PEAR JELLY RECIPE

Pear Jelly is a versatile pantry item, and it's easy to make from scratch.

8 lbs ripe pears
7 1/2 cups granulated sugar
1 pouch (85 ml liquid pectin)

Steps:

  • Wash pears and remove the blossom and stem ends, but do not core or peel them
  • Cut pears into quarters and place in a large, deep stainless steel pot.
  • Add enough cold water to cover the fruit
  • Bring to a boil over high heat, stirring occasionally, then reduce heat, cover and boil gently just until pears are softened, about 30 minutes, occasionally mashing with a potato masher
  • Transfer to a dampened jelly bag set over a deep bowl, or into a sieve lined with several layers of dampened cheesecloth.
  • Allow to drip at least 2 hours.
  • Don't press or squeeze the fruit, as this will cloud the jelly.
  • You should end up with 5 cups of pear juice.
  • Combine the collected pear juice and sugar into a large, deep, stainless steel pot.
  • Bring to a full rolling boil over high heat
  • Stir in liquid pectin and continue to boil hard, stirring constantly, for one minute
  • Skim off foam and transfer to hot sterilized jars
  • Wipe jar rims and apply lids and screw bands
  • Process in a boiling water canner for 10 minutes
  • Remove from canner and allow to cool before ensuring jars are sealed and storing.

use this as a garnish for Chocolate-Pear Cake (page 98), but it would be delicious in the bottom of a glass of champagne.

Yield makes one 9 x 12-inch pan

Number Of Ingredients 5

1/4 cup (50g) water
3 teaspoons powdered gelatin (or 13.5g sheet gelatin; see page 276)
1 cup (300g) Simple Syrup (page 184)
2/3 cup (150g) pear eau-de-vie, such as Poire William
Grated zest of 1 orange

Steps:

  • Run a 9 x 12-inch rimmed baking sheet under cold water and shake off the excess. Line the damp pan neatly with plastic wrap. (The water will help the plastic stick to the pan.)
  • Put the water in a small bowl and sprinkle with the gelatin. Let sit for at least 1 minute. Microwave for 30 seconds or heat gently in a saucepan until melted.
  • Combine the simple syrup and eau-de-vie in a large measuring cup. Add the gelatin and whisk for about 45 seconds. Whisk in the zest.
  • Pour into the baking sheet and refrigerate for at least 2 hours to set. To serve, turn out onto a cutting board and cut into small squares. Or use a whisk to break the gelée up into irregular shapes.

This recipe is by Deb Wise and was published in the December 2012 issue of Cooking Light magazine. She suggests that you use fruit concentrate or a fruit purée. From perfect purée .com. I plan to experiment with different flavors. ( Note: make sure you use a liquid fruit pectin like Certo).

1 1/2 cups sugar
3/4 cup fruit, concentrate
1/4 cup unsweetened applesauce
1/4 cup corn syrup
3 ounces fruit pectin
1 teaspoon fresh lemon juice

Steps:

  • Line a 9x 5 loaf pan with plastic wrap and coat with cooking spray.
  • Bring 1 1/4 cups sugar, concentrate/purée, applesauce, and corn syrup to a boil in a sauce pan. Cook until thermometer says 224 degrees. (About 10 minutes) Add pectin and bring to a boil for one minute. Remove from heat and stir in lemon. cover and let stand at room temperature overnight.
  • Sprinkle top evenly with one tablespoon sugar. Invert gelee onto cutting board. Remove plastic. Cut into 32 pieces. Roll gelees in remaining sugar.

This is my grandmother's recipe. It is good on anything grape jelly is good on! Handle prickly pears carefully, wearing gloves. Store jelly in a cool, dark area.

27 prickly pears (cactus fruit)
¼ cup lemon juice
1 (1.75 ounce) package fruit pectin (such as Sure-Jell®)
4 ½ cups white sugar

Steps:

  • Simmer 3 pint-size jars in a large pot of water until ready for use. Wash lids and rings in warm soapy water.
  • Slice ends off each prickly pear. Make 1 long vertical slit down each one. Use the slit to hold the skin and peel off. Discard peel.
  • Place peeled pears in a blender; puree in batches until liquefied. Press puree through a fine-mesh sieve set over a bowl. Discard pulp and seeds.
  • Measure out 3 cups prickly pear juice, lemon juice, and pectin into a large pot. Bring to a boil, stirring constantly. Add sugar and return to a boil, stirring constantly. Let cook, about 3 minutes. Remove from heat.
  • Pour prickly pear mixture into hot jars, filling to within 1/4 inch of the top. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the stockpot, and process for 15 minutes.
  • Remove the jars from the pot and place onto a cloth-covered or wood surface, several inches apart, and let cool, at least 24 hours.

  • Wash and peel the pears, cut in half and remove the core and pit from each one and place in a large saucepan with enough water to cover them. Over medium-high heat, bring the water to a boil then reduce the heat to simmer and poach the pears until they are slightly softened.
  • Place the poached pears in a colander to drain and allow them to cool for 10 or 15 minutes. Add the cooled pears to your blender or food processor and puree them. Measure the pear puree and add to a heavy-bottomed wide skillet or dutch oven
  • For every 1 cup of puree you need to add 3/4 cup of sugar. Add the lemon juice to the puree and sugar, stirring to dissolve the sugar and bring to a boil over medium-high heat. Boil for one minute, then reduce the heat to a simmer and add the liquid pectin. Continue simmering the mixture, string frequently. The mixture will gradually get to be very thick and turn a dark orangey color. This will take about one-and-a-half to two hours and when you can pull a wooden spoon through it and it leaves an open streak on the bottom of the pan that takes a few seconds to fill in, remove it from the heat.
  • Pour the hot mixture into a prepared 13x9x1/2 size baking sheet that has been lined with parchment paper. Smooth it out evenly in the pan and allow it to cool overnight. It should be about 1/4-inch thick.
