- Line a 9-in. square pan with foil; butter the foil with 1/2 teaspoon butter and set aside. , In a microwave-safe bowl, melt candy coating; stir until smooth. Stir in peanut butter until melted. Transfer to prepared pan. Cool to room temperature. Cut into squares.

PEANUT BUTTER CANDY

- Butter an 8x8x2 inch square pan. Set aside.
- In a 2 quart saucepan with a candy thermometer inserted, cook sugar, light corn syrup, milk, and salt, until thermometer reads 234 degrees F (112 degrees C). Remove from heat and stir in vanilla and peanut butter.
- Put peanut butter mixture in a large mixing bowl and beat until mixture begins to thicken. Pour into prepared pan. Chill until completely cooled. Cut into squares.

CHOCOLATE-COVERED PEANUT BUTTER CANDIES
Favorite flavors marry in a melt-in-your-mouth, easy homemade candy. Sweet!

- Line 8- or 9-inch square pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan. Grease foil with butter.
- In medium bowl, mix 1/2 cup peanut butter, the butter, peanuts and vanilla. Stir in 2 cups powdered sugar, 1/2 cup at a time, until stiff dough forms. (Work in powdered sugar with hands if necessary.) If dough is crumbly, work in additional 1 tablespoon peanut butter. Pat mixture in pan. Cover; refrigerate about 1 hour or until firm. Remove from pan, using foil edges to lift. Cut into 8 rows by 8 rows.
- Line cookie sheet with waxed paper. In 1-quart saucepan, melt chocolate chips and shortening over low heat, stirring constantly. Dip peanut butter squares, one at a time, into chocolate mixture. Place on waxed paper. Refrigerate uncovered about 30 minutes or until firm.
- In small bowl, mix 1/2 cup powdered sugar and 2 tablespoons peanut butter. Beat in milk with wire whisk until smooth. Stir in additional milk, if necessary, 1 teaspoon at a time, until thin enough to drizzle.
- Drizzle icing over tops of chocolate-covered squares. Refrigerate uncovered about 30 minutes or until firm. Store candies loosely covered in refrigerator.

My cousin sent me some of these delicious nutty buttercreams, and I've been making them ever since. It's a wonderful gift recipe since one batch yields seven dozen.

- In a large bowl, cream the butter until light and fluffy. Gradually add confectioners' sugar, cream and vanilla; beat on medium speed for 3-4 minutes. Shape into 3/4-in. balls. , In a microwave or heavy saucepan, melt chocolate chips and shortening; stir until smooth. Dip balls in melted chocolate; roll in peanuts. Place on waxed paper-lined baking sheets; refrigerate until set. Store in an airtight container in the refrigerator.

- In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs and vanilla. Stir in the flour, baking soda and salt until well blended. Cover and chill dough for at least one hour, or until no longer sticky.
- Preheat the oven to 350 degrees F (175 degrees C). Take about 1/3 cup of the dough, and wrap it around a candy bar. Repeat, using the rest of the dough and candy bars. Place cookies 3 inches apart onto ungreased cookie sheets.
- Bake for 15 minutes in the preheated oven, or until edges begin to brown. Cool on baking sheets.

MOMMA'S PEANUT BUTTER CANDY
This is a recipe for my moms Peanut Butter Candy. She made it when I was kid and I will always love it!

Steps:
- In a medium pot bring water to a rolling boil.
- Add sugar and let dissolve. Keep boiling it!
- As the water continues to boil add more sugar until it seems to be thickening. (Probably no more than 1 cup.) I never measure the "extra" sugar. I just add until it looks like it may be thickening.
- Boil sugar and water until it passes the "water test".
- THE WATER TEST: With a spoon take a few drops of your sugar and water(syrup) and let it drip into the glass of cold water. If the syrup gets hard before it reaches the bottom of the glass and forms a solid drop in the bottom it has passed the test and is ready to be mixed. If it mixes in with the cold water, it needs to boil longer. Just keep testing it every few minutes. If its been boiling a while and still doesnt get hard, add more sugar to the boiling water until it passes the test.
- Meanwhile, while you are waiting on your water to become syrup, put the peanut butter into a med bowl. If you use a glass bowl cleanup will be easier. Also, if you microwave the peanut butter for 30 seconds or so, it will be easier to mix.
- When your syrup is done QUICKLY (but CAREFULLY) pour it into the bowl with the peanut butter. Mix by hand with a spoon until mixed well. Drop by spoonfulls onto parchment paper and allow to cool in fridge.
- NOTE: Be extremely careful when pouring the syrup! If this stuff get on you while it is hot it is like hot glue!
