PECAN RUM BALLS - JINGLE BELL RUM BALLS
Creamy and Boozy Pecan Rum Balls are the perfect sweet treat for the holidays.

Steps:
- Mix together the rum and lemon juice. Set aside.
- Mix together the butter and powdered sugar.
- Pour the rum and lemon juice mixture in the powdered sugar/butter mix.
- Stir until combined. Fold in the pecans.
- Shape into 1-inch balls.
- I like to use an ice cream scoop so they are all the same size.
- Roll in sprinkles if desired.
- Place in the refrigerator and let chill for 1 hour.
- Enjoy!

PECAN RUM BALLS (A NO BAKE RECIPE)
These boozy holiday Pecan Rum Balls are a sophisticated no bake treat great to serve for adults all through the holidays. NOTE: 1 hour chilling time has been included in the recipe. Depending on your chilling conditions, this time may be longer.

Steps:
- In a medium microwave-safe bowl, melt the chocolate chips using the Melt function or cooking at 50% power for 1 minutes, then in 20 second increments, stirring in between, until the chocolate has melted and is smooth.
- Stir the sugar and corn syrup into the melted chocolate to combine. Stir in the rum and mix until it is fully incorporated.
- Stir in the vanilla wafers crumbs and graham crackers. Cover and chill in the refrigerator until firm (at least 1 hour).
- Scoop out bite-size balls approximately 1-inch diameter (note: using a 1 tablespoon cookie scoop for this is highly recommended) and roll between your palms to make them into smooth balls.
- Roll them in the diced pecans. Store in a sealed container. The flavor deepens after making so may be made a week before planning to eat them or giving them as gifts.

- In a medium sized bowl, mix together the vanilla wafers, cocoa and sugar. Stir in the chopped walnuts, corn syrup and rum. Mix until well blended.
- Form dough into 2 inch balls and roll in confectioners' sugar. Store in covered tin.

- 1. In a food processor or electric chopper, blend up Vanilla Wafers (or Graham Crackers) until it reaches a mealy consistency. Add all ingredients together in a bowl, except powdered sugar. Roll them into pecan or walnut-sized balls. If they are too dry, add a tiny bit more corn syrup, or if too moist and are hard to form, add a little more processed vanilla wafers. When rolled to the size you want, roll in powdered sugar.
- 2. This makes about 2 dozen balls.(Don't make them too big!) Cover and refrigerate until serving. These can also be made without the liquor so kids can enjoy them. May have to add more prepared wafers to make up for the omitted liquid.
- 3. If you are taking these to a party, one batch may not be enough! Note: For a more interesting taste, use coffee liquer, or a peppermint, or butterscotch schnapps for the flavor instead of rum or bourbon, whiskey, etc. Warning!! Don't eat too many of these and drive! During the Holidays and always, eat and drink responsibly anything containing alcohol! Happy Holidays and Bon Apetit' Y'all!

- Combine chopped pecans, graham cracker crumbs, brown sugar, vanilla, and maple syrup. Stir to combine. Add melted butter only until the mixture comes together and can be easily shaped into balls. (Depending on how you chopped your ingredients, you may have some leftover butter.)
- Shape pecan mixture into 1-inch balls.
- Place balls on a parchment-lined baking sheet and place in the refrigerator or freezer for an hour.
- Melt almond bark according to package directions.
- Remove balls from refrigerator and dip into the chocolate almond bark.
- Place dipped balls on parchment or wax paper and let sit until set.

- Add remaining ingredients and pulse till smooth.

- In the bowl of a food processor, combine the cookies crumbs and pecans. Pulse them together until the nuts are finely ground. Set aside.
