Steps:
- In a bowl, combine all ingredients, mixing lightly but thoroughly. Shape into eight 1/2-in.-thick patties. Refrigerate 1 hour., In a large cast-iron or other heavy skillet, cook patties over medium heat until a thermometer reads 160°, 6-8 minutes on each side.

Steps:
- Combine 1/3 pork and 1/3 pork fat in processor. Using on/off turns, process mixture until finely ground. Transfer to large bowl. Repeat with remaining pork and pork fat in 2 more batches. Sprinkle water, sage, salt, and red and black pepper over pork. Using moistened hands, mix sausage just until blended. Wrap sausage in plastic and chill. (Sausage can be prepared up to 3 days ahead. Keep refrigerated.)
- Form sausage into 3-inch-diameter patties. Heat heavy large skillet over medium heat. Fry patties in batches until browned and cooked through, about 5 minutes per side. Drain on paper towels; keep warm. Transfer to platter and serve.

- In a greased skillet over medium heat, fry patties for 5-6 minutes on each side or until meat is no longer pink. They may stick a little to the pan due to the cheese.

COUNTRY-SAUSAGE AND SAGE DRESSING

Steps:
- Preheat the oven to 350 degrees.
- Cut the untrimmed bread into one-inch cubes. There should be about 21 cups.
- Heat the oil in a skillet and add the sausage patties. Cook, turning the pieces often, about eight minutes or until cooked through and browned on both sides. Remove the patties and pour off almost all the fat from the skillet. Cut the patties into bite-size pieces.
- Heat the skillet and add the onion and celery. Cook, stirring, about three minutes, then add the apples. Cook, stirring, about three minutes longer. Stir in the sage.
- To a large bowl, add the cubed bread, sausage pieces, the apple and sage mixture, the beaten eggs, chicken broth, salt and pepper to taste. Blend well, tossing gently to moisten without making the mixture mushy.
- Use two tablespoons of the butter to grease a pan measuring about 18 by 12 by 2 1/2 inches. Pour the dressing into the pan and smooth it over. Dot with the remaining four tablespoons of butter. Place in the oven and bake one hour.

I got this from a magazine over twenty years ago. It is a wonderful combination of flavors that make a good almost-meatless entree or a savory side dish for a meat like corned beef.

Steps:
- Saute bacon in a large skillet until crisp. Drain bacon on paper towel. Crumble and set aside.
- Add butter or margarine to skillet if necessary to make 1/4 cup of drippings. Add cabbage, apple, onion, salt, and caraway seeds, 2 Tbl. vinegar, and toss to blend well. Cook 10 to 15 minutes over medium heat.
- Add noodles, cover, and simmer for 15 minutes more.
- Stir in remaining vinegar, sprinkle with reserved bacon, and garnish with sour cream.

- In a large bowl, mix all the ingredients together. My suggestion is to use your hands and really get it mixed well.
- Form the sage breakfast sausage patties: either form by hand or spread the mixture over a baking sheet lined with wax paper and cut out the patties with a ring mould or round cookie cutter.
- Heat about a tablespoon or so of Olive Oil in a skillet that has a tight fitting lid over medium high heat.
- When the oil is shimmering, add the sausage patties. Don't overcrowd the pan and cover immediately.
