BLACK PEPPER CRUSTED FILET MIGNON WITH TOASTED GOAT CHEESE AND TWICE COOKED RED CHILE SAUCE



Black Pepper Crusted Filet Mignon with Toasted Goat Cheese and Twice Cooked Red Chile Sauce image

4 filet mignon steaks, each 1 1/2-inches thick
1 tablespoon ground cumin
2 tablespoons kosher salt
2 tablespoons coarsely ground black pepper
4 (3/4-inch thick) slices goat cheese
Red Chile Sauce, recipe follows
Chopped cilantro, for garnish
2 tablespoons canola oil
1 large red onion, coarsely chopped
3 cloves garlic, coarsely chopped
2 New Mexican red chiles, lightly toasted
2 quajillo chiles, lightly toasted
1 ancho chile, lightly toasted
6 to 8 cups homemade chicken stock
1/4 cup creme fraiche
2 tablespoons maple syrup
Salt and freshly ground pepper

Steps:

  • Preheat the grill to high. Remove the steaks from the refrigerator and let stand at room temperature for 20 minutes before grilling. Meanwhile, combine the cumin, salt, and pepper in a small bowl. Liberally season both sides of each filet with the spice mixture. Grill the filets for about 3 to 4 minutes on each side for medium doneness.
  • Meanwhile, preheat the broiler. Remove the steaks from the grill onto a baking sheet, and top each with a slice of the cheese. Place under the broiler until cheese is golden brown and soft. Alternatively, use a blow torch or kitchen torch to brown the cheese. Ladle the sauce onto each plate, place the steak in the center, and garnish with chopped cilantro.
  • Heat the oil in a medium saucepan over medium-high heat. Add the onions and garlic, and cook until soft. Add the chiles and stock, and bring to a simmer for 20 to 25 minutes, or until the chiles are soft. Transfer the mixture to a food processor and process until smooth.
  • Strain the mixture into a saute pan that has been set on high heat for a few minutes, and cook the sauce until slightly thick. Remove from the heat and stir in the creme fraiche and maple syrup. Season with salt and pepper, to taste.

1/4 cup bourbon
1/4 cup water
3 dried peach halves (about 2 ounces), coarsely chopped
1/2 cup toasted pecans
2 teaspoons Cajun seasoning
1 medium log fresh goat cheese (about 11 ounces)

Steps:

  • Warm the bourbon and water in a small saucepan, add the peaches, and set aside until plump, about 15 minutes.
  • Put the toasted pecans and Cajun seasoning in a mini chopper and pulse until the nuts are finely ground but not pasty. Spread the nut mixture on a large plate. Roll the goat cheese in the mixture, pressing firmly to coat the whole log generously.
  • Slice the cheese into rounds and arrange on a platter. Top with the chopped peaches and juices.

10 baby bell peppers, halved lengthwise and seeds removed
1 tablespoon olive oil
1/2 teaspoon kosher salt
4 ounces goat cheese, at room temperature
3 tablespoons mascarpone, at room temperature
1 teaspoon orange zest (from about 1 orange)
1/2 teaspoon lemon zest (from about 1 lemon)
2 tablespoons chopped chives

Steps:

  • Position an oven rack in the top third of the oven and preheat the broiler to high.
  • On a rimmed baking sheet, toss the peppers with the olive oil and 1/4 teaspoon salt and arrange them cut-side down. Broil until beginning to brown and soften slightly, about 4 minutes. Allow to cool to room temperature.
  • In a medium bowl, combine the goat cheese, mascarpone, orange zest, lemon zest and remaining 1/4 teaspoon salt. Mix well with a rubber spatula. Place the cheese mixture in a piping bag with a decorative tip. Fill each pepper evenly with the cheese mixture, being careful not to overfill. Sprinkle with the chives. Store in the refrigerator if not serving immediately.

Steps:

  • 1. In heavy small skillet combine poppy seeds, dill seeds, cumin seeds and caraway seeds. Heat over medium heat for 1 to 3 minutes or until seeds become fragrant and begin to brown, shaking skillet frequently. Remove from heat. Stir in pepper. Cool.2. In small bowl stir together goat cheese and cream cheese. Shape into 8-inch long roll. Wrap in plastic wrap. Refrigerate for 1 hour to 2 days.3. Remove plastic wrap. Roll cheese in seed mixture. Serve with crackers.

Steps:

  • Mix goat cheese and cream cheese in small bowl until blended. Lightly coat a sheet of wax paper with nonstick spray. Spoon cheese mixture on center of sheet. Roll cheese back and forth in paper to form a log about 8-inches long and 1 1/2-inches in diameter.
  • Wrap airtight and chill for 1 hour or up to 2 days. Just before serving, roll log in pepper-seed mix. Serve log whole, on a platter, with Toasteds®. Or cut log into slices (about 1/4-inch) and place on Toasteds® to serve.
