PEPPERMINT NO-CHURN ICE CREAM
No ice cream maker is required for this peppermint-packed frozen treat. The refreshing mint flavor comes from two very common candies, while mini marshmallows add an extra something special.

- Put a 9-by-5-by-3-inch metal loaf pan in the freezer to chill. Put the chocolate-peppermint candies and 3/4 cup of the heavy cream in a medium saucepan over medium heat and cook, stirring frequently, until the candies are melted, about 5 minutes. Cool completely.
- Meanwhile, whip the remaining 2 cups heavy cream in a large bowl with an electric mixer on medium high until firm peaks form, about 2 minutes. Pour the condensed milk into a medium bowl and fold in 1 cup of the whipped cream with a rubber spatula until combined, then fold the lightened mixture back into the whipped cream until well blended. Gently fold in the marshmallows.
- Remove 2 tablespoons of the chocolate-peppermint candy sauce and set aside. Pour a third of the ice cream mixture into the chilled pan, then top with half of the remaining chocolate-peppermint candy sauce, add a third more of the ice cream mixture, then the remaining chocolate-peppermint candy sauce. Cover with the remaining ice cream mixture and sprinkle the crushed peppermint puffs on top. Drizzle the top with the reserved chocolate-peppermint candy sauce. Loosely cover with plastic wrap and freeze until solid and scoopable, about 3 hours and up to overnight. Serve in a cup with a candy cane if using.

- Beat cream cheese and extract until smooth. Gradually add confectioners' sugar, beating well., Shape into 1-in. balls. Place on waxed paper-lined baking sheets. Flatten into patties 1-1/2-1-3/4 in. in diameter. Cover and refrigerate until chilled, about 1 hour., In a microwave, melt chips and shortening; stir until smooth. Cool slightly. Dip patties in melted chocolate, allowing excess to drip off; place on waxed paper until set. Store in the refrigerator.

PEPPERMINT PATTIES
I have made these every year as one of many Christmas treats. My family really loves them, it wouldn't be Christmas without them! When you dip, tap the fork on the edge of the pan to shake off excess. Slide the patty onto waxed paper -- you can use the fork to make a little swirl on the top to make it pretty.

- In a large mixing bowl, combine condensed milk and peppermint extract. Beat in enough confectioners' sugar, a little at a time, to form a stiff dough that is no longer sticky. Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties. Let patties dry at room temperature two hours, turning once.
- In a medium saucepan over low heat, melt chocolate with shortening, stirring often. Remove from heat. Dip patties, one at a time, into chocolate by laying them on the tines of a fork and lowering the fork into the liquid. Let cool on waxed paper until set.

- In a large saucepan, heat half-and-half cream to 175°; stir in sugar and salt until dissolved. Whisk a small amount of the hot mixture into the eggs. Return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in cream and vanilla. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., Fill cylinder of ice cream freezer; freeze according to the manufacturer's directions. Transfer ice cream to freezer containers, allowing headspace for expansion. For each batch, stir in some of the peppermint candy. Freeze 2-4 hours or until firm.

PEPPERMINT PATTY ICE CREAM

- For the swirl: In medium saucepan, whisk together the sugar, corn syrup, water, and cocoa powder. Bring to a low boil over medium heat, whisking often. Cook 1 more minute then remove from the heat. Whisk in the peppermint extract. Let cool to room temperature then chill in the refrigerator while you make the ice cream. For the ice cream: Create an ice bath by putting ice and water into a large bowl. Set aside. In a medium saucepan, warm up 1/2 cup heavy cream. Whisk in the cocoa powder until dissolved and smooth. Bring to a boil. Remove from the heat and whisk in the chocolate. Stir until melted and smooth. Stir in the remaining 1/2 cup heavy cream. Pour the chocolate mixture into a bowl that will fit inside the ice bath. Place the bowl inside the ice bath and set aside. In the same saucepan, warm up the milk, sugar, and salt. In a small bowl, whisk up the egg yolks. Once the milk mixture is warm, slowly whisk some of the milk into the yolks then scrape the yolk mixture into the saucepan. Bring the pan to a boil, stirring often until the mixture thickens and coats the back of a spoon or spatula. Remove from the heat and the pour the mixture through a strainer into the chocolate mixture. Stir until blended. Let cool in the ice bath until room temperature then remove from the ice bath and chill in the refrigerator until cold. Assembly Freeze the ice cream according to your ice cream maker (if freezing by hand, chill in the freezer and whisk every 30-45 minutes to break up the ice crystals until the ice cream is frozen). Just a few minutes before it is completely frozen, stir in the peppermint patties. To layer in the peppermint swirl, spoon some of the sauce into the bottom of the storage container. Spoon half of the ice cream on top, then the remaining sauce, then top with the rest of the ice cream.
