1/3 cup butter
1/3 cup coarsely chopped cashew nuts

Steps:

  • 1. Cook green beans as directed on package. Drain spoon into serving bowl.2. Meanwhile, melt butter in small saucepan. Add cashews cook and stir over low heat for 2 minutes or until cashews are very light brown. 2 teaspoons sesame oil
1 garlic clove, crushed
1/3 cup cashew nuts
1 teaspoon low sodium soy sauce
crushed red pepper flakes (for that extra zing)

Steps:

  • Trim green beans and then cut into 1-1/2 inch diagonal lengths.
  • Heat oil in wok or frying pan.
  • Add garlic, cashew nuts, & crushed red pepper flakes.
  • Cook 2 minutes.
  • Add beans & soy sauce, stir-fry 2-3 minutes, or until nuts are golden and beans just tender.
  • Serve hot.

2 Tbsp. (30 mL) canola oil
3 cups (750 mL) diced ripe, on-the-vine Tomato
1 cup (250 mL) diced red pepper
1 cup (250 mL) canned black beans, drained and rinsed
1 cup (250 mL) frozen corn kernels
2 clove garlic, minced
1 Tbsp. (15 mL) ground cumin
1 Tbsp. (15 mL) dried oregano leaves
1/2 tsp. (2 mL) salt
1/2 tsp. (2 mL) pepper
4 green onion, chopped
1/2 cup (125 mL) chopped fresh coriander leaves
3 Tbsp. (45 mL) cider vinegar

Steps:

  • Prepare the penne according to package directions. Reserve 1/2 cup (125 mL) of the cooking water before draining.Meanwhile, heat oil in a large, deep nonstick skillet set over medium heat. Add the tomato and red pepper; sauté for 5 minutes or softened.Add the black beans, corn, garlic, cumin, oregano, salt and pepper. Cook, stirring, until bubbly. Add the hot drained pasta, reserved pasta water, green onions, coriander and cider vinegar.

2 tbsp. olive oil
1/2 c. diced red bell pepper
1 tbsp. minced garlic
1/4 to 1/2 teaspoon crushed red pepper flakes
1 c. reduced-sodium, fat free chicken broth
1 lb. fresh collard or mustard greens
1 can cannellini beans
Kosher salt and freshly ground black pepper to taste
Grated Parmesan cheese (optional)

Steps:

  • Cook pasta according to package directions. Drain and return to pan.
  • Meanwhile, in large skillet, heat olive oil over medium-high heat. Add bell pepper, garlic and red pepper flakes; cook 1 to 2 minutes, stirring constantly. Add broth; bring to boil.
  • Add greens; return to boil. Cook 1 to 2 minutes, uncovered, until greens are just crisp-tender, stirring occasionally. Add greens with liquid to pasta; toss to coat. Add beans; toss gently. Adjust seasoning with salt and pepper. Top with grated Parmesan cheese, if desired.

  • in large saucepan, cook penne as label directs. meanwhile, in 12 inch skillet, heat 1 inch water to boiling over high heat.
