edamame and pour over the peanut sauce. Use tongs to mix well, until sauce is fully incorporated.
  • Transfer to bowls and top with peanuts, black sesame seeds, and scallion.
