PEAR GORGONZOLA FLATBREAD

Steps:
- Place a pizza stone in over and preheat 375 (if you don't have stone, use a cookie sheet but don't preheat it)
- Brush flatbread with olive oil
- Heat the jam in microwave until it is a bit liquified then brush on flatbread, leave chunks of jam on flatbread
- Place pear on top then top with gorgonzola
- Sprinkle with green onions
- Season with salt and pepper
- Place flatbread on stone and bake for 10-12 minutes until crispy
- Remove and cool slightly

PEAR AND GORGONZOLA CHEESE PIZZA
A very interesting appetizer pizza. Sounds strange, but everyone will love the unique combination of fragrant pears and distinctive Gorgonzola.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Place pizza crust dough on a medium baking sheet. Layer with Provolone cheese. Top cheese with Bosc pear slices. Sprinkle with walnuts and Gorgonzola cheese.
- Bake in the preheated oven 8 to 10 minutes, or until cheese is melted and crust is lightly browned. Remove from heat. Top with chives and slice to serve.

- Heat 2 teaspoons oil in a large skillet over medium heat. Add pears and onion, and cook, stirring occasionally, 3 to 4 minutes until pears are golden brown and juicy. Turn off heat and set pan aside.
- Heat a nonstick ridged cast-iron grill pan over medium-high heat. Cook flatbreads on both sides until they have grill marks. Transfer to a platter and brush one side with remaining olive oil and sprinkle with salt. Top with pear-onion mixture, walnuts, Gorgonzola, and basil. Cut into thirds and serve warm.
