These melt in your mouth morsels of flaky filled pastry claim a Pennsylvania Dutch heritage. Pastry filled with goose liver pate or ground ham.

1/2 cup butter, softened
8 ounces cream cheese, softened
2 cups sifted all-purpose flour
goose liver pate or ground ham
2 ounces goose liver pate
1 teaspoon Worcestershire sauce
1 teaspoon steak sauce
2 ounces country style ground ham
1 teaspoon steak sauce
1 teaspoon ketchup

Steps:

  • FOR THE PASTRY: Cream butter and cream cheese together until well blended. Add the flour and mix until smooth. Chill pastry thoroughly (overnight if possible).
  • Using a small portion of pastry at a time, roll pastry about 1/8 inch thick on a lightly floured surface; cut out rounds with a 2-inch cookie cutter.
  • Spoon a rounded 1/4 teaspoonful of filling onto half of each round. Fold dough over filling and press edges together with a fork. Transfer to baking sheets.
  • Bake at 400°F 8 to 10 minutes, or until lightly browned. Serve hot. About 9 dozen appetizers.
  • FOR THE FILLING: Mix thoroughly goose liver pate, Worcestershire sauce and 1 teaspoon steak sauce. For the HAM FILLING; mix ground country style ham, steak sauce and 1 teaspoon ketchup. (Each filling is enough for about 4 1/2 dozen appetizers.).
  • NOTE: This pastry will keep for several weeks if wrapped tightly in moisture vapor-proof material and stored in the refrigerator.

In Pennsylvania Dutch County, we call it "filling." It is a potato and bread filling. I never measure, so this is what I do.

6 large potatoes, cut in pieces
2 medium onions, chopped
6 stalks celery, chopped small
Enough vegetable oil for saute
8-10 pieces of old bread, broken into bite-size pieces
1/4 to 1/2 cup milk
4 raw eggs, beaten
Salt and pepper
Salt and pepper
4-5 tablespoons fresh parsley, chopped fine
1-2 tablespoons poultry seasoning
Stock from the giblets and neck
Stock from the giblets and neck
1/2 stick of butter, cut into pieces

Steps:

  • Boil potatoes in salted water. Saute onion and celery in oil. Add salt and pepper to taste. Boil the giblets and neck in salted water to make stock.
  • Moisten bread with milk. Smash the potatoes in a large bowl. (I use a small roasting pan, and then I roast the filling right in it.) Add all other ingredients including all spices and oil from saute. When adding the eggs, add a little of the hot mixture to the eggs first and beat well, so as to not scramble them when they go into the whole mix.
  • Mix thoroughly. If it needs more moisture, add the stock, a little at a time. Taste to make sure enough spices are added. Add more salt and pepper and poultry seasoning, if needed.
  • Bake at 350 degrees in a greased casserole dish or roasting pan until very hot and browned, usually one hour. Dot the top with pats of butter before putting into oven. I know some people chop the giblets and add to the filling, but I don't.

1 cup ricotta cheese
½ cup fresh spinach, cooked
½ cup artichoke heart, cooked and chopped
½ teaspoon salt
½ teaspoon pepper
1 package frozen puff pastry, thawed
¼ cup shredded mozzarella cheese
8 pepperonis, chopped
3 tablespoons marinara sauce
¼ cup roasted red pepper, chopped
2 tablespoons pesto
4 mozzarella pearls
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a medium-sized mixing bowl, combine the ricotta, spinach, artichokes, salt, and pepper, and mix until fully incorporated.
  • Lay a sheet of puff pastry dough over the ice cube tray and carefully press into the dough forming it to the ice tray.
  • Place the shredded mozzarella, pepperonis, and marinara in the first four cube divots.
  • Place the roasted red peppers, pesto, and mozzarella pearls in the middle four cube divots.
  • Spoon the ricotta mixture into the last 4 cube divots.
  • Place the other sheet of puff pastry over the ice cube tray and use a rolling pin to seal it. Chill for at least 10 minutes.
  • On a parchment paper-lined baking sheet, invert the ice cube tray releasing the puff pastry pockets.
  • Using a knife, cut any excess dough from the sides.
  • Using a fork, press into the the edges of the pastry and seal.
  • Brush the pastry with butter and bake for 30 minutes.
  • Enjoy!

This recipe dates back about 300 years, created in Pennsylvania Dutch country and has been described as "a cake baked into a pie shell, or pie with a cake filling." And "so sweet ya have to shoo the flies away from it!" I love it!!

1 unbaked pie shell (9 inch)
1 1/4 cups flour
1 cup brown sugar, packed
1/4 cup cold butter
2 cups molasses
1/2 cup boiling water
1/2 teaspoon baking soda
1/4 teaspoon cinnamon

Steps:

  • In a mixing bowl, stir together the flour and sugar.
  • Cut in butter til crumbly. (Use a pastry blender, knives, forks or your fingers.) I just add it cut up, then use my fingers, pinching and tossing to keep coated.
  • In seperate bowl, add molasses, soda and cinnamon, and slowly pour in boiling water. Beat til mixture is foamy.
  • Stir half of the crumb mixture into the molasses mixture.
  • Pour into pie shell.
  • Sprinkle top with remaining crumb mixture.
  • Bake in 350 oven 30-40 minutes til pie is set/firm, bubbly and lightly browned.
  • Cool til warm, and serve topped with whipped cream or vanilla ice cream if desired.
