"Hot Tomato" Jam
4 cups ripe tomatoes, peeled, cored, and roughly chopped (for best results, use a variety of tomatoes)
1/3 cup sugar
3 tablespoons finely minced fresh ginger
2 tablespoons unseasoned rice vinegar
1 teaspoon hot pepper sauce
3 tablespoons fresh basil, cut into chiffonade
Salt
Patties
1 1/3 pounds freshly ground lamb
2 tablespoons five-peppercorn blend, cracked or very coarsely ground
1 garlic clove, finely minced
2 tablespoons sesame oil
1/4 cup Merlot
Salt
Olive oil, for brushing on the grill rack
4 hamburger buns, split
4 red leaf lettuce leaves

Steps:

  • 1. Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • Taste and add the remaining pepper sauce to taste. Continue cooking until the mixture reaches a jam-like consistency, and then remove from the heat and set aside to cool. Stir the basil into the cooled mixture and season to taste with salt. Set aside.
  • 2. To make the jam, combine the tomatoes, sugar, ginger, vinegar, and 1/2 teaspoon of the pepper sauce in a flame-proof nonreactive saucepan. Place the pan on the grill rack and bring the mixture to a slow simmer. Continue simmering, stirring occasionally and moving on and off the heat as necessary, until the mixture is reduced by half, about 30 minutes.
  • Move the pan to the coolest part of the rack and continue to cook for another 15 minutes.
  • 3. To make the patties, combine the lamb, peppercorn blend, garlic, sesame oil, and Merlot in a large bowl and season with salt. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 4 equal portions and form the portions into patties to fit the buns.
  • 4. Brush the grill rack with olive oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, about 4 minutes on each side for medium-rare. During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.
  • 5. To assemble the burgers, spread the cut sides of the buns with the tomato jam. On each bun bottom, place a lettuce leaf and a patty. Add the bun tops and serve.

1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon red pepper flakes
1/4 teaspoon ground cinnamon

1 pound ground lamb
Vegetable oil, for brushing the grill grates
4 brioche buns, sliced in half through the middle
Tztaziki Spread (see recipe below)
Charred Tomatoes and Feta (see recipe below)
1 Persian cucumber
1 cup sour cream
1 tablespoon chopped fresh dill fronds
1 teaspoon fresh lemon juice
Kosher salt
1 cup cherry tomatoes
1 small red onion, cut into 1/3-inch-thick rings
1 tablespoon extra-virgin olive oil, plus more for brushing grill grates

1/2 cup crumbled feta

Steps:

  • Add the cumin, coriander, oregano, paprika, red pepper flakes, cinnamon and 1 1/2 teaspoons salt to a small bowl and stir to combine. Add the ground lamb to a large bowl and break up slightly with a fork. Add the spice mixture to the lamb and using clean hands, mix the meat so the spice mixture is evenly dispersed. Form the meat into 4 equal size patties to fit the size of the buns.
  • Brush the grates of an outdoor grill with oil and preheat to medium-high. On one side of the grill add the burgers and cook until the internal temperature is 145 degrees F, about 4 minutes per side. Remove the burgers to a plate. Once you remove the burgers, place the buns, cut side- down on the grill to lightly toast, about 2 minutes.
  • To assemble burgers: Lay buns on a clean work surface, cut side-up. Spread the Tzatziki Sauce evenly on the top and bottom halves of the buns. Place a patty on each of the bottom buns and top with Charred Tomatoes and Feta. Place the top buns on and serve.
  • Grate the cucumber on the large holes of a box grater. Using clean hands, squeeze as much liquid as possible out of the cucumber. Add it to a small bowl and stir in the sour cream, dill, lemon juice and 1/4 teaspoon salt. Refrigerate in an airtight container for up to 3 days.
  • Add the tomatoes to a large bowl and place the onions on top. Add the olive oil and 1/4 teaspoon salt and, using clean hands, rub the onions so they are coated in olive oil, but try to keep them intact in their rings. Lay the onions on a plate or rimmed baking sheet. The residual salt and oil will have dripped down to the tomatoes, so give them a slight toss to coat them. Skewer the tomatoes on a metal or wood skewer. This will help them not fall through the grates of the grill. (If using a wood skewer then be sure to soak in water for 30 minutes before using.)
  • Brush the grates of an outdoor grill with oil and preheat to medium-high. Add the onions and tomatoes and grill until the onions are charred in places and the tomatoes are slightly bursting, about 2 minutes per side. Remove the onions and tomatoes and add to a medium bowl. Using kitchen shears, roughly cut up the onions and tomatoes. Add the crumbled feta and toss to combine. Refrigerate in an airtight container for up to 3 days.

2/3 cup crumbled feta cheese
2 tablespoons finely chopped mint

fresh ground black pepper
about 1 to 2 teaspoons olive oil
2 medium tomatoes, cut into 1/2-inch pieces, seeded if desired
1 medium cucumber, peeled, seeded and cut into 1/2-inch pieces
2 tablespoons finely chopped mint
1 teaspoon red wine vinegar
2 teaspoons olive oil
salt
fresh ground black pepper

Steps:

  • To prepare burgers: In a large bowl, combine lamb, feta, mint and salt and pepper to taste. Divide evenly into four balls. Flatten each ball into a patty no more than 3/4 of an inch thick.
  • In a large nonstick skillet over medium heat, heat enough oil to just coat the bottom.
  • Place burgers in hot skillet; cook about 10 minutes, reducing the heat if the burgers seem to be browning too quickly. After 10 minutes, turn the burgers and continue to cook, adjusting the heat as needed to ensure they are cooked all the way through, about 10 more minutes.
  • To prepare salad: While burgers are cooking, combine tomatoes, cucumber, mint, vinegar, oil and salt and pepper to taste. Set aside.
  • To serve, place burgers on individual plates; spoon tomato-cucumber salad over each one.

1 tablespoon capers, chopped
6 -8 large basil leaves, julienned
1/4 teaspoon fresh ground pepper
1/2 cup cornmeal, for coating (or flour)
1 tablespoon vegetable oil, for cooking
3 tomatoes, diced
1 red onion, diced
1 teaspoon sugar
1 teaspoon balsamic vinegar
salt
pepper
1 teaspoon olive oil
4 kaiser rolls, split (or hamburger buns)
2 -3 tablespoons soft fresh goat cheese (or chevre)

Steps:

  • To make the burgers:.
  • Combine the ground lamb, shallot, capers, basil and pepper in a large bowl and mix well. Divide mixture into four burgers. Spread cornmeal(or flour) over a plate and press burgers into the mixture to coat. Preheata barbeque(or broiler) and brush with oil. Cook the burgers over a medium high heat for 6-7 minutes each side or until cooked as desired.
  • To make the relish:.
  • Place the tomatoes and onion into a preheated saute pan with the olive oil. Cook for 5 minutes. Add sugar, vinegar, salt and pepper. Remove from the heat and let cool. Grill the buns(or broil), cut side down, until lightly toasted. Spread with goat cheese and top with the burgers. Serve with the tomato relish. Enjoy!

1/2 cup dry bread crumbs
1 large egg, lightly beaten
1/4 cup crumbled feta cheese
1/4 cup chopped soft sun-dried tomatoes (not packed in oil)
2 tablespoons finely chopped onion
1 tablespoon finely chopped green pepper
1 garlic clove, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter, softened
1/4 teaspoon garlic powder
4 hamburger buns, split
Lettuce leaves, tomato slices and cucumber slices

Steps:

  • In a large bowl, combine the first 11 ingredients, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 4-5 minutes on each side. Combine butter and garlic powder; spread over cut side of buns. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds.
