Peruvian Chicken Recipe (Pollo a la Brasa) image

This Peruvian chicken recipe (pollo a la brasa) is marinated with two types of aji chili paste and spices, roasted until tender and juicy, then served with creamy aji amarillo sauce.

1 whole chicken (3-4 pounds, cut into pieces (or you can use boneless chicken))
4 cloves garlic (minced)
2 tablespoons soy sauce
1 tablespoon aji amarillo paste
1 tablespoon honey
1 teaspoon aji panca paste
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon coriander
1 teaspoon cumin
Juice from 1 small lime
Salt and pepper to taste
Olive oil for drizzling
3 tablespoons aji amarillo paste
½ cup mayonnaise
¼ cup crema or use sour cream
1 tablespoon tomato paste (ketchup is a good substitute)
1 small shallot minced
1 tablespoon lime juice
Salt and pepper to taste

Steps:

  • Pat the chicken dry with a paper towel and set it into a large bowl.
  • Whisk together the garlic, soy sauce, aji amarillo paste, honey, aji panca paste, paprika, oregano, coriander, cumin, lime juice and salt and pepper in a small bowl. Pour it over the chicken and gently rub it into the skins.
  • Cover and refrigerate. Marinate the chicken at least 1 hour, or overnight for more flavor penetration. A longer marinade is best.
  • Heat oven to 450 degrees.
  • Remove the chicken from the marinade and set into a large cast iron skillet or baking dish. Pat dry with paper towels. Drizzle with olive oil.
  • Bake the chicken for 30-40 minutes, or until the chicken is golden brown and cooked through. Chicken should measure 165 degrees F internally when measured with a meat thermometer.
  • Remove, tent with aluminum foil, and rest for 10 minutes before serving.
  • Whisk together the aji amarillo paste, mayonnaise, crema or sour cream, tomato paste, shallot, lime juice and salt and pepper. You can either mix by hand or use the processor for a thinner consistency.
  • Adjust for salt and pepper and serve with the roasted Peruvian chicken.

3 dried yellow Peruvian chili peppers, stems removed
1/4 cup water
1/4 cup canola oil
1 cup PLANTERS Dry Roasted Peanuts, finely chopped
8 cloves garlic, minced
1 tsp. ground cumin
1/2 tsp. ground cinnamon
1/4 tsp. ground black pepper
3 lb. bone-in chicken pieces, skin and excess fat removed
1 cup chicken broth
2 lb. potatoes, peeled, cooked and cut in 1/2-inch cubes
1/2 cup KRAFT Grated Parmesan Cheese

Steps:

  • Place chilies and water in small saucepan. Bring to boil on medium-high heat. Reduce heat to low; simmer 5 min. Remove from heat. Let stand 5 min. Stir until mixture forms a smooth paste; set aside.
  • Heat oil in large skillet on medium heat. Add peanuts and garlic; cook 2 min., stirring frequently. Add chili mixture, cumin, cinnamon and black pepper; mix well. Reduce heat to low; cook 3 min., stirring frequently.
  • Add chicken; cook on medium heat 20 min., turning chicken over after 10 min. Stir in chicken broth. Bring to boil; reduce heat to medium. Add potatoes; cook an additional 10 min. or until chicken is cooked through (180°F). Serve sprinkled with the Parmesan cheese.

1/4 cup soy sauce
1/4 cup white vinegar
1/4 cup water
3 tbsps fresh lime juice
2 tbsps ají amarillo paste

Steps:

  • For the Peruvian Chicken, place chicken in large resealable plastic bag or glass dish. Mix all remaining chicken ingredients in small bowl. Add marinade to chicken; turn to coat well. Refrigerate at least 3 hours or overnight for extra flavor.
  • Meanwhile, prepare the two sauces. For the Green Sauce, place all ingredients in blender container; cover. Blend on high speed until smooth. For the Rocoto Sauce, mix all ingredients in small bowl until well blended. Cover and refrigerate both sauces until ready to serve.
  • Prepare grill for indirect medium-low heat (275°F to 300°F). Preheat grill by turning all burners to medium. Turn off burner(s) on one side. Remove chicken from marinade and place on unlit side of grill. Discard any remaining marinade. Close grill.
  • Grill 40 to 45 minutes or until internal temperature of thickest part of chicken is 165°F, turning occasionally. Move chicken to lit side of grill with skin side down. Turn lit side of grill to high.
  • Grill, uncovered, 3 to 5 minutes longer or until chicken is charred. Cut chicken into serving size pieces. Serve chicken with Green Chile Sauce and Creamy Rocoto Sauce, and lime wedges, if desired.

1 (4 to 5 pound) chicken, cut into 8 pieces
2 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
1 slice whole wheat sandwich bread, crust removed, cut or torn into 1/2-inch pieces
3/4 cup half-and-half
2 tablespoons vegetable oil
1 large or 2 small shallots, sliced
2 cloves garlic, crushed
1 cup low-sodium chicken broth
2 cups (6 ounces) crumbled queso fresco or mild feta cheese
1/2 cup finely grated Parmesan
1/2 cup chopped walnuts, plus 1/3 cup toasted (see Cook's Note)
1 tablespoon Aji Amarillo paste (found in Latin markets or the Hispanic section of grocery stores)
1/2 teaspoon turmeric
4 teaspoons kosher salt
1/2 tablespoon chopped fresh cilantro or flat-leaf parsley leaves

Steps:

  • For the chicken: Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray.
  • Rub the chicken on all sides with the oil and season with salt and pepper. Arrange the chicken pieces in a single layer on the prepared baking sheet. Bake until a meat thermometer inserted into the thickest part of each piece of chicken registers 160 degrees F, 35 to 45 minutes. Let the chicken rest for 15 minutes.
  • For the sauce: Place the bread and half-and-half in the bowl of a food processor. Allow the bread to soak up the liquid, about 10 minutes.
  • In a 10-inch nonstick skillet heat the oil over medium-low heat. Add the shallots and cook, stirring occasionally, until soft, 3 to 4 minutes. Add the garlic and cook until aromatic, about 30 seconds. Cool slightly and add to the food processor with the soaked bread. Add the broth, cheeses, 1/2 cup walnuts, Aji Amarillo paste, and turmeric. Blend until smooth. Pour the sauce back into the skillet and bring to a simmer over medium heat. Simmer until slightly thickened, about 5 minutes. Season with salt.
  • Spoon some of the sauce on a platter and arrange the chicken on top. Sprinkle with the remaining toasted walnuts and cilantro (or parsley, if using) and serve.
  • Cook's Note: To toast the walnuts, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.

Burnished-skinned, deeply flavored and more than just a little spicy, it's no wonder that Peruvian chicken has become something of an obsession here in the United States. There are dozens of way to make this dish, but most recipes call for two different kinds of Peruvian chile pastes - aji amarilla and aji panca - to add the necessary complexity and heat. You can find them at South American markets and online. But in a pinch, you can substitute a red chile paste (like sriracha or sambal) for the aji amarillo, and ground pasilla chile powder for the aji panca. The flavors won't be traditional, but the chicken will still be tasty - especially when slathered with the irresistibly creamy, spicy cilantro sauce that goes alongside.

Steps:

  • For the marinade: In a large bowl, whisk together garlic, soy sauce, aji amarillo paste, lime juice, aji panca paste, mustard, cumin, pepper and salt.
  • Add chicken halves, turning to coat them all over with marinade. Cover and refrigerate at least 2 hours and up to 12 hours.
  • Heat the oven to 450 degrees. Remove chicken from marinade and pat dry with paper towels. Arrange skin-side up on a rimmed baking sheet and drizzle with oil.
  • Roast until skin is golden and chicken is cooked through, 35 to 45 minutes (if using chicken parts, remove the breasts after 25 to 35 minutes). Remove from oven and let sit, loosely covered with foil, for 10 minutes before serving.
  • While chicken is roasting, make the sauce. In a blender, blend cilantro, jalapeños, feta, garlic, lime juice, oregano, salt, mustard, aji amarillo paste, honey, and cumin until smooth. With the motor running, slowly drizzle in oil until mixture is emulsified. Taste and adjust the seasonings with salt or lime juice or both.
  • Carve the chicken and serve with the sauce and lime wedges on the side.

2 red fresno chiles, chopped

Steps:

  • Place chicken in a shallow dish and season with salt and pepper.

  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  • Add cumin seeds and swirl a few seconds to toast then add chicken pieces and lightly brown, 10 minutes.
  • Sprinkle sugar over the chicken and add stock. Partially cover and cook 10 minutes more.
  • Toss with mint and cilantro, and serve with mashed blue potatoes alongside.
