1 (14.4-oz) bag frozen pearl onions
½ cup heavy cream
¼ cup + 2 Tbsp grated Parmesan
½ tsp kosher salt, divided
½ tsp freshly ground pepper, divided
1 slice bread

Steps:

  • Combine pearl onions with 1 cup water and bring to a boil. Reduce to a simmer, cover, and cook 8 minutes; drain and pat dry. Scatter onions in a small buttered baking dish. Combine heavy cream, ¼ cup Parmesan, and ¼ tsp each salt and pepper; pour over onions. Tear up slice of bread, then combine with 2 Tbsp Parmesan and remaining salt and pepper in a food processor; pulse to make bread crumbs; sprinkle over onion mixture. Bake in a 400°F oven until browned and bubbly, about 25 minutes. Let stand 10 minutes before serving.

2 lbs yellow onions
1/4 cup butter
1 pinch clove
1 pinch dried thyme
salt and black pepper
2 egg yolks
1/4 cup whipping cream
1/2 cup grated parmesan cheese

Steps:

  • Slice the onions in half lenghwise, then cut crosswise into thin slices.
  • In a large skillet melt butter, then add in onions, thyme, cloves, pepper and salt; cover with lid and saute until the onions are very soft (about 10-12 minutes) adjust the salt to taste (do not add in too much salt as the Parmesan is salty!).
  • Transfer the onions to a buttered gratin dish or small casserole dish and smooth it out with a spoon.
  • At this point you can cover and let sit at room temperature to broil later.
  • Preheat the broiler.
  • In a small bowl whisk together egg yolks and whipping cream, the stir in Parmesan cheese.
  • Pour the mixture over the onions in the baking dish.
  • Place under the broiler (about 2-inches from heat).
  • Broil until the top is golden.
  • Serve immediately.

1 cup half-and-half
4 tablespoons butter, melted
2 tablespoons flour
1 tablespoon Worcestershire sauce
1 teaspoon black pepper
1 teaspoon crushed red pepper flakes (optional)
1 teaspoon paprika

Steps:

  • Preheat oven to 300°F Bring a medium sized pot of water to a boil. Cook onions in boiling water covered about 2-3 minutes.
  • Remove onions from water and plunge into ice water; peel. Arrange onions in a lightly greased 1 qt baking dish.
  • Combine remaining ingredients except paprika in a small bowl. Pour mixture over onions, then sprinkle with paprika. Cover and bake 25-30 minutes, stirring halfway through the cooking time.

  • Preaht oven to 350 degrees F. Coat the bottom and sides of a 1-quart casserole dish with non-stick cooking spray.
  • Place pearl onions in a large saucepan and add enough water to cover them. Bring to boil. Then reduce heat and simmer 6 to 8 minutes or until onions are just tender. Drain well and set aside. (see note)
  • Melt 2 tablespoons butter in a heavy saucepan over low heat. Add flour, and whisk until smooth. Cook for 1 minute, stirring constantly. Gradually add half-and-half while whisking constantly to prevent lumps. Cook over medium heat, stirring frequently until thickened.
  • Add salt, pepper, mustard, and nutmeg. Add 1 cup shredded cheese; stir until cheese melts. Remove from heat, and gently stir in drained onions.
