PEPPERMINT PATTIES
I have made these every year as one of many Christmas treats. My family really loves them, it wouldn't be Christmas without them! When you dip, tap the fork on the edge of the pan to shake off excess. Slide the patty onto waxed paper -- you can use the fork to make a little swirl on the top to make it pretty.

- In a large mixing bowl, combine condensed milk and peppermint extract. Beat in enough confectioners' sugar, a little at a time, to form a stiff dough that is no longer sticky. Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties. Let patties dry at room temperature two hours, turning once.
- In a medium saucepan over low heat, melt chocolate with shortening, stirring often. Remove from heat. Dip patties, one at a time, into chocolate by laying them on the tines of a fork and lowering the fork into the liquid. Let cool on waxed paper until set.

PERFECT PEPPERMINT PATTIES

- In a large bowl, combine the first 4 ingredients. Add milk and mix well. Roll into 1-in. balls and place on a waxed paper-lined baking sheet. Flatten with a glass to 1/4-in. thickness. Cover and freeze for 30 minutes. , Microwave chocolate chips and shortening on high until melted; stir until smooth. Dip patties, allowing excess to drip off. Place on waxed paper; let stand until set.

POOR MANS GROUND BEEF PEPPER STEAK
Great on Pinneapple rice ! I Use brown rice and pinneapple chunks in my rice cooker using all the juice from can and adding water to reach desired amount and sprikle in a little red pepper. OOPS, I think thats another recipe ! LOL

Steps:
- 1. Mix ground beef, salt and pepper in bowl.
- 2. Shape into 8 patties.
- 3. Brown quickly on both sides in butter in skillet.
- 4. Remove patties to hold platter.
- 5. Combine green peppers, onion, garlic and soy sauce in skillet.
- 6. Cook, stirring constantly for 2 to 3 minutes.
- 7. Arrange on platter with patties.
- 8. Serve with additional sauce.

- Wash the peppers and clean them; remove the stem, seeds and filaments. Cut them first into strips and then into small pieces (1). Brown the garlic clove in a pan with a drizzle of extra virgin olive oil, add the peppers and mix. Add salt and pepper and cook on medium heat for 15-20 minutes, mixing often (2). Put the breadcrumbs in a bowl with water to soften it. Squeeze it and put it in a bowl with the peppers, the eggs, the chopped parsley, the parmesan cheese, salt and pepper (3) and mix everything until you will have obtained a soft dough.
- Make your patties and pass them first in the flour, then in the beaten egg and in the breadcrumbs. Fry the patties in hot oil until golden brown. Lift them with a slotted spoon and lay them on a plate lined with kitchen paper, so as to eliminate excess oil. Your pepper patties are ready to be served.

- In the bowl of a stand mixer, combine the sweetened condensed milk, butter, 2 tsp peppermint baking emulsion and 3 cups of the powdered sugar. Mix on low speed until the mixture comes together.
- Use a small scoop or 2 tsp of filling and roll into a ball. Place on parchment lined sheet tray. Cover the ball with a little parchment paper and press down with a tart shaper or something that has a flat surface to create the disc. You want to make them around 2" in diameter and ¼" thick for the best results. Repeat until all the filling is used. Place the patties in the freezer and freeze for at least 30 minutes.
- Place 2 cups of water in the inner pot of the Ninja Foodi. Place your double boiler pot on top or use the rack with a bowl in the high position. Turn the sear/sauté on high and let the water boil. When it starts to produce steam, turn the heat down to low-medium.
