- Heat grill to medium heat.
- Place peppers and onions in center of large sheet heavy-duty foil; drizzle with 1/4 cup steak sauce. Fold to make packet. Grill 2 min.
- Meanwhile, mix meat and 2 Tbsp. of the remaining steak sauce; shape into 4 (1/2-inch) patties. Grill 8 to 10 min. or until vegetables are crisp-tender and burgers are done (160ºF), turning burgers after 4 min. and brushing with remaining steak sauce.
- Remove packet from grill; cut slits in foil to release steam before opening packet. Fill rolls with burgers and vegetables.

- Combine the ground beef, sausage, garlic, oregano, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 3/4-inch-thick patties; set aside.
- Preheat a grill pan or grill over medium heat. Toss the onion and bell peppers with the olive oil, 1/4 teaspoon salt and a few grinds of pepper in a bowl. Grill the vegetables, turning occasionally, until lightly browned and tender, about 7 minutes. Transfer to a plate and set aside.
- Brush the grill pan with olive oil. Add the burgers and cook until browned and cooked through, about 4 minutes per side, topping with the cheese and covering during the last 2 minutes.
- Serve the burgers on the buns and top with the onion-pepper mixture, basil and marinara sauce. Serve with chips.

Steps:
- Soak the sliced onions in ice water for a minimum of 2 hours.
- Preheat the vegetable oil to 375 degrees F. After soaking the rings, drain well and toss in the flour. Fry until golden brown, then season with salt and pepper.
- To prepare the burger, in a bowl, blend the ground beef with 1 teaspoon salt and 1/2 teaspoon pepper. Then remove a small portion, about 1 ounce, and cook to check level of seasoning.
- Re-season the beef if necessary. To form patties, portion four 7 1/2- to 8-ounce rounds. Flatten the top with a 5-inch disk, ensuring not to over-mix during the process.
- Once portioned, warm a griddle or pan over medium high heat until hot, 2 to 3 minutes. Then add the grapeseed oil and patties. Reduce the heat to medium. Cook on first side until browned, 3 minutes, then flip and repeat process to desired temperature. Remove from the heat and rest.
- While the meat is resting, cook the fries until golden brown in the same oil used for the onion rings. When finished, remove and season with salt and pepper. Then warm a medium flat pan over medium heat. Spread the butter on all of the buns. Brown the buns in the pan until solid brown texture is achieved, 1 to 2 minutes. Then remove from the heat and set aside until ready to serve.
- In a bowl, blend the shredded lettuce with the Thousand Island dressing, tossing well. Then top the browned buns with the lettuce, a cooked patty and some onion rings and top with the bun top. Serve with the French fries.
FRIED ONION BURGER
This burger was born in Oklahoma out of Depression-era resourcefulness: In the 1920s, cooks at El Reno's Hamburger Inn used onions to stretch hamburger meat. That location has closed, but you can try a version at other El Reno restaurants like Johnnie's Hamburgers & Coneys, Sid's Diner and Robert's Grill. To make one yourself, smash at least half an onion into each patty.

- Preheat the oven to 250˚ F. Mix the beef with 1 teaspoon each salt and pepper in a large bowl, then form into 8 balls.
- Heat the vegetable oil in a large skillet over medium-high heat. Add 2 of the beef balls and slightly flatten with a metal spatula. Place a handful of the sliced onions on each patty (you'll use about a quarter of the onions for 2 patties - it will seem like a lot!) and flatten the beef into 1/4-inch-thick patties, pressing the onions into each burger. Cook until browned on the bottom, about 3 minutes. Carefully flip the burgers along with the onions and cook until the onions are browned and tender, about 2 more minutes. Flip the burgers again, along with the onions, and top each with a slice of cheese. Cover and continue cooking until the cheese melts, 30 seconds to 1 minute. Transfer to a baking sheet and keep warm in the oven until serving.
- Repeat with the remaining beef and onions to make 8 burgers total, adding more vegetable oil to the skillet if needed. Serve 2 burgers on each bun with ketchup, mustard and/or pickles.

- Preheat a grill to medium heat.
- Pour the olive oil into a large skillet over a medium-high heat. When the oil is hot, add the bell pepper and onion, then sprinkle with a pinch each of salt and pepper. Cook, stirring frequently, until lightly browned and just tender, 8 to 10 minutes. Add the garlic and cook until just softened, about 1 more minute. Stir in the pizza sauce and 1/2 cup water, then simmer until thickened but still saucy, about 5 minutes. Set aside and keep warm.
- Combine the beef, sausage, oregano, sage and remaining teaspoon each of salt and pepper in a large bowl. Mix with your hands until well combined. Form into six patties, about 1 inch thick and 4 1/2 inches wide.

- In large bowl place ground chicken and the first five ingredients, stir to combine completely until the mixture is consistent and smooth.
