Pecan Crusted Goat Cheese Salad image

Simple, healthy and delicious! Warm, creamy goat cheese is enveloped in a crispy pecan crust and topped with a simple mustard vinaigrette tossed with fresh spring greens. This salad is summer on a plate and it will quickly become one of your favorites!

Provided by Kylie

Categories     Main Dish

Time 20m

Number Of Ingredients 18

10.5 oz. log plain goat cheese
1 egg
4 oz. pecans (about 1 cup)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
Kosher salt
fresh cracked pepper
16 oz. spring greens or your fave lettuce combo
4 medium beets, roasted peeled and cut in wedges
1/2 cup diced red onion
1 cup olive oil
2/3 cup white balsamic vinegar
1 tablespoon Dijon (or whole grain) mustard
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
Kosher salt
fresh cracked pepper

Steps:

  • Preheat oven to 400 degrees.
  • Slice goat cheese into 8 equal pieces. I like to cut the log in half, then cut each half in half, and so on until I have 8 slices.
  • Add pecans, garlic powder, onion powder, oregano and a large pinch of salt and pepper to a food processor. Pulse until pecans are well minced and everything is combined. Transfer to a shallow bowl.
  • Beat egg in a shallow bowl.
  • Use hands to form slices of goat cheese into uniformly round pucks.
  • Dip a slice into the egg mixture, allowing the excess to drip off.
  • Then place it in the pecan mixture and use your other hand to move the slice around in the pecans, covering the entire surface with pecans. Gently push the pecans into the surface of the goat cheese. Place on a parchment lined baking sheet. Repeat with remaining goat cheese slices.
  • Bake for 8-10 minutes or until the pecans turn dark golden brown but do not burn. Check on them around the 6 minute mark to make sure the pecans aren't getting too brown.
  • In a mason jar combine all dressing ingredients and shake vigorously until emulsified.
  • Assemble each salad with a bed of lettuce, a handful of roasted beets, a sprinkle of diced onion.
  • Place 1-2 goat cheese rounds on each salad.
  • Pour dressing over the salad and enjoy!

HONEY PECAN & GOAT CHEESE SALAD

Honey Pecan & Goat Cheese Salad image

PECAN CRUSTED CHICKEN

Pecan Crusted Chicken image

Pecan Crusted Chicken with Honey Mustard Dipping Sauce. Tender chicken breasts in a crispy pecan coating, baked until golden and juicy!

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 50m

Number Of Ingredients 14

2 large eggs
1 cup pecan halves
1/2 cup Panko bread crumbs
1 teaspoon dried basil
1/2 teaspoon kosher salt
1/4 teaspoon coarse black pepper
4 small boneless, skinless chicken breasts (about 6 ounces each)
2 tablespoons extra virgin olive oil
1 cup nonfat plain Greek yogurt
2 tablespoons Dijon mustard
1 ½ tablespoons grainy brown mustard (or an additional tablespoon of Dijon)
1 tablespoon honey (plus additional to taste)
¼ teaspoon kosher salt
Pinch cayenne pepper

Steps:

  • Place a rack in the center of the oven and preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or a silicone baking mat.
  • Lightly beat the eggs in a wide, shallow bowl or pie plate and set aside.
  • In a food processor, pulse the pecans until they form fine crumbs (but don't over-process or they will turn into pecan butter). Place the mixture in a large, sturdy ziptop bag.
  • To the bag, add the breadcrumbs, basil, salt, and pepper. Seal the top and shake to combine.
  • Place the chicken on a cutting board and cover it with a large sheet of plastic wrap. With a meat tenderizer, rolling pin, or your fist, pound the chicken breasts to an even thickness. They need not be super thin-just flatten the middle so that the chicken is relatively flat and will bake more evenly.
  • Working one chicken breast at a time, dip the chicken in the egg wash, then place in the ziptop bag and shake to coat with the pecan mixture. Gently press the pecan mixture so that it sticks to the chicken, then lay the chicken on the prepared baking sheet. Repeat with remaining chicken breasts.
  • Drizzle the olive oil over the top of the chicken. Bake until the chicken reaches 160 to 165 degrees F on an instant read thermometer, about 15 to 20 minutes. Remove to a plate and let rest 5 minutes. Chicken is considered cooked at 165 degrees F, but I like to remove mine several degrees early and let the carryover cooking to finish the rest (this ensures the chicken breast is juicy and does not overcook).
  • While the chicken bakes, prepare the sauce: In a small bowl, stir together the Greek yogurt, both mustards, honey, salt, and cayenne. Taste and adjust the seasoning as desired.
  • Enjoy the pecan crusted chicken hot, with the dipping sauce.

  • Make goat cheese medallions: Prepare a small baking pan by lining with foil or parchment. Set aside. In a small bowl, beat together egg and water. Set aside. Combine chopped pecans and bread crumbs on a small plate. Using a very sharp knife, slice the goat cheese into medallions, about 1/4 inch in thickness.
  • Dip each medallion in the egg mixture, letting the excess drip off before dredging in the pecan and breadcrumb mixture. Firmly {but gently} pat down and shape into a round shape if needed, then place onto prepared baking pan. Refrigerate for at least 30 minutes or until very cold.
  • Meanwhile, prepare the vinaigrette: In a small bowl or a jar with a lid, combine olive oil, apple cider vinegar, Dijon mustard, cinnamon, salt and pepper. Whisk or shake until emulsified.
  • Pan fry the medallions: Add about a tablespoon of oil into a medium skillet over medium-high heat. Place the chilled medallions in the hot oil and cook for 3-4 minutes on each side until the crust is golden and the cheese is warmed through.

  • Season the chicken breasts on both sides with sea salt. Combine the ground pecans, brown sugar, and bread crumbs in a shallow bowl or plate. Beat the eggs in another shallow bowl. Dip the chicken in the beaten eggs and then coat the chicken breasts on both sides with the bread crumb mixture. Place the chicken breasts on the baking sheet.
  • Place baking sheet on the highest oven rack and bake for 15-20 minutes or until cooked. Because there is sugar in the bread crumb mixture, your chicken will begin to caramelize towards the end of the cooking time. When finished baking, remove the baking sheet from the oven, sprinkle chicken with a little sea salt and set aside.
  • In a large bowl combine the salad mix, dried cranberries, eggs, celery, green bell pepper, red onion, grape tomatoes, cucumber slices, goat cheese and croutons. Add the dressing and toss to coat the salad. Turn the salad onto two plates. Take one piece of your chicken breast and cut into slices and place on top of each salad. Enjoy!
