2 cups plain flour
1 1/4 cups brown sugar
125 g butter
1 cup chopped pecans or 1 cup walnuts
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 egg
3/4 cup light sour cream
1 teaspoon vanilla essence
1 cup unsweetened crushed canned pineapple, drained well
1/2 cup sultana

Steps:

  • Combine flour and sugar in bowl.
  • Rub in butter until mixture resembles breadcrumbs.
  • Stir in pecans.
  • Press 2 cups of the mixture into a greased slice tray.
  • Blend together baking soda, cinnamon, egg, sour crem and vanilla.
  • Add to remaining mixture combining well.
  • Stir in well drained pineapple and sultanas.
  • Spread mixture over the base.
  • Bake in moderate oven for about 35 minutes or until cooked when tested.
  • Cool in pan before cutting into squares.

MOTHER'S PECAN SQUARES

1 cup butter, softened
2 cups dark brown sugar
2 eggs, beaten
1 pinch salt
2 cups sifted cake flour
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
  • Cream the butter and 1 cup of the dark brown sugar together until light and fluffy. Mix in 1 beaten egg then add the flour and until well combined. Pour batter into the prepared pan and spread evenly.
  • Cover the batter with the remaining well-beaten egg. Sprinkle 1/2 cup of the dark brown sugar over the surface then sprinkle with the chopped pecans and top with the remaining 1/2 cup of dark brown sugar.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Let cool for 30 minutes then cut into squares.

1 1/2 cups cake flour
1 cup well drained crushed pineapple
1/4 cup melted butter

1 cup shredded coconut

Steps:

  • base:.
  • Cream the 1/2 cup butter with the brown sugar and vanilla.
  • Mix in the cake flour, combining well.
  • Press into a ungreased 9 inch square pan.
  • Bake at 375 degrees for 15 minutes, until golden brown.
  • Remove and cool.
  • Filling:.
  • Spread well drained 1 cup crushed pineapple over the cooled cooked base.
  • Beat well together the melted butter with the granulated sugar, egg vanilla and coconut.
  • Spread this mixture evenly over the pineapple.
  • Return to oven at 375 degrees and bake for 25 to 30 minutes.
  • Remove and then cool completely in pan.
  • Cut into squares.

1 cup unsalted butter
1 1/2 cups brown sugar
1/4 cup sugar
1/2 cup honey
1/4 teaspoon fine salt
1/3 cup heavy cream
4 1/2 cups halved pecans
1/2 cup unsalted butter, softened
2/3 cup sugar
2 cups pastry flour
1/2 teaspoon salt
1 egg
1 egg yolk

Steps:

  • Preheat oven to 365 degrees F.
  • While the pastry is cooling, combine the butter, brown sugar, white sugar, honey, and salt in a large pot over high heat. Boil for 6 minutes. Remove from the heat and, at arm's length, carefully stir in the cream, being mindful of splatters.
  • Add the pecans and mix thoroughly. Pour the filling evenly over the baked pastry. Bake for 20 minutes until golden brown. Cool completely before cutting into squares.
  • Preheat oven to 400 degrees F.
  • In a medium bowl, cream together the butter and sugar. Mix in the pastry flour and salt. Add the egg and egg yolk. Mix thoroughly.
  • Press the dough evenly onto the bottom of the pan. Refrigerate for 15 minutes.
  • To bake, cover the pastry with parchment paper and weigh it down with dried beans or pie weights (see Cook's Note*). Bake for 20 minutes. Cool completely before removing the beans and parchment paper.

3/4 cup granulated sugar
3 extra-large eggs
3/4 teaspoon pure vanilla extract
4 1/2 cups all-purpose flour

1 cup good honey
3 cups light brown sugar, packed
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1/4 cup heavy cream
2 pounds pecans, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
  • For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

1/2 cup finely chopped pecans
2 tablespoons butter or margarine

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In large bowl, mix flour, 3/4 cup brown sugar, cinnamon and baking soda.
  • With pastry blender or fork, cut in 3/4 cup butter until mixture resembles coarse crumbs. Stir in apples and egg. Press mixture firmly in pan. Bake 25 to 30 minutes or until puffed in center.
  • Meanwhile, in 1-quart saucepan, combine all topping ingredients except whipped topping. Cook over medium heat, stirring frequently, until mixture comes to a boil. Boil 1 minute, stirring constantly. Remove from heat.
  • Remove apple layer from oven. Drizzle hot topping over warm apple layer; spread evenly. Return to oven; bake 4 to 6 minutes longer or until topping is bubbly. Cool completely, about 1 1/2 hours. With serrated knife, cut into squares. Serve with whipped topping.

1 cup unsweetened pineapple juice

Steps:

  • In large bowl, pour boiling water over gelatin; stir about 2 minutes or until gelatin is completely dissolved. Stir in pineapple juice. Refrigerate about 30 minutes or until mixture is syrupy and just beginning to thicken.
  • Meanwhile, in 13x9-inch (3-quart) glass baking dish, toss cracker crumbs, 1/4 cup sugar, the coconut, pecans and melted butter until well mixed. Reserve 1/2 cup crumb mixture for topping. Press remaining mixture in bottom of dish.

These squares are so popular in our N. E. Pa. area and are often requested for bake sales. At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

3 (20 ounce) cans crushed pineapple
1 2/3 cups granulated sugar
3 teaspoons minute tapioca
5 cups all-purpose flour

3/4 cup milk (start with 1/2 cup milk)

Steps:

  • Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.
  • Dough:.
  • In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
  • Add the sugar, salt, baking powder, baking soda and mix well.
  • Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
  • Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
  • Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
  • Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
  • Again, flour surface and roll out other piece of dough and place on top.
  • Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
  • Let cool. Cut into desired squares. May be dusted with confectioners sugar.

1/2 cup powdered sugar
1 cup (2 sticks) chilled unsalted butter, cut into 16 pieces
2 cups pecan pieces (about 8 ounces)
3/4 cup (packed) golden brown sugar
3/4 cup honey
6 tablespoons whipping cream

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch metal baking pan. Blend flour and powdered sugar in processor. Add butter and cut in, using on/off turns, until moist clumps form. Press dough onto bottom of prepared pan. Bake until golden, about 20 minutes. Maintain oven temperature.
  • Stir pecans, brown sugar, honey and cream in heavy small saucepan over medium heat until sugar dissolves. Boil until mixture bubbles, about 2 minutes.
  • Pour pecan mixture over crust. Bake until filling bubbles and is light caramel color, about 20 minutes. Cool completely. (Can be prepared 1 day ahead. Cover tightly and store at room temperature.) Cut into squares and serve.

A cousin to the pecan pie, but much less fussy: Pecan squares are a kitchen classic. Here, we've updated a version that came to us in 1998 from William Grimes, scaling it down and moving away from the original pâte brisée. The pecans are mixed in an addictive caramel sauce, which - if you can stop eating it on its own - is spread over shortbread and baked until just set. The end result is sweet, but not cloying, balanced by the crust and sure to please.

2 sticks/227 grams cold unsalted butter, cut into pieces, plus more at room temperature for the pan
2 1/2 cups/320 grams all-purpose flour
1/3 cup/67 grams granulated sugar
1/2 teaspoon kosher salt
1 large egg yolk, lightly beaten
1 to 2 tablespoons ice water, if necessary
2 sticks/227 grams unsalted butter
1/2 cup/100 grams granulated sugar
1 cup/200 grams light brown sugar
1/4 cup/85 grams mild honey
1 1/2 teaspoons kosher salt
1/2 cup/120 milliliters heavy cream
2 teaspoons vanilla extract
4 cups (1 pound/454 grams) pecans, coarsely chopped

Steps:

  • Heat oven to 350 degrees. Butter a 13x9-inch pan, and line with parchment, leaving a 2-inch overhang on the two long sides. Butter the parchment. In the bowl of a food processor, combine the flour, sugar and salt, and pulse to combine. Add the butter, and pulse until the mixture resembles coarse sand. Add the egg yolk and pulse to evenly distribute its moisture. The mixture should just hold together when you squeeze it in your hand. Add up to 2 tablespoons ice water, if necessary, but don't let the mixture get too wet: It should still be somewhat sandy.
  • Tip the crumbs out into the prepared pan. Use your fingers or the flat bottom of a measuring cup to press the crumbs up the sides about 1/4 inch to create a border. Press the remaining crumbs down to an even thickness. Bake the crust until light golden brown and set, about 40 minutes. Transfer the pan to a rack while assembling the topping. Reduce the oven temperature to 325 degrees.
  • In a medium, heavy-bottomed saucepan, combine the butter, granulated sugar, brown sugar, honey and salt and bring to a strong simmer over medium heat, whisking ingredients together once the butter has melted. Cook the mixture, stirring frequently, for 4 minutes. Remove from the heat and stir in the heavy cream and vanilla extract. Stir in the nuts and combine well. Transfer the mixture to the prepared pan and spread it evenly, keeping it within the border as best as you can.
  • Bake the bars until the caramel is thickened and just set, about 20 to 25 minutes (the caramel will continue to firm up when cooled). Transfer the pan to a rack to cool completely. Using the parchment paper, transfer to a cutting board to cut into equal pieces to serve.

½ cup white sugar

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter using a pastry cutter or your hands until coarse crumbs form.
  • Whisk milk, egg, and vanilla extract together in a small bowl. Add to flour mixture and knead until just combined, adding a little more flour if too wet or a little more milk if too dry. Divide the dough into thirds; 2/3 will be for the bottom, save 1/3 for the top.
  • Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
  • Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
  • Scrape filling onto the bottom dough in the baking pan and smooth out.

  • Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
